Base layer 10 dates 1 cup glutenfree oats A pinch of vanilla powder 1 tbsp coconut oil Peanut butter layer ½ cup peanutbutter ½ cup agave syrup Chocolate layer 80g vegan chocolate ½ tbsp coconutoil 1 tbsp agave syrup Steps 1. Mix the dates, oats, coconut oil och vanilla powder. Put in a small baking tray. 2. Mix together the agave syrup and peanut butter. Spread over the first layer. 3. Melt the chocolate and add the coconut oil and agave syrup. Spread over the peanut butter layer. 4. TACO PASTA 🌮 I love tacos! Really been craving all mexican food this pregnancy 🤪 So why not make a taco pasta? If you are allergic to nuts you can replace the cashews in this recipe with sunflower seeds or any cooking cream of chocie. FOR THE SAUCE (makes 4 servings) 230 g black beans 1 red bell pepper (80g) 1 small red onion (40g) 50 g corn 400 g crushed tomatoes 0.5 cup cashews 2 tbsp nutritional yeast 1 tbsp taco spice mix ½ tbsp agave syrup 1 tsp sambal olek Salt & pepper to taste 1 tbsp rapeseed oil FOR SERVING Pasta Coconut yogurt Chili flakes STEPS 1. Start with boiling the cashews for 15 minutes. 2. Add the cashews and crushed tomatoes in a blender. Blend until smooth. 3. Cut the red pepper and onion. Heat up some rapeseed oil in a frying pan and fry the pepper and onion until soft. Also add the black beans, corn, tomato sauce, spices and cook for 2 – 3 minutes on medium heat. Taste with salt and pepper. 4. Serve with pasta, some coconut yogurt and chili flakes. . . #veganfood#tacopasta#pasta#lovefood

My kind of Sunday breakfast 🥞 Chickpea flour is one of the ingredients for these tasty pancakes, find the full recipe below. The coming week I will enter week 39 being pregnant! So crazy 🥰 Hope you all had a great weekend! . Pancake batter (makes 3-4 small pancakes) Chickpea & oat flour pancakes 0.5 cup chickpea flour 0.5 cup oat flour 1 cup almond milk 1 tsp chia + flaxseeds (I use a mix but you can just use either chia or flax seeds) 1/3 tsp baking powder 0.5 tsp cinnamon 1 tbsp maple syrup For serving Coconut yogurt Blueberries Maple syrup 1. Start with combining the dry ingredients in a bowl. 2. Add the almond milk and whisk together the batter. 3. Let the batter rest for five minutes (gets thicker). 4. Fry the pancakes on medium heat for 1-2 minutes on each side. 5. Black bean burritos 🌯 Simple, quick and super delicious. Wraps are so easy to just fill with anything I think! Perfect when you have leftovers from a stew for example - just wrap it up! . Ingredients bean filling 230g black beans (already boiled) 4g garlic 20g yellow onion Salt & pepper (to taste) 1 ml cayenne pepper 1 tsp cumin 110g passed tomatoes 1 tsp coconut oil (for frying) For serving Tortilla bread Spinach Avocado Tomato Cucumber Salsa 1. Start with frying the onion and garlic in coconut oil. 2. Add the bean, passed tomato, cumin, cayenne, salt and pepper. Stir on medium heat for about 3-4 minutes. 3. 'No-meat' balls with tomato sauce 🍝 Tried to create a recipe with staple ingredients + this is a perfect recipe to make A LOT of and freeze in (the 'no-meat' balls). Hope you'll enjoy! NO 'MEAT-BALLS' (makes 8 balls) 230 g black beans (packaged ones) 60 g yellow onion 5 ml soy sauce ½ tsp paprika powder 4 tbsp oat flour Salt & pepper to taste Coconut oil (for frying) 1. Preheat the oven to 200 degrees Celsius. 2. Drain the black beans and place in a food processor/mixer. 3. Cut the yellow onion and fry in the coconut oil until soft. Add the onion to the food processor. 4. Add the spices, soy sauce and oat flour and pulse. 5. Shape balls and fry in a pan with coconut oil until golden (full heat). 6. Heat the balls in the oven for another 20 minutes. TOMATO SAUCE 500 g crushed tomatoes 60 g yellow onion 60 g coconut yogurt (or any other type of yogurt) 2 tbsp tomato paste 1 tbsp agave syrup 1 tbsp olive oil 1 garlic clove ¼ tsp sambal olek 1/3 tsp paprika powder ½ tbsp frozen parsley FOR SERVING Spaghetti Nutritional yeast 1. Start with boiling the spaghetti. 2. Cut the onion and fry in the olive oil. 3. Add the crushed tomatoes, agave syrup, garlic and spices. Let it simmer on medium heat for 5 minutes. 4.
