Matar mushroom masala! Delicious restaurant style Mushroom matar masala curry best combination with Roti, Chapati. Credits:@thatindiancurry : Recipe : 1. In a kadai add oil, ghee, cumin seeds, ginger slice, garlic clove and onion sliced and saute well. 2. Add turmeric powder, coriander powder, red chilli powder and mix well add tomato and saute well. 3. Add salt to taste and curd let it cook till the tomato becomes soft add water as required. 4. Blend the mixture and keep it aside. 5. In a mixing bowl add mushroom and peas, flour and water and rinse well. · 6. In a pan, heat oil, ghee and add bay leaf, cinnamon stick, cloves, black peppercorn, green cardamom, black cardamom and saute well. 8. Add onion and saute till translucent, add red chilli powder, mushroom and peas, salt to taste and water and saute well. 9. Add the mushroom gravy in it and cook for a minute. 10. 🌱TERIYAKI TOFU BALLS🤤 ⠀ Terrific simple vegan recipe.😍 We are waiting for your like❤ ⠀ ✅Ingredients: ▪️1 pack of 16oz firm tofu, drained well⁣⁣⁣⁣⁣⁣ ▪️1/4 cup chopped celery⁣⁣ ▪️1/4 cup chopped broccoli stem/jicama/water chestnut⁣⁣ ▪️1 small carrot, chopped⁣⁣⁣⁣⁣⁣ ▪️2.5 tablespoons starch⁣⁣ ▪️1-2 teaspoons salt (start with 1 first) ▪️a pinch of white pepper⁣⁣⁣⁣⁣⁣ ▪️oil⁣⁣ ▪️your favorite grain & blanched broccoli⁣⁣ ⠀ ✅Teriyaki sauce: ▪️1 teaspoon minced garlic⁣⁣ ▪️1 teaspoon minced ginger⁣⁣ ▪️2 tablespoons soy sauce⁣⁣ ▪️2 tablespoons mirin ▪️1.5 tablespoons organic brown sugar/maple syrup⁣⁣ ▪️1/4 cup hot water⁣⁣ ⁣⁣ 👩‍🍳How to: ▶️Mash tofu in a bowl, if it's too wet, use a paper towel to absorb moisture. Add in chopped veggies, starch, salt & white pepper to tofu & mix until well combined. Take about 1 tablespoon of the mixture & mold it into a small ball. ⁣⁣ ⁣⁣⁣⁣⁣⁣▶️In a heated non-stick pan, drizzle a thin layer of oil covering the pan & pan-fry tofu balls until golden brown. TURMERIC, ORANGE AND ALMOND CAKE by: @n.vegan.h INGREDIENTS:  Dry ingredients: * 300g self-raising flour * 120g sugar * 100g ground almonds * 30g corn starch * 2 tsp turmeric * 1 tsp baking powder Wet ingredients: * 250ml orange juice * 200ml sunflower oil * 2 tsp vanilla extract * 1 tsp almond extract Chocolate frosting: * 200g dark cooking chocolate * 1 1/2 tsp sunflower oil Other ingredients (optional): * Kumquats * Crushed pistachios METHOD: 1. Preheat your oven to 180C (360F). 2. Start with combining the dry ingredients in a large bowl first. Combine them well with a spoon. 3. Then take a separate bowl and mix together all wet ingredients. Stir. 4. Pour the wet ingredients into the bowl with the dry ingredients. Mix together well with a spoon until you get a smooth dough. 5. Line a baking tin with baking paper. Grease the sides with vegan butter. 6. Pour the cake dough into the tin and pat down with a spatula so it's all even. (*Note: size of the tin about 20 cm) 7. Bake for 40 minutes. 8. Take out and let cool down. 9. When the cake has cooled down completely melt 200g dark cooking chocolate. You can do this by either using a bain marie or melt it in the microwave. Add a 1 1 /2 tsp sunflower oil and stir well. 10. Pour the chocolate over the cake and distribute evenly. 11. Add a few sliced kumquats or orange slices. 12. Throw some pistachios in a food blender for a few seconds or crush them using a and mortar and pestel. 13. Take a sheet of paper to cover parts of the cake and drizzle the pistachios on top. Decorate the cake to your own liking. Enjoy!

Can’t beat this combo I my opinion- who else is a lemon blueberry fan? . Blueberry and lemon curd loaf: 3 cups (375g) plain flour 3 tsp baking powder 1 tsp salt 1 Tbsp lemon zest 3/4 cup thick yoghurt (I use coconut) 3/4 cup almond milk 2 tsp vanilla extract 1 cup (220g) castor sugar 1/2 cup grapeseed oil 1/4 cup lemon juice 1 cup frozen blueberries Method 1. Preheat oven to 170 degrees C, and grease and line a large tin loaf. Set aside. 2. In a medium mixing bowl, add all wet ingredients (listed from yoghurt down to lemon juice) and whisk together well. 3. In a large mixing bowl, sift in flour and baking powder. Add salt and lemon zest, and combine. Pour the wet ingredients into the bowl, and gently incorporate until just mixed together (the batter should be smooth). Add frozen blueberries, and gently fold through. Pour into prepared pan, then bake between 1 hour and 1hour 10 mins. For my oven, 1 hour and 5 minutes in perfect. 4. Allow cake to cool for 5 minutes before gently removing and cooling completely on a wire rack. At this stage, your loaf is ready to eat. I think it is perfect as is, but if you would like to add icing (like in the picture) here is how; 1/2 can coconut whipping cream OR 1/2 cup coconut yoghurt 2-4 tsp powdered, freeze dried berries 1/4 cup icing sugar. 1. Sift icing sugar into a mixing bowl, then add remaining ingredients. Mix well, then allow to set in the fridge for 1 hour (if using the coconut whipping cream; yoghurt will not need to set). Spread over the top of your loaf, and generously decorate with fresh berries. Serving; This is best served at room temperature, but will need to be stored in the fridge if you frost it. To serve, simply remove a slice 20-30 mins prior, and allow to warm sligh

If you need to feed a hungry crowd, you can’t go wrong with these BBQ Vegan sandwiches packed with homemade seitan, BBQ sauce and sautéed vegetables. . 3 tbsp vegetable oil 1 red onion, sliced 2 portobello mushrooms, sliced 1 red bell pepper, sliced 1/3 cup BBQ sauce 300 g sliced seitan 4 slices of bread BBQ sauce 2 tbsp soy sauce 3 tbsp ketchup 1 tbsp apple cider vinegar 2 tbsp molasses 1/4 tsp crushed red pepper. . Directions 1 In a saucepan over medium-high heat, sauté red onions, mushrooms and red peppers in oil until golden brown. Kunafa or Knefé or knaafeh or كنافة, however you like to call it, it is a delicious sweet dish that every arab knows and loves. Works for breakfast and dessert. Well, actually there are no rules to when you can or cannot eat Knefé! This is the Coarse Knefé or كنافة خشنة, it is not how we Lebanese usually eat it, but it is an -easier to prepare- version and yet very very delicious. My light Coarse Knefeh recipe is inspired by my Lebanese-English auntie's recipe a former head chef and a dear palestinian friend. I took the best of both worlds, added my dietitian touch to make it healthier and adaptable with diabetics and people who want to lose/maintain weight. INGREDIENTS: - KNEFE LAYER: 1 Kg knefe noodles (also called شعيرية الكنافة) 1 cup melted low fat unsalted butter 2 TBSP erythriol granulated sweetener 2 TBSP orange blossom water - CHEESE FILLING: 1/2 kg fresh mozzarella cheese 1/2 kg 0% or low fat akkawi cheese (Nabulsye cheese is the best but I did not find it in Lebanon) soaked over night to drain out salt - KETO SUGAR SYRUP: 1 cup water 1/2 cup Erythriol granulated sugar A packet of Xanthan Gum (NOTE: You can also use @equialebanon diet sugar syrup found in most supermarkets accross Lebanon as an ready, low calories & healthier alternative to regular sugar syrup) Directions: - Either shred the noodles in a food processor or keep them as is and mix them with the melted butter, 2 TBSP of erythriol, 1 TBSP orange blossom water - butter a round pan, layer the noodles. Press well to even out the level. - dry the soaked cheese very well, shred it and mix it with the shredded fresh mozarella. - spread the cheese evenly on the noodles layer Place in the oven for 15 to 20 minutes at 180-200°C, until the cheese melts and you hear a crunchy sound when inserting a knife in the crust. I'm known for not being able to follow a recipe and just cook out of my head. It works most of the time. I made this quite unusual bread a few times but for once i actually made a spreadsheet and entered all the ingredients I put in the dough. I also measured them (OMG). But first I milled my own flour from activated grain. Here it goes: Ingredients: quinoa flour, Riceberry flour, buckwheat flour, millet four, ground flax - 1 cup each. Kombucha 3 cups Flax seeds, pumpkin seeds, sunflower seeds 1/2 cup each Beetroot powder 1/4 cup. Honey 2 tbsp Mix all ingredients except seeds and ferment 2-3 days. Add all seeds, salt and spices right before baking. I used plenty of coriander and cumin seeds at the top and also in the dough. Bake for 60-80 min. Texture is great and there are visible bubbles which are challenging in such a dense bread. Taste is sour and super flavorful. Not for the people who are used to commerical white bread though 🤣

Vegan Kebab Fried Rice! 🍚🥢 - Follow @kingofveggie Follow @kingofveggie - By @thezestylime - VEGAN KEBAB FRIED RICE (serves 3-4) 🌱 2 cups cooked rice (cold, day old rice is best) 2 carrots 1 cup frozen peas 4 spring onions 3 cloves garlic 1 tbsp grated fresh ginger 3-4 tbsp dark soy sauce or tamari 3 tbsp sesame oil 1 pack @vivavivera plant kebab pieces 🌱 1. peel and chop carrots. trim the ends off the spring onions, then slice, keeping the white parts separate from the green. peel and mince garlic, and peel and grate ginger. 2. in a large non-stick pan or wok, heat 1 tbsp sesame oil and fry kebab pieces on medium until cooked and crispy, about 5 minutes. remove from pan and set aside. 3. add the remaining 2 tbsp sesame oil to the pan and sauté carrots and the white parts from the spring onion for 2-3 minutes until slightly softened. 4. add garlic and ginger and cook for another 1-2 minutes, then add in frozen peas, rice, and soy sauce, and stir fry for 5-10 minutes until the rice is cooked to your liking (for crispier rice, cook on slightly higher heat for a 10 minutes or more) 5. add the plant kebab pieces and the green parts from the spring onions (keep some aside to garnish) and stir until everything is mixed well and piping hot. 6. serve and drizzle with a little extra sesame oil, and the remaining spring onion. Summer is here ☺️ • Three Bean Salad by @dinneratthezoo. • INGREDIENTS (Servings 6): • 1 15 ounce can kidney beans drained and rinsed. • 1 15 ounce can garbanzo beans drained and rinsed. • 2 cups fresh green beans cut into 1 inch pieces. • 1/4 cup red onion very thinly sliced. • 2 tablespoons chopped parsley. • 1/3 cup apple cider vinegar. • 3 tablespoons granulated sugar. • 1/4 cup olive oil. • 1/2 teaspoon kosher salt. • 1/4 teaspoon pepper. . INSTRUCTIONS: 1. Bring a pot of salted water to a boil. Add the green beans and cook for 2 minutes or until just tender. Place the green beans in a bowl of ice water to cool, then drain and pat dry. 2. Place the kidney beans, garbanzo beans, green beans, red onion and parsley in a large bowl. 3. In a small bowl, whisk together the apple cider vinegar, sugar, olive oil, salt and pepper. 4. Pour the dressing over the beans and toss to coat. EASY VEGAN FRITTATA🌱😚 by: @n.vegan.h INGREDIENTS (3 portions): . Step 1: * 250g Silken tofu firm * 350g salad potatoes (uncooked) * 1/2 small onion * 3 tbsp olive oil * 2 tsp lemon juice * 2 tbsp nutritional yeast (recommended) * 1 tsp salt (or 1 tsp kala namak salt for and even more eggy taste) * 1 tsp turmeric * 1 tsp minced garlic * Black pepper to taste  Step 2: * 50g sifted chickpea/gram flour (or any plain flour) Step 3: * 3 medium size brown mushrooms * Handful of Black olives * Thyme METHOD: Preheat your oven to 200C (390F) . .Step 1: Then add all ingredients from this step into a blender. If you don't have a large blender you can also use a food processor. Alternatively use a smaller smoothie blender, half the amount you blend and blend in two or multiple batches. If you want it to taste even more like egg you can replace the salt with kala namak salt, which gives this dish a very real egg-like taste. If you don't have nutritional yeast at home don't worry, this recipe can also be enjoyed without it - however I would recommend it because it gives it a much fuller taste. Step 2: Pour the mixture into a large bowl and add 50g sifted chickpea flour. Mix well until there are no lumps and you get a nice smooth mixture. (chickpea flour doesn't taste nice when not cooked properly, so make sure you thoroughly combine it with all other ingredients) . .Step 3: Line a baking tin (I used a 23cm tin) with baking paper and then pour the mixture into the tin. Then add a few sliced mushrooms, some sliced black olives or kala mata olives on top and season with some thyme (you don't need to use these toppings, almost anything that you would put on a pizza can go on top). You can also baste the mushrooms with some oil so they don't dry out. Bake for 30 min until thoroughly baked. If you decided to make a bigger batch you may need to bake it for longer to make sure the chickpea flour is baked fully

😍😍How incredible does this Pasta with a creamy mushroom & zucchini tomato sauce by @beferox look?😍 Mushroom & zucchini tomato sauce🌿 Serves 4 (Enough for 500g pasta) Follow 💞 @vegansoyummy Ingredients: •Olive oil •1 red onion •4 cloves of garlic •1/2 zucchini •2 carrots, peeled •250g mushrooms •2 tomatoes •2 tbsp. vegan butter / margarine •1 tbsp. dried basil •1 tbsp. dried oregano •salt and pepper •500ml sieved tomatoes •2 tbsp. tomato paste •3/4 cup plant based milk •1/2 tbsp. flour Directions: •Add all the veggies (onion, garlic, zucchini, musshrooms, carrots and tomatoes) separately in a food processor to chop them finely •Heat olive oil in a sauce pan (enough to cover the bottom of the pan) over medium heat •Add onion and garlic cloves and cook them for about 1-2 minutes or until the onion becomes transclucent •Add zucchini and carrots and cook for 2 minutes •Then add the mushrooms and cook them for another 2 minutes before adding tomatoes, tomato paste, dried basil, dried oregano, some salt and pepper, vegan butter and sieved tomatoes •Stir well, reduce heat to low, cover sauce pan with a lid and cook for about 20 minutes •Stir sauce regularly •Whisk together plant based milk and flour and add the mixture to the sauce •cook for another minute •Add some more salt and pepper if necessary and serve with pasta • ENJOY 💛 . Soak raw cashews in hot water for 20 minutes. (Discard water and add into cheese sauce later 2.In a skillet over medium-high heat add 1 tbsp oil then saute onion for a few minutes. 3.Pour almond milk, two cups of filtered water and 1 1/2 tbsp “not chicken” bouillon. Whisk together until bouillon is dissolved. Bring to a simmer for about 5 minutes. Add potatoes and carrots cook for 10 minutes then add broccoli and celery; simmer until all the vegetables are tender, about 15 minutes. 6. Meanwhile make “cheddar sauce”. In a large pot bring 4 cups of water to a boil. Add copped potatoes and carrots to the pot and let cook for 15 minutes or until tender. 7. Once potatoes and carrots are cooked, Drain the potatoes and carrots (discard the water) and place all your cheddar sauce ingredients into a high-speed blender or food processor and blend until smooth. Wash/peel bell pepper and carrot and dice them. Cut washed broccoli into small florets and slice spring onion. If using frozen peas, corn and edamame, take them out of the freezer and set aside. Finely dice onion and garlic and sauté them with a few drops of oil or a splash of water, starting with the onion, then adding garlic once onion is starting to brown. Break up tofu into crumbles with a fork, add it to the pan together with the spices and continue cooking for a few more minutes. I like adding a splash of unsweetened plant milk if texture is too dry. Set tofu aside and sauté carrot, bell pepper, broccoli and spring onion, then add peas, corn and edamame to the mix. Next, add rice and stir until everything is well combined and heated through. Add tofu back to the pan/wok and season with coconut aminos, sauce and some chili flakes to taste. At the very end add pineapple and enjoy 😊

Follow @vegan_fullvegan 🤗 🥑🍅 Get Our New 124 recipes collection 👉 @vegan_fullvegan 🎯 Link in Bio . . 💞Follow @vega • • • • • • Maple BBQ Cauliflower Wraps 📷 by @rainbownourishments 🌿🌿 Now this is what dreams are made of! 😉 Share with a friend who would love it 😍⠀ .⠀ Recipe:⠀ Cauliflower⠀ 1 large head of cauliflower, cut into florets⠀ 2/3 cup white or brown rice flour⠀ 1/2 cup water⠀ 1 tbsp smoked paprika⠀ 1 tsp oregano⠀ 1 tsp cumin powder⠀ 1 tsp garlic powder⠀ 1/2 cup bbq sauce, of choice⠀ 2 tbsp maple syrup, to taste⠀ .⠀ Butter Bean Spread⠀ 1 1/2 cup butter beans, cooked⠀ 1 small lemon, zest and juice⠀ Handful of fresh or dried herbs of choice, such as oregano, rosemary⠀ .⠀ Wraps⠀ 5 Sweet Potato Wraps ⠀ 1 medium red capsicum, sliced thinly⠀ 1/2 cup red cabbage, sliced thinly⠀ 1 small cucumber, sliced thinly⠀ 1 cup salad leaves⠀ .⠀ 1. To make the cauliflower: Preheat the oven to 180°C (350°F). Line 1 tray with baking paper.⠀ 2. In a medium bowl, combine the flour, water and spices and mix until smooth. Dip each cauliflower floret in the batter making sure all sides are covered but shaking off the excess. Place the battered cauliflower on the baking tray. Bake for 20 minutes or until the florets are tender.⠀ 3. In another medium bowl, combine the barbeque sauce and maple syrup and mix until combined. Toss the battered cauliflower in the sauce and return them to the baking tray. Bake the cauliflower for another 10 minutes or until golden.⠀ 4. To make the butter bean spread: Add all ingredients to a food processor and process until smooth.⠀ 5. To assemble the wraps: Place a wrap on a clean surface. Spread one side of the wrap with the butter bean spread. Place the cauliflower and vegetables on the spread and collect the sides to form a wrap. Enjoy immediately.⠀ . .⠀

Recipe: Chop up cauliflower into small to medium sized pieces (bite size but not too tiny either). wash and pat dry and set aside. in a bowl put together dry spices: 1 tsp of cumin. 1 tsp of onion powder 1/2 tsp of salt 1 tsp of garlic powder. toss florets inside and toss within the bowl to coat. add 1 cup of coconut milk and set aside to set for 10 - 15 minutes. afterwards, turn your oven to bake and bake on 375 for 10 minutes and then broil for 2 minutes on low. Meanwhile dice up 1 onion and throw into a deep pan coated with olive oil or avocado oil. Cook on medium - low. let it caramelize (until the onions are a soft brown) and throw in: 1/2 tsp of cumin, 1/2 tsp of turmeric, 1 tsp of coriander paste, 1 tsp of ginger and garlic paste, juice of half a lemon, 1/2 tsp of salt. Keep cooking until fragrant. Add 1.5 cans of coconut milk (full fat) and bring pan to a boil. add 1 can of tomato paste. Keep stirring and reduce heat to medium. Keep stirring until thickened. Add more salt, pepper or lemon juice if needed. Stir in your cooked cauliflower and gently coat them with the sauce, turning your spoon in the batter to allow the florets to absorb and coated. Add some coriander leaves and chilies and naan and you've got an amazing meal! Recipe: * 3 Cups Flour * 1 Cup +2 tbsp Lukewarm Water * 2 tbsp Sugar * 2 tbsp Vegan Butter * 1 tbsp Active Dry Yeast * Jam of your Choice * 2 tbsp Baking Soda METHOD : - In a bowl, pour lukewarm water, vegan butter, sugar and active dry yeast, stir and let sit 10 min. Should have a foam. - In a large bowl, pour flour and wet ingredients. Stir with wooden spoon, then plce the dough on floured surface. Knead 5 min until soft and smooth dough. It should be a little bit sticky not too much. If too wet add more flour if too dry add more water. - Place back into the bowl, cover with plastic wrap and let sit in a warm place 1h. Dough should double. - Punch the dough. Divide it into 6 pieces. - Preheat oven at 370 F. - Fill a pot with water, add baking soda, heat on medium. - Take one piece of the dough. Roll it into a long rectangle. Spread jam, roll it into a log. Form a U shape, twist the end and fold them back on the U shape. Pour it into the water for few seconds. Remove and place on a baking tray lined with parchment paper. 😍VEGAN ‘SALMON’ & CREAM CHEESE BAGEL RECIPE by sovegan 2 tbsp lemon juice 2 tbsp olive oil 1 tbsp capers 1 tbsp brine from capers 1 tsp liquid smoke 1/2 sheet nori pieces Handful chopped dill Generous pinch of salt 4 medium carrots, finely sliced METHOD In a bowl, add lemon juice, olive oil, capers with brine, liquid smoke, nori pieces, dill, salt and pepper. Stir to combine. Finely slice the carrot and boil for 5 min until tender. Add the carrots to the dressing and leave to marinade for 1 hour. Assemble your bagel with vegan cream cheese, the carrots and rocket. Stay Healthy!🌈⁣ 🍫@eatention 🥑@healthybites.al ⁣ ⁣ - Ingredients: 1 cup flour 1/2 teaspoon of baking soda 1 teaspoon of baking powder pinch of salt 1/2 teaspoon of cinnamon 1/4 cup of maple syrup 1/2 cup of almond milk 3 tablespoons of nut butter 1 teaspoon of vanilla extract 1 medium banana, mashed 1/2 cup of non dairy chocolate chips Pre-heat oven to 350 degrees F. Grease a 6 cup muffin tin. Sift together the flour, baking soda, baking powder, salt, and cinnamon. Stir in the milk, nut butter, maple syrup, vanilla extract, and mashed banana. Stir until well combined. Gently stir in the chocolate chips. Evenly spoon the mixture into the 6 muffin cups. Top with a few more chocolate chips if desired.
