My beautiful @vegetarian niece and I tried the blackened okra with red rice recipe from @bryantterry #vegan cookbook Afro Vegan complete with the suggested soundtrack. We had just a few minor modifications based on what we had available, but it was still delicious and fun to make because Bryant Terry pairs every recipe with a particular song. So I spent half of my time dancing. ・  I was too lazy to stay up for another 15 minutes to give myself a massage so I went straight to bed. This morning I woke up with my feet sooo heavy and swollen!!!! 3 Ingredient Whole Food Peanut Bars 🥜 . I love using oats as a base for my sweet snacks, mixed with date syrup or plant milk you get this chewy consistency that I cannot get enough of 😀 And ob top of that: you'll be eating oats! Meaning you fill up on fibre and will be satiated for a long time. . For these bars I mixed three tbsp of date syrup and one tbsp of peanut butter with one cup of oats. Be careful if you buy your peanut butter, lots of brands add oil, salt and sugar which add tons of empty calories and make it a non whole food. Mix everything together until you receive a doughy consistency. . Melt the chocolate chips and add on too of the bars. Let the bars cool in the fridge until the chocolate is set. If you have trouble cutting through the chocolate, heat your knife (ex: in warm water). . I used the chocolate chips from @sevenhillswholefoods , which were the first chocolate chips I used containing only cacao paste. It is immensely bitter but on the same time very satisfying. At first I was put off but I soon came to love it 😍 My first reaction was probably because I am used eating the heavily processed chocolate products in the supermarket . It is shocking how appealing sugar and milk make chocolate and how quick it can turn addictive. I will stick to this whole foods chocolate to keep my cravings at bay and to enjoy chocolate in its more pure form💪🏻

~ SF BLISS BALLS ~ Jaffa style 😍 Managed to work out a (very loose) recipe for you guys. 500g pitted dates Rind of 2 oranges 3/4 cup water 2 cups quick oats (because I forgot to buy almond meal 🤷‍♀️) 4 heaped tbs cocoa powder 1/2 cup shredded coconut Shredded coconut or chopped almonds to roll 1. Chop dates roughly, add water and microwave covered for 3 minutes. 2. Stir in orange rind (finely grated) while dates are still hot. 3. In a mixing bowl, add oats, cocoa and coconut. Add in date mixture and mix thoroughly. 4. Roll into balls and roll through coconut or almonds. If mixture is too dry to stick to the coconut, add a little extra water. Ta da 🙌 Super forgiving recipe, just keep adding things until you love the taste. Best eaten when frozen 😍

Sometimes I even do half of each in a latte 😋 Both have their benefits and are delicious! Matcha is made from dried green tea leaves and typically comes in a powder that is mixed into milk or water. It’s also great in baked goods! It has 140 times the antioxidants of coffee and has an amino acid called L-theanine, which promotes the slow release of caffeine. This gives matcha the ability to sustain energy for up to twice as long as coffee. The energy matcha provides is also a much more calm, alert awareness, that doesn’t lend to that jittery feeling coffee can cause. Coffee is made from ground coffee beans and has up to 3 times the caffeine of matcha. A little bit also adds great flavor to chocolate baked goods and other savory recipes - see my brisket coffee rub on my blog! (in my bio) It provides a faster spike in energy, but also a faster drop, so it tends to energize for only 1-3 hours. The energy from coffee is also a bit more stimulating, which can cause that jittery feeling for some people. If you have issues with acid reflux or stomach inflammation, as well as anxiety, I would suggest trying matcha if you want caffeine! I drink both depending on what I need - If i’m really sleepy, matcha doesn’t always to the trick. I hope this was helpful! Which one do you prefer? . Thanks for all!

Hummus with warm spiced mung beans 😋😋😋 I just realized it’s the third @noorishbynoor recipe I cooked this week 💚 Here is a funny story behind these beans I have never tasted nor cooked before. I bought them a few months ago in a frenzy of stocking up my cupboards before the confinement with hopes to do something with them one day🙄 Wasn’t I excited to see Noor’s recipe popping up a few days back. The recipe is in Noor’s highlights. What a lovely meal, so delicious and nutritious. It’s hard to describe the taste of these cute little beans...it almost reminds me of lentils. Will be definitely using them as a substitute for meat while adapting the recipes to our veg diet as Noor suggests. I have made a full recipe and it can easily feed 4 people. I bet it will go so well with some plain couscous or rice if you think that a combo of chickpeas and beans can cause havoc to your digestive system 🤭 Just sayin’ 🤪 as I kept on tasting the beans while cooking ... It is so delicious, cooked with tons of red onions and sweet spices, green chilli, ginger, garlic and tomato. For hummus I go to my favorite and only recipe I use from @sami_tamimi and @ottolenghi Jerusalem. The majority of Australians and many world wide however, are happy to look away from another issue of inequality – one that causes ongoing and unnecessary suffering to thousands of living beings every minute of every day. I tend to post my more “presentable” meals here, but I’ve been eating mostly random stuff this week, so here’s one of my randomly thrown together creations: a Reuben-inspired sandwich! I’m not sure if it even vaguely resembles a Reuben, but that’s what inspired it 😆 either way, it’s delicious & I’ve made it 3 times now 😋 it’s on a baguette and features homemade spiced seitan by bae (with fun flavors like caraway seed), home pickled onions, red cabbage, avocado, tomato, and garlic cashew dressing 🥪 Do you prefer to cook by throwing random stuff together, or from recipes? 🤔 . PS I have a chronic problem of overstuffing my burgers and sandwiches with veggies, so they’re too tall to stay together on their own when stacked. Hence the lack of a normal sandwich photo 😂
