I started my day with air fried Brussels Sprouts & a JSP air fried. The other 2 air fried JSPโ€™s were shared with the grandchildren. They love them! Lunch was a chopped salad topped with mango,strawberries, wild rice, oven roasted mini sweet peppers, beets and air fried veggie balls made from veggie burger mixture rolled into balls and air fried until crispy. California Balsamic Sweet Heat vinegar for dressing. Dinner was the salad I didnโ€™t finish at lunch, corn, pineapple BBQ beans, Yukon Gold Potato and air fried asparagus. Simple, delicious health promoting food! It makes me feel good from the inside out! No guilt, no weighing, no measuring. Just making choices from whole plant foods that are low calorie density, lower fat but nutrient dense. I'm nearing week one of my $3 a day challenge, and it's gone even better than expected! We haven't been hungry at all, didn't get tired of the meals, and managed to save close to โ‚ฌ50 on groceries ๐Ÿ˜€ (Avergae cost per person, per day was โ‚ฌ2.68). The structure of the menu plan benefitted us in many ways as well, including having less waste, and spending less time cooking & cleaning up during the week. . The easiest No-Bake Granola Bars ever!!! If you've been searching high and low for an easy and filling snack to make - look no further! These took 5 minutes to prepare and they kept me full and satisfied through a long walk and a workout! Ingredients: โžก๏ธ 3/4 cup all-natural peanut butter โžก๏ธ 1/3 cup maple syrup โžก๏ธ 1/4 teaspoon cinnamon โžก๏ธ 1/4 teaspoon salt โžก๏ธ 2 cups rolled oats Directions: Microwave the peanut butter and maple syrup in a large bowl for about 20-30 sec. Remove from microwave and stir well then add rest of the ingredients and mix until fully combined. Place in pan and chill in the refrigerator for at least 1 hour. Enjoy! You only have to look at @netflix to see the latest 'documentary' on nutrition.โ โฃ โฃ In practice, vegan diets are not automatically healthier. Vegan food could consist of just dark chocolate and fizzy drinks, whereas a meat eater might eat lots of fruit and vegetables and just a small amount of meat.โ โฃ โฃ However, primarily plant-based diets, such as vegan, vegetarian, pescatarian and semi-vegetarian diets have repeatedly been shown to lower the overall risk of death by 10-20% compared with omnivores. Picked up this beautiful bok choy ๐Ÿฅฌ and devoured in with jasmine brown rice in a sweet and spicy ginger sauce. ... To make, combine 2 tbsp maple syrup, 3 tbsp tamari, 2 tsp water, 1-2 tsp red pepper flakes, 2 cloves garlic (minced), and 1 inch ginger (minced), and heat in a pan over medium heat for a few minutes. Add bok choy and cook down a few minutes. Add 2 cups rice (prepared according to package directions) and mix everything together. Top with sesame seeds and dive in!

I was quite stubborn at the time and wanted to figure out everything by myself and even though I felt helpless at times I never stopped believing. Find people that you resonate with who are living the life you want to live and ask them how they did it. Study every detail. Reach out to them. Send them questions. It is okay to ask for help. We're all humans ment to support eachother and grow together. If you desire something, go and get it. Being or becoming healthy is simple. Respect the laws of nature. Get sunshine on your skin. Fresh air into your lungs. Raw, living whole plant foods into your stomach. Structured water into your cells. Love into your heart. Be wild. Cold noodles meal on a hot day! โ˜€๏ธCold Sesame Ginger Noodles with saute'd broccoli. Recipe adapted from This Savory Vegan. Cook noodles, set aside. Mix sauce: 1/4c tamari, 1/2T siracha/hot sauce, 1/2T agave, 2 cloves garlic, 1/2t ground ginger, 2 green onions (save 1/2 for topping). 2T sesame seeds (toast if you wish, save 1/2 for topping), 1/4 t red pepper flakes, 1T rice wine vinegar. Whisk sauce, add cooled noodles. If you are concerned about protein, there is a bit of protein in broccoli but you could use chicpea or lentil pasta. Day 2 of #whatiatetoday on the #eatyourvegchallenge ! I didnโ€™t take a picture of the mango I smacked on or the Ice cream I went and got at the local ice cream shop with the family. Highlight to today though: I realized how much I love/miss bean and rice lettuce wraps and salads! ๐Ÿ–ค๐Ÿ–ค So simple and so yummy.

Day 1 of #eatyourvegchallenge completed. Onto day 2 today. I want to get back to adding more nutrients into my food. So far my favorite thing about this challenge is having a little more freedom of food choices (still mindfully) but ensuring half my plate is veggies! Itโ€™s seriously so easy. After not eating as many veggies I lost the taste for them but Iโ€™m definitely getting passed that and am starting to enjoy them again. ๐Ÿ–ค๐Ÿ–ค
