Avocado bread buns! .⠀⁠⠀ 📷 by @anettvelsberg .⠀⁠⠀ Recipe: .⠀⁠⠀ 3/4 cup (175 ml) lukewarm unsweetened plant milk⠀⁠⠀ 2 1/4 tsp (1 standard packet, 7 grams) active dried yeast⠀⁠⠀ 1/2 cup neutral cooking oil, such as canola⠀⁠⠀ 1/2 tsp sea salt ⠀⁠⠀ 1/2 cup (100 grams) organic cane sugar⠀⁠⠀ 2 3/4 - 3 cups (400-450 gr) all purpose flour, as needed ⠀⁠⠀ Edible black paint, to decorate⠀⁠⠀ ⠀⁠⠀ For the matcha dough:⠀⁠⠀ 1 tbsp matcha + 1-1/2 tbsp plant milk⠀⁠⠀ ⠀⁠⠀ For the chocolate dough:⠀⁠⠀ 1 tsp cocoa powder + 1 tbsp plant milk⠀⁠⠀ ⠀⁠⠀ Method⠀⁠⠀ Add the lukewarm plant milk, yeast, oil, salt and sugar in a mixing bowl. Whisk until well mixed.⠀⁠⠀ Slowly add in flour until a dough forms. Once the dough has come together, use the dough hook to knead the dough with a stand mixed for 5-6 minutes or knead by hand on a well-floured surface for 8-10 minutes, until uniform and elastic. ⠀⁠⠀ Remove a quarter of the dough and set aside. The large piece will be your matcha dough. Flatten the dough piece slightly and add the matcha and milk mixture. Knead until uniform, adding more flour as needed. Lightly spray a large bowl with oil, form the dough into a ball, and add to the bowl. Cover plastic wrap or a clean dish towel and let rise in a warm place for 1,5-2 hours, until the dough has doubled in size. Vegan Green Goddess Pizza 🍕 - Follow @eatrightfoodideas - Ingredients Cashew Cheese 1/2 Cup Raw Cashews soaked overnight 1/4 Cup Extra Virgin Olive Oil 1/4 Cup Unsweetened Almond Milk 1/2 Tsp Celery Salt 2 Cloves Garlic 1 Tbs Nutritional Yeast 2 Tsp Tamari or Soy Sauce Water if needed, to thin - Pesto 1 Small Shallot chopped 2 Cloves Garlic minced 3 Cups Mesclun Greens 1/4 Cup Extra Virgin Olive Oil 1/4 Tsp Salt 1/4 Tsp Pepper 1/4 Tsp Red Pepper Flakes - The Pizza 1 Package Whole Wheat Pizza Dough Greens and Sprouts for topping Hemp Seeds for topping - Instructions Preheat oven to 425 degrees F. In a blender, combine the cashew cheese ingredients (making sure to use soaked cashews). Blend on high until a smooth, creamy sauce is formed, using water to thin if necessary. Set aside. In a food processor, combine all pesto ingredients and process until a slightly chunky pesto is formed. Set aside. On a pizza tray, roll out your pizza until it's between 1/4 - 1/2 inch thick. Shape the crust so that it's a little thicker than the rest of the pizza. Take about 1 tablespoon of olive oil and spread it on the pizza as a base. Then, add a layer of the cashew cheese, and then a layer of the pesto. Bake pizza in the oven for 20-25 minutes, until the crust is golden brown. Remove from oven, and let cool for a few minutes. Then, top the pizza with more greens, sprouts, and hemp seeds (if desired). Cut into slices and enjoy!

Easy falafel and tahini sauce recipes by @sovegan. Recipe makes 20 falafels: For the falafel: 2 x 400g tinned chickpeas 1 cup coriander leaves 1 cup parsley leaves 1/2 tsp each of salt, pepper and paprika 2 cloves garlic 1 small onion 1/4 cup breadcrumbs 8 sun-dried tomatoes 1/2 cup olive oil for frying 1. Prepare ingredients by draining the chickpeas and sun-dried tomatoes, then roughly chopping the onion and garlic. It’s important you remove as much excess water from the chickpeas as possible. 2. Place all the falafel ingredients into a food processor and process until everything is roughly combined and easy to handle. Make sure you don’t process the mixture for too long, otherwise the falafel will fall apart when it’s frying. 3. Remove roughly a tablespoon of the mix and roll into a ball shape. Repeat until all the mix is used up. 4. Heat oil to a high temperature in a frying pan, then add all the balls and fry for 3 minutes on each side or until evenly golden brown. Creamy vegan lemon garlic pasta by @feelgoodfoodie🍝 🍋🍃 Ingredients: 2 tablespoons olive oil 1 medium onion, sliced 2 garlic cloves, sliced 1 cup spinach 1 cup plain hummus 1 pound spaghetti pasta Juice of 1 lemon + zest ¼ cup chopped fresh basil, plus more for serving Pinch of crushed red pepper Steps: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente according to package directions. Reserve 1 cup of pasta cooking water, then drain the pasta and return to the pot to stay warm. In a large skillet, heat the olive oil over medium heat. Add the onions and cook for 5-7 minutes or until fragrant and they soften. Add the garlic, and cook for 30 seconds, or until fragrant. Add the spinach and cook for 1 minute, or until is slightly wilts. Add the hummus, about ½ cup of the pasta cooking water, the lemon juice and lemon zest, and stir until a creamy sauce forms. Add more pasta water to thin the sauce a little at time, as desired. Transfer the cooked pasta to the skillet, add the basil and crushed red pepper. Serve immediately basil, if desired.

Join "28 Day Vegan Challenge ". ➡️ 𝗟𝗜𝗡𝗞 𝗜𝗡 OUR 𝗕𝗜𝗢 @veganmealdiets . 1/2 yellow onion 4 cloves garlic 1 1/2 tsp cumin, ground 1 tsp turmeric, ground 1 tsp cinnamon, ground 1 tsp paprika powder 500g crushed tomatoes 1 1/2 cup coconut milk (full fat, canned) 1 cup water 1 tbsp peanut butter 300g sweet potato, cubed 230g canned lentils (pre cooked) 1 red bell pepper 2 tbsp lime juice 2 tbsp soy sauce Serve with rice HOW 1. In a deeper pan, sauté the onion and garlic until translucent 2. Then add all of the spices, coconut milk, water, peanut butter and crushed tomatoes. Bring to a simmer and then add the chopped sweet potato. Let simmer for about 10 minutes or until the sweet potato is almost done 3. Now add the canned lentils, bell pepper, soy sauce and lime juice. Let it simmer for another 3 minutes 4. Serve together with rice and coriander on top! . By @fivesechealth . TURMERIC, ORANGE AND ALMOND CAKE by: @n.vegan.h INGREDIENTS:  Dry ingredients: * 300g self-raising flour * 120g sugar * 100g ground almonds * 30g corn starch * 2 tsp turmeric * 1 tsp baking powder Wet ingredients: * 250ml orange juice * 200ml sunflower oil * 2 tsp vanilla extract * 1 tsp almond extract Chocolate frosting: * 200g dark cooking chocolate * 1 1/2 tsp sunflower oil Other ingredients (optional): * Kumquats * Crushed pistachios METHOD: 1. Preheat your oven to 180C (360F). 2. Start with combining the dry ingredients in a large bowl first. Combine them well with a spoon. 3. Then take a separate bowl and mix together all wet ingredients. Stir. 4. Pour the wet ingredients into the bowl with the dry ingredients. Mix together well with a spoon until you get a smooth dough. 5. Line a baking tin with baking paper. Grease the sides with vegan butter. 6. Pour the cake dough into the tin and pat down with a spatula so it's all even. (*Note: size of the tin about 20 cm) 7. Bake for 40 minutes. 8. Take out and let cool down. 9. When the cake has cooled down completely melt 200g dark cooking chocolate. You can do this by either using a bain marie or melt it in the microwave. Add a 1 1 /2 tsp sunflower oil and stir well. 10. Pour the chocolate over the cake and distribute evenly. 11. Add a few sliced kumquats or orange slices. 12. Throw some pistachios in a food blender for a few seconds or crush them using a and mortar and pestel. 13. Take a sheet of paper to cover parts of the cake and drizzle the pistachios on top. Decorate the cake to your own liking. Enjoy!

Simple 4 ingredients, no sugar, no flour, so if you’re currently on some sort of extreme “clean eating” stint (no judgment, I’m team “do what makes you happy”!) these are the treat for YOU. Pro-tip: let them soften 1-2 min before biting in, because not everyone’s teeth can handle those frozen naners! . . - 1 ripe large banana (about 120 g) - 1 tbsp your fave nut/seed butter (16 g) - 1/4 cup chopped chocolate (60 g) - 1 tsp coconut oil (5 g) . . . Weekend mornings are for pancakes! Vegan pancakes by @fivesechealth 🥞 Recipe for 1-2 people: 1 cup oat flour 1 cup plant-based milk 1/4 cup applesauce, unsweetened 1 scoop @vivolife protein powder (I’m using Banana Cinnamon flavor) 1 tbsp lemon juice 1/2 tsp baking powder Top with blueberries, maple syrup and plant-based yogurt 1. Add all batter ingredients to a blender and blend until smooth 2. Heat a non-stick (important) pan to medium heat, then add about 1/4 cup batter for each pancake to the pan (you may need to make the pancake wider with the help of a spoon) 3. Cook the pancake for about 2-3 minutes or until you see that the surface begins to dry, then flip and cook for another 2 minutes 4. Serve your pancakes with optional toppings and enjoy! Vegan & Paleo Superfood Ice Cream Bars by @feastingonfruit. Recipe in the video and here: Crust 1 cup (~180g) pitted medjool dates 2/3 cup water 1/2 cup (60g) coconut flour 1/4 cup (20g) cacao powder 1/2 tsp salt Ice Cream 2 cups (240g) raw cashews 1 cup (240g) coconut milk* 1/4 cup (80g) maple syrup 1/2-1 tsp spirulina 1/2-1 tsp turmeric 1/2 cup blueberries, pureed Cover the cashews with warm water and soak for at least 30 minutes (if you don’t have a high speed blender, you will need to soak them for at least a few hours). Blend the dates and water. In a bowl, combine the coconut flour, cacao powder, and salt. Stir. Add the date paste and mix to form a sticky dough. If it’s too dry/crumbly add a few tablespoons of water. Press into the bottom of a pan/dish lined with parchment paper or plastic wrap (I used a 9×6″ tupperware). Set aside. Blend the (soaked and drained) cashews, milk, and maple syrup until very smooth and creamy. Divide into 3 bowls. Mix the spirulina into one, turmeric into another, and blueberry puree into the last. Add more/less to reach desired color. Spoon/dollop the colors on top of the crust and swirl with the back of a spoon or a straw. Freeze overnight. Once frozen, cut into bars and top with melted chocolate if desired. Enjoy! This #vegan White Chocolate Babka is a unique twist on the classic! 🍞 It’s so incredibly fluffy and moist that you won’t be able to stop after just one slice! 😍 Full recipe on my blog (link in bio @thetastyk ) ⇣ —•—Ingredients—•— Dough: 1 Tbsp (11g) instant yeast 1/4 cup (55g) vegan butter, melted 1 cup (250ml) soy milk 3 1/4 cups (420g) all-purpose flour 1/4 cup (52g) sugar, divided 1 Tbsp (11g) baking powder Filling: 120g @ichoc_vegan_chocolate white vanilla chocolate 2 Tbsp slivered almonds Extra: Soy milk (for brushing) —•—Method—•— 1. Heat the soy milk until warm to the touch and pour into a bowl. Add 1 Tbsp out of the 1/4 cup sugar, as well as the instant yeast and gently stir until combined. Set aside for 5 minutes until foamy. 2. Combine the vegan butter and the baking powder and let rest for 3 minutes until foamy. 3. Place 3 cups of the flour and remaining sugar in a large bowl and whisk together. Add in the yeast and the butter mixture and combine with a wooden spoon, then use your hands to knead for 5-8 minutes. You want the dough to be moist but not too sticky. Add in the remaining 1/4 cup flour as needed. 4. Grease a clean bowl with oil and place the dough ball inside. Cover with a towel and let rest in a warm place for 1 hour. 5. In the meantime melt the chocolate until smooth. 6. Once the dough has doubled in size, place it on a floured surface and roll it out to a 12-x16-inch (30x40cm) rectangle. Spread out the chocolate on top leaving a 0.8 inch (2cm) border around all sides and sprinkle the almonds on it. 7. Starting from one side, roll up the dough tightly until you have a long log. Use a sharp knife to cut it lengthways, then lift one half over the other and repeat this step until it has formed a twist. Gently lift into a loaf tin covered with parchment paper and let rest for another 45 minutes. 8. Preheat the oven to 350°F (175°C). Brush the babka with soy milk and bake in the oven for 30-35 minutes. Remove from the oven and let cool down for 15 minutes before slicing. If you need to feed a hungry crowd, you can’t go wrong with these BBQ Vegan sandwiches packed with homemade seitan, BBQ sauce and sautéed vegetables. . 3 tbsp vegetable oil 1 red onion, sliced 2 portobello mushrooms, sliced 1 red bell pepper, sliced 1/3 cup BBQ sauce 300 g sliced seitan 4 slices of bread BBQ sauce 2 tbsp soy sauce 3 tbsp ketchup 1 tbsp apple cider vinegar 2 tbsp molasses 1/4 tsp crushed red pepper. . Directions 1 In a saucepan over medium-high heat, sauté red onions, mushrooms and red peppers in oil until golden brown. Ingredients Vanilla ice cream: ½ cup cashews (soaked overnight) ½ cup coconut cream 1 tsp vanilla extract/powder ⅛ cup maple syrup Blueberry chia jam: ½ cup frozen blueberries 1 tsp maple syrup 1 Tbsp chia seeds Date peanut caramel: 5 Medjool dates, pitted 1 tsp peanut butter ⅓ cup plant milk ¼ tsp vanilla extract/powder dash of sea salt Vegan Nutella: ½ cup roasted hazelnuts 1 Tbsp cacao powder ⅛ cup maple/date syrup ¼ cup coconut cream dash of sea salt Passion fruit: 2 passion fruits 1 tsp maple syrup (optional) . Method 1.Prepare the fillings first. For the nutella/date caramel simply place all ingredients into a high-speed blender and blend until smooth. Set in the fridge to chill. For the jam, heat up the frozen berries in a sauce pan. Once unfrozen, take them off the heat, place them in a blender and blitz for a few seconds before pouring back into the sauce pan. Add in the maple syrup and chia seeds and combine well. Set aside to let the chia seeds soak. 2.For the ice cream, simply place all ingredients into a high-speed blender and blend until you have a creamy smooth mixture. 3.Fill your molds with the mixture up until ½-3/4 (depending on how much filling you want), add the wooden stick and place into the freezer for 1 hour (make sure that the wooden stick is covered in ice cream for easier removal). 4.Once firm, a a layer of each filling on top and place back into the freezer until completely firm. 5.Melt you chocolates and cover each magnum with the respective chocolate flavor. Super tasty Sweet and Sour Lotus Root 🌱Have you ever tried lotus roots? 😍  Follow @veggie_flavour Follow @veggie_flavour By @littlericenoodle . Ingredients 💫 Lotus Root 400g 💫 Garlic 3 Cloves 💫 Rice Vinegar/Chinese Dark Vinegar 3 Tbsp 💫 Sugar 3 Tbsp 💫 Soy Sauce 2 Tbsp 💫 Cooking Wine 1 Tbsp 💫 Corn/Potato Starch 1 Tsp 💫 Spring Onion 1 Stalk  🌈Recipe ✔️ Cut the lotus root into small cubes(each side about 2cm long), cut the garlic and spring onion into pieces.  Get a bowl, add 3 tbsp vinegar, 3 tbsp sugar, 2 tbsp soy sauce, 1 tbsp cooking wine, 1 tsp of corn/potato starch and mix everything well ✔️ Add oil in the pan(medium heat), add lotus and slowly stir-fry for about 3 minutes, then add garlic and sauté for another minute ✔️ Add the bowl of sauce, let the lotus cooked in the sauce for about 5 minutes until most of the sauce is gone, stir occasionally in between. Add spring onion when it's done.  Cooking time: 20 mins👩‍🍳

EASY VEGAN FRITTATA🌱😚 by: @n.vegan.h INGREDIENTS (3 portions): . Step 1: * 250g Silken tofu firm * 350g salad potatoes (uncooked) * 1/2 small onion * 3 tbsp olive oil * 2 tsp lemon juice * 2 tbsp nutritional yeast (recommended) * 1 tsp salt (or 1 tsp kala namak salt for and even more eggy taste) * 1 tsp turmeric * 1 tsp minced garlic * Black pepper to taste  Step 2: * 50g sifted chickpea/gram flour (or any plain flour) Step 3: * 3 medium size brown mushrooms * Handful of Black olives * Thyme METHOD: Preheat your oven to 200C (390F) . .Step 1: Then add all ingredients from this step into a blender. If you don't have a large blender you can also use a food processor. Alternatively use a smaller smoothie blender, half the amount you blend and blend in two or multiple batches. If you want it to taste even more like egg you can replace the salt with kala namak salt, which gives this dish a very real egg-like taste. If you don't have nutritional yeast at home don't worry, this recipe can also be enjoyed without it - however I would recommend it because it gives it a much fuller taste. Step 2: Pour the mixture into a large bowl and add 50g sifted chickpea flour. Mix well until there are no lumps and you get a nice smooth mixture. (chickpea flour doesn't taste nice when not cooked properly, so make sure you thoroughly combine it with all other ingredients) . .Step 3: Line a baking tin (I used a 23cm tin) with baking paper and then pour the mixture into the tin. Then add a few sliced mushrooms, some sliced black olives or kala mata olives on top and season with some thyme (you don't need to use these toppings, almost anything that you would put on a pizza can go on top). You can also baste the mushrooms with some oil so they don't dry out. Bake for 30 min until thoroughly baked. If you decided to make a bigger batch you may need to bake it for longer to make sure the chickpea flour is baked fully

Sweet potato brownies by @bosh.tv. Recipe: Brownies 4 medium sized sweet potatoes (cubed & roasted for 35 mins) 1.5 cups oats 10 medjool dates (pitted & chopped) 1.5 cups ground almonds 1 cup cocoa (or cacao) powder 1/2 cup maple syrup 5 tbsp coconut oil (melted) Icing 5 tbsp coconut oil 1/3 cup maple syrup 1/3 cup nut butter 1/2 cup cocoa powder 2 large squares dark chocolate . How To Make: Put all the brownie ingredients in a food processor & whizz them up into a thick paste (you may want to add the ingredients in 3 or 4 stages so they blend more easily) 2. If your mixture seems too thick, add 1/3 cup of water & whizz everything together for a couple of minutes - this will loosen it up. 3. Pour the mixture into a lined baking tray & pop it in the oven at 180℃ (352℉) for 45 minutes. 4. Take the Brownies out of the oven, let them cool to room temperature. 5. Put all the icing ingredients in a pan over a low heat & melt them all together until you have a smooth paste. 6. Pour the icing on top of the brownie, smooth it out & then pop the whole thing in the refrigerator. 7. Join "28 Day Vegan Challenge ". ➡️ 𝗟𝗜𝗡𝗞 𝗜𝗡 OUR 𝗕𝗜𝗢 @veganmealdiets . . . 🍣 Recipe: 200g sushi rice 350ml water 4 Tbsp rice vinegar 3/4 tsp salt 1 tsp maple syrup Miso-Eggplant: 1 long eggplant, sliced into strips 1 Tbsp maple syrup 1 Tbsp miso paste 1 Tbsp sesame oil 2-3 Tbsp warm water Filling: 1 small cucumber, julienned 1 small carrot, julienned 1/2 avocado, sliced Cajun cream cheese: 1/4 cup tofu cream cheese 1/2 tsp cajun spice Method 1.Cook your sushi rice according to instructions on the package and let cool down. 2.Slice the eggplant into thin strips. Preheat your oven to 175° (350°F) and line a baking sheet with parchment paper. In a small bowl, combine sesame oil, miso, maple syrup and warm water and mix until dissolved. Place the eggplant sliced on the baking sheet and brush both sides with the marinade. Place in the oven bake at 175° (350°F) for 10–12 minutes on each side (be careful not to burn). 3.Prepare the veggies for the filling. Slice the avocado thinly and cut the carrot and cucumber in slices. 4.Take half a nori sheet and place it on a bamboo mat. Place 1/2 cup of the sushi rice on top and gently press down (wet your hands for easier handling). Carefully turn the nori sheet around so the empty side looks up. Add the filling ingredients (carrot, cucumber, avocado, cajun cream cheese) and use the bamboo mat to roll up the sushi roll. 5.Take the baked eggplant slices and spread it on top of the sushi roll. Use a piece of plastic film to cover the roll. Use the bamboo mat to gently press the eggplant in shape, then remove plastic foil and cut into slices. . Las lentejas son una de las legumbres más nutritivas que existen. ¡Su contenido de proteína es de 18 gramos por taza! Contienen hierro, manganeso, potasio, zinc, fósforo selenio y calcio. Aportan acido fólico (alrededor del 90% del valor diario recomendado). También esta maravillosa legumbre contiene fibra por lo cual nos ayuda a prevenir el estreñimiento y a promover la regularidad de nuestro sistema digestivo. Al germinar los granos y legumbres, aumentamos considerablemente su valor nutricional y nos deshacemos de los anti nutrientes que protegen la semilla y la guardan para cuando sea su momento de brotar. El proceso de germinación también aumenta las enzimas que nos ayudan a digerir mucho mejor. INGREDIENTES: 4 tazas de lentejas germinadas 6 tazas de agua ½ taza de calabaza ½ taza de batata o camote 2 hojas de laurel 1 cucharadita de sofrito 1 cucharadita de cúrcuma 1 cucharadita de paprika ahumada ½ taza de salsa de tomate ¼ taza de aceite de oliva extra virgen Sal a gusto . PROCEDIMIENTO: Coloca todos los ingredientes, con excepción del aceite de oliva, en una olla con tapa. Cocina a fuego medio bajo por 20 minutos. Una vez cocido, apaga el fuego y deja reposar por 15 minutos para que no esté tan caliente y la puedas manejar mejor. Coloca el contenido de la olla en una licuadora de alta potencia. Retira las hojas de laurel. Añade el aceite de oliva y un poco de agua sólo si hace falta. Muele hasta que quede cremoso.
