Quinoa Stuffed Peppers (3 servings) Ingredients • 2 large bell peppers • 4 tablespoons olive oil • Salt & Pepper to taste • 1 tbsp Thyme • 60 g Quinoa • 1 Onion cubed • 1 clove of Garlic minced • 1 stalk of Celery • 1 teaspoon of Sweet Papprika • 1 tbsp of fresh Oregano • 300 g of canned Tomatoes • 50 g cherry Tomatoes • 1 tablespoon mint, finely chopped Method • Preheat an oven for 400F, cut the Peppers in 2 lengthwise and remove the seeds • Add 2 tablespoons of Olive oil, Salt, Pepper, Thyme and smear them with your hands to cover the surface of the peppers • Place the peppers in a baking pan lined with parchment paper and bake for 20-30 minutes until semi-soft • Rinse and then Boil the quinoa until all the water evaporates and the Quinoa softens, then set aside • Pour the rest of the Olive oil into a pan and sauté the Onion and Garlic for 1-2 minutes until they golden • Cut the Celery stalk into cubes, add to the pan and sauté for 1 minute • Add the Paprika, fresh oregano, can of chopped Tomatoes, Salt and Pepper • Mix until the juices of the Tomato are reduced and the vegetables are soft • Add the Quinoa, Cherry Tomatoes (cut in cubes) and mix • Turn off the heat and stuff the Bell Peppers with the mixture • Garnish with Mint and Oregano just before serving Bon appétit! Today has been nothing short of phenomenal! It’s a super easy recipe... enjoy!⁠ ⁠ Ingredients:⁠ - 1 tube of refrigerated vegan biscuits (16oz) (Savoury scone in UK/AU)⁠ - 1/3 cup firmly packed dark brown sugar⁠ - 1 tbl cinnamon powder⁠ - 1/4 cup melted vegan butter⁠ ⁠ For The Glaze:⁠ - 1 cup organic powdered sugar⁠ - 2 tbl nondairy milk⁠ - 1 tsp nondairy butter⁠ - 1/2 tsp vanilla extract⁠ ⁠ Method:⁠ 1. Separate biscuits, then half each biscuit, through their depth, leaving you with 16 circles. Roll each out as thin as you can to make an oval shape.⁠ ⁠ 2. Brush with melted butter, sprinkle with cinnamon & sugar.⁠ ⁠ 3. Roll up ovals starting at the bottom to form a small log, cut the log with a sharp knife into individual 1/2 in cinnamon rolls.⁠ ⁠ 4. Place mini rolls onto parchment paper, bake at 350 till golden, about 8-12 min. Or bake on parchment lined air-fryer at 320 F for 5-7 min - flipping half way through. Mee Siam or stir-fried vermicelli⠀ .⠀ by @woon.heng ​.⠀ Recipe (yields 4-5 servings)⁣⠀ 🌱Ingredients:⁣⠀ - 250g dried vermicelli/rice stick (or dried noodles)⁣⠀ - 2-3 cups [250g] chopped cabbage⁣⠀ - 1 medium carrot, sliced⁣⠀ - 4oz firm tofu (optional) - pressed, pan-fried & seasoned with salt ⁣⠀ - 2 cloves garlic, minced⁣⠀ - 1 small shallot, sliced⁣⠀ - a handful of chopped green onions⠀ - fried shallots for toppings⁣⠀ - oil for cooking⁣⠀ 🌱Sauce:⁣⠀ - 2 cups [472g] veggie broth⁣ (adjust for other noodles)⠀ - 1 tablespoon ketchup for a hint of red⁣⠀ - 1/2 tablespoon sugar (omit if your ketchup is sweet)⁣⠀ - 3 teaspoons tamarind juice or 1 teaspoon lime juice⁣⠀ - 3 teaspoons sambal or red chili paste⁣⠀ - 1 1/2 teaspoons hot bean paste (or sub with Doenjang or Miso)⁣⠀ - 1/2 teaspoon salt (adjust to taste)⁣⠀ ⁣⠀ ✅To prepare the vermicelli, soak them in cold water until soft to handle (used WaiWai brand), then drain until ready to use. Please prepare according to the package's instructions if other noodles are used.⁣⠀ ✅Mix the sauce ingredients in a bowl until well combined & set aside.⁣⠀ ✅In a heated non-stick pan with 1 tablespoon oil, sauté shallots until aromatic, then add carrot & continue to cook for 45 secs. Panqueques de chocolate✨🥞🍫(swipe👉🏽para ver la mieeeeel🍯) 1 taza de leche vegetal 1 taza de avena en hojuelas 1/2 taza de agua 4 cucharadas de cacao 4 cucharadas de azúcar 1 cdta de café instantáneo 1 cdta de vainilla 1/2 cdta de canela 1/2 cdta de polvo de hornear ⠀ Licuar y dejar reposar la mezcla 30 minutos. ⠀ Luego los freímos, yo usé 1/4 de taza de mezcla por cada uno y engrasé la sartén con un pincel y aceite vegetal entre panqueque y panqueque. Los freí como 3 a 4 minutos por lado a fuego medio, quedan un poco crocantes por afuera pero suaves por adentro💛✨Los serví con arándanos, fresas y frambuesas congeladas🍓y miel de palma

🍫❤️EASY & DELICIOUS VEGAN CHOCOLATE CAKE❤️🍫 Super delicious gluten-free vegan chocolate cake with peanut butter! Served with a simple frosting, this dessert is very chocolatey, fluffy and moist, as well as oil-free. Perfect with a cup of tea or for special occasions.🥰☕️ Ingredients: 🌱For the cake: 1/2 cup coconut sugar + 2 tbsp 2/3 cup rice flour 1/2 cup cacao powder 1/2 cup buckwheat flour 1 tsp baking powder 1/2 tsp baking soda 1/2 cup peanut butter 1 cup plant based milk 1 tbsp apple cider vinegar 2 tbsp ground flaxseeds soaked in 1/4 cup water for 5 minutes 🌱For the frosting: 1 cup coconut cream (canned, refrigerated for 24 hours) 140 g vegan chocolate of choice (melted) Method: 1. Firstly, preheat the oven to 180 degrees. Whisk together the coconut sugar, rice flour, cacao powder, buckwheat flour, baking powder and baking soda. 2. In a separate mixing bowl, whisk together the wet ingredients. Start with the peanut butter, then gradually add the plant based milk, using a handheld whisk to break apart any clumps. Then, add the apple cider vinegar and flax eggs. 3. Add the wet ingredients to the dry and mix them together really well, before transferring to two round cake tins. Bake in the preheated oven for around 20-25 minutes. 4. Meanwhile, prepare the frosting (not forgetting to leave the coconut cream in the fridge for 24 hours beforehand). Drain away the liquid from the coconut cream, then whisk using a handheld electric whisk while pouring in melted vegan chocolate. 5. We used a mixture of sweet dairy-free chocolate and dark chocolate to achieve a good balance of flavour, but you can adjust this depending on your preference (e.g., using no dark chocolate will result in a very sweet frosting). If the frosting looks too liquidy at the end, leave it in the fridge for around 10 minutes. 6. Once the cake is ready, allow it to cool for at least 15 minutes before arranging. To arrange, spread a thick layer of the frosting on one of the sponges. Place the other sponge on top followed by another layer of frosting. 🌿🌶TOFU BALLS WITH SWEET & SPICY SAUCE🌶🌿 Ingredients: 🌿Tofu balls: 3 blocks (around 600g) of white firm tofu 1/2 onion 2 cloves of garlic 1 dry wood ear mushroom (soaked for at least 1 hour) 1 tbsp maple syrup 1 tbsp soy sauce 1 and 1/4 tsp ground black pepper 3/4 tsp salt 1/2 tsp saté (optional) 🌿Sweet & spicy sauce: 1 tbsp oil 2 small chili, finely chopped 2 ripe tomatoes 2 tbsp soy sauce 2 tbsp maple syrup 1/2 tsp five-spice powder 1/2 tsp cornstarch diluted in 3 tbsp water 3 tbsp chopped green onions Method: 1. Preheat oven to 180 degrees and line a baking sheet with parchment paper. Place the firm tofu in a nut milk bag and press it to drain excess water, depending on the tofu you should remove 1/4 cup to 1/3 cup of water. This step is essential, otherwise the balls won’t hold together if the tofu is too moist. Transfer the drained tofu to a mixing bowl and set aside. 2. Very finely mince the onion, garlic, and dried mushroom. If you have a food processor, pulse a few times to get a fine mixture. Make sure the onion and mushrooms are finely minced otherwise the balls won’t hold together well. Add the minced onion, garlic, and mushroom to the bowl. 3. Next, add the seasonnings: maple syrup, soy sauce, ground black pepper, salt, and saté if using. Mix well. 4. Form 2 and 1/2 tbsp balls and roll gently between your hands. Place the tofu balls on the prepared baking sheet. Bake for about 20 minutes, flipping halfway through baking. Remove from the oven and set aside while you prepare the sauce. Cut off the core of the tomatoes and place them in a blender with 1 tbsp of water. Blend until smooth. 5. Heat the tablespoon of oil in a large skillet over medium heat. Once hot, fry the chili for about 2 minutes. Reduce the heat to low and add the tomato purée. Bring back the heat to medium and cook for about 5 minutes, or until the tomato purée has turned into a deep red color. 6. Pour in the soy sauce, maple syrup, and five-spice, and cook for 2 more minutes. Add the diluted cornstarch and mix to combine. Add the tofu balls, and cook for another 5 minutes, stirring regularly. 7. Top with chopped green onions, and serve on top of rice, noodles or greens! ENJOY!

🥬🍜VEGAN KIMCHI NOODLE SOUP🍜🥬 A rich and flavorful noodle soup flavored with kimchi, ginger, and garlic. Served with mushrooms, tofu, pak choy, and finished with cilantro and green onions!🧑🏼‍🍳🌱 Ingredients: 1 tbsp oil 1/2 onion, finely diced 2 cloves of garlic, minced 1-inch ginger, grated 1/2 cup kimchi, roughly chopped 3 cups of water 2 tbsp soy sauce 3 tbsp coconut sugar 1 tsp Korean chili flakes 3/4 tsp salt 1 cup mixed mushrooms, diced 1 bok choy, cut in half (or your favorite greens) 1 block (250g) tofu, diced 100g dry noodles (can use gluten-free noodles) 1/4 cup cilantro, green onions for topping Method: 1. Heat the oil in a medium saucepan over medium heat. Once hot, add the onions, garlic, and ginger, and sautée for about 5 minutes. 2. Next, add the kimchi, water, soy sauce, coconut sugar, chili flakes, salt, diced mushrooms, bok choy (or other greens), and tofu. Bring to a boil and lower to a simmer. Simmer covered for about 40 minutes. 3. Remove from heat and set aside. Cook the noodles according to the package instructions. Drain and divide the noodles into two bowls. Pour in the kimchi soup with some tofu, mushrooms, and kimchi. Garnish with chopped cilantro and green onions, and serve hot! For extra flavor, feel free to add a squeeze of lime! 4. This soup will keep for up to 3 days in the refrigerator. Serve with fresh fruit and/or berries of your choice for added perfection! ❤️😍 Ingredients: 3/4 cup gluten-free oat flour 1 tsp baking powder 1/2 tsp cinnamon 1/4 cup soy or coconut yogurt 1/4 cup apple sauce 2 tbsp agave nectar 1 tsp apple cider vinegar 1/2 tsp vanilla extract For the sauce: 1 tbsp cashew butter 1 tbsp cashew milk 1 tbsp agave nectar 1/2 tsp cacao powder Method: 1. In a mixing bowl, whisk together the wet and dry pancake ingredients and set aside for around five minutes. Meanwhile, heat a non-stick frying pan on a medium-high heat – make sure it's thoroughly heated before you start making the pancakes. 2. Spoon the batter into pancakes shapes, making sure they are not too thin. I find that slightly under 1/4 cup of the pancake mix per pancake works best. Carefully flip when bubbles start to form on the surface and the edges are looking crispy, around 3 minutes. Cook for around a minute more.  3. To make the sauce, simply whisk together the cashew butter, cashew milk, agave nectar and cacao powder in a small bowl. 4. You’ll love it! 😊 Ingredients: Wholewheat bread Avocado Fresh coriander Sesame seeds Lime juice to taste Ingredients for haricot bean spread: 1 clove garlic, minced 1/4 yellow bell pepper 1/4 small red onion 1/3 cup cooked haricot beans (or any bean variety of your choice) 1 tbsp balsamic vinegar 1 tbsp tomato purée Method: 1. STIR FRY TIME! ✨ celery zucchini mushroom bell pepper carrots cauliflower kale spinach chop veggies and then sauté them in olive oil (or coconut oil) until the kale and spinach are wilted and the other veggies are slightly browned. it’ll take a bit of time. ⚡️grab your vermicelli (rice noodles) and follow cooking instructions for them - they only took a couple minutes! ⚡️ make your sauce by mixing together soy sauce, a little maple syrup, ginger (I used ginger powder), garlic paste, and apple cider vinegar. ⚡️ add the sauce to your veggies and cook for a bit. add some chopped cashews too! ⚡️ plate your noodles and top with your veggies! it’s so yummy and really tastes amazing, my mum even loved it too!
