Vegan Sweet Potato Quesadillas by @biancazapatka 🤤 (makes 4 servings) Ingredients For the Filling: 1-2 tbsp olive oil 1 sweet potato (about 9 oz), grated 1 tsp smoked paprika ½ tsp chili (optional) ½ tsp cumin (optional) 1 handful of baby spinach 1 cup black beans cooked or canned ½ cup corn cooked or canned 2-3 tbsp fresh parsley chopped salt, pepper (to taste) For the Quesadillas: 6 (gluten-free) tortillas* (about 7.5 inches) 1 cup vegan cheese, grated 3 tsp oil Anleitungen Sweet Potato Filling: Heat the oil in large skillet over medium heat. Add the grated sweet potato and roast for 30 seconds. Then add the spices and stir to combine. Once the pan is sizzling, add a little bit of water, then cover the pan and reduce heat to low to avoid burning the contents. Cook for about 6 minutes, stirring occasionally. Add baby spinach, stir to combine and cook for about further 2 minutes, until the sweet potato is tender and cooked through. Stir in beans, corn, and parsley and cook for 1 minute longer, or until heated through. Season with salt and pepper to taste. Quesadillas (see video in the text above): Heat a non-stick pan over medium heat and brush with a little bit of oil. Spread about 3 tbsp of the filling evenly over half of 1 tortilla, leaving a 1/2-inch border. Cover filling with grated cheese and fold over the empty side of the tortilla, pressing down carefully by using a spatula, so that it sticks a little. (You can place 2 folded tortillas at a time in the pan). Cook for about 2-3 minutes, flip and cook from the other side until golden and crispy. Repeat with remaining filling and as many tortillas as needed (about 4-6, depending on the exact size). Transfer quesadillas to a cutting board. Slice each quesadilla into three even wedges using a sharp knife or pizza cutter. Serve immediately, with guacamole or other dips of choice. Enjoy!

I have taken upon myself to make healthy salads. This one’s a favorite of late and super easy to make: #kalesalad #raginirecommends . . . Recipe: Take a bunch of kale and wash it with tap water: Chop the kale and add 2 tbsp olive oil + 1 whole lemon + honey + rock salt + pepper (soak the kale in this till it changes color) 2. Cut kacchi kairi (raw mango) + spring onions + cherry tomatoes and mix it in the salad 3. Add mangoes. As the last step, add 1 teaspoon honey, I use the @consciousfoodindia honey as it doesn’t contain added sugar. Mix everything and add more salt+pepper if required. Nicicând nu e salata tabouleh mai bună ca în perioada aceasta când pătrunjelul e abia răsărit prin grădini, proaspăt și fraged. La fel e și menta, fără de care eu una nu pot concepe un tabouleh cinstit. Și tot acum începem să mai găsim și roșii dulci, cu gustul care trebuie. ------ Cât despre bulgur, eu îl ador și nu îmi lipsește din casă. Dar dacă se întâmplă să nu îl aveți la îndemână, îl puteți înlocui în salata asta cu quinoa sau un cuscus mai mare. ------ Puneți sare, suc de lămâie și ulei de măsline după gust și bucurați-vă de cea mai bună salată de vară! Poftă bună! 🍅🌿 ------ PS: musai-musai să o lăsați măcar 15 minute la frigider înainte de servire! Se împrientenesc aromele, se netezesc asperitățile. Get it below: Ingredients Gnocchi 1 head cauliflower, washed and chopped 1 large russet potato, peeled and chopped 1 tablespoon minced garlic 1/3 cup vegan parmesan cheese (recipe below) 2 cups cassava flour salt & pepper, to taste olive oil (for roasting the potato and cauliflower) 1-2 tablespoons coconut oil (for crisping the gnocchi) Parmesan Pea Purée 2 cups frozen peas 1/4 cup vegan parmesan cheese 1 teaspoon minced garlic 1/4 teaspoon salt 1 tablespoon vegan/plant butter 1 tablespoon non-dairy yogurt (or you can use plant milk) 1 tablespoon diced mint leaves ​ Garnishes toasted pine nuts mint leaves parmesan cheese ​ Vegan Parmesan Cheese 1 cup raw pumpkin seeds 1/4 cup hemp seeds 1/4 cup nutritional yeast 1/2 teaspoon garlic powder 1 teaspoon salt Instructions Heat oven to 425° F. Add the chopped cauliflower and potato to a baking sheet and drizzle with olive oil and sprinkle with salt and black pepper. Sprinkle on the minced garlic. Place in oven and roast until vegetables are pierced easily with a fork, about 20 minutes. Remove from oven and let cool. ​ **NOTE: alternatively to save a little time, you can use frozen cauliflower, but I do recommend fresh. ​ While those are roasting, make your vegan parmesan cheese by blending all ingredients together until you achieve a fine texture. Alternatively, you can use store-bought, but I did use my own parmesan cheese in this recipe. In your food processor/blender, blend all ingredients until you have a fine, Parmesan Cheese-like texture. Store in an airtight container in the fridge. ​ Now make your parmesan pea puree. Pour 2 cups of peas into a glass measuring cup/glass bowl and cover the peas with water. Whether you want to be an ultra endurance athlete like Rich Roll, be one of the strongest humans on earth like Patrik Baboumian, or be a physical specimen like Nimai Delgado, you have plenty of role models to look to. These are all guys who have leveraged their vegan diet and are at, or near the top, of their respective athletic professions. ... However, do you sometimes wonder how the average Joe's get their body into ideal levels of physique when having to work a 9-5, raise a couple kids and have seemingly no time to dedicate to work on getting vegan lean? You're not alone. For me, it took dusting off my old college chemistry books, getting NASM certified, hiring a physique bodybuilding coach, and wasting a bunch of time with trial & error (emphasis on the error!) to help me go from a skinny-fat 205lb vegan down to a lean 175lb vegan athlete. After all of that, the transformation focuses around 3 simple pillars⬇️ ... 1. Nutrition - It is important to get your body to an ideal level of leanness through calorie deficit. Once you hit your ideal level of leanness, you can then start building calories back into your diet🥗 ... 2. Training - focus on weight training over cardio (especially when your time is valuable). Training with weights allows you to build lean muscle while burning fat and calories💪 ... 3. Accountability - getting lean on a calorie deficit is simple in theory, but can be tough in practice. It can be even tougher when you don't have a support group that is, or has, gone through the exact struggles you are going through ... Do you want to get lean enough to see visible abs? In a small mixing bowl, whisk the flour, salt, baking soda, and cornstarch.⠀ In a larger mixing bowl, add the margarine, milk, sugars, and vanilla. Beat with an electric mixer. I bought some sumac for the first time ever yesterday so I decided to try it today. I sprinkled quite a bit of it on chickpeas along with a little salt and garlic powder then air fried them til crispy. . . . I added the chickpeas into a bowl with romaine lettuce, spiralized cucumber and carrot, tomato wedges, raw red onion, raw red cabbage, nutritional yeast, grated Violife cheese and a little Plant Chef beetroot dressing. . . . I made loads of the salad and had half of it with my beloved Sriracha and a side of brown seeded toast topped with Flora light, nutritional yeast and onion powder. Although it's not particularly sunny today, I still fancied a sunshiney salad. I've also been craving pearl barley since I got pregnant, but nowhere had it during lockdown! I finally managed to get hold of a bag and put it straight to use. This salad contains pearl barley, ripe vine tomatoes, spring onion, cucumber and sweetcorn. I made a dressing with extra virgin olive oil, freshly squeezed lemon juice, mint, parsley, crushed garlic and freshly cracked black pepper. As well as hitting the spot for my cravings, this was also chocka block full of great nutrition. Cheesy Pumpkin Pasta by @happyskinkitchen Follow us @deliciousveganrecipes for daily vegan recipes Ingredients: About 1/2 butternut squash/pumpkin – about 300gr 1/4 cup of cashews – soaked in some boiling water for 30 minutes 1 white onion – peeled and finely chopped 2 garlic cloves – crushed 1 tbsp of lemon juice 3 tbsp of nutritional yeast Few sprigs of fresh thyme 1/2 tsp of smoked paprika 1/2 cup or more of plant milk – soy or oat are great Plenty of salt and pepper to taste 1 tbsp of olive oil for frying For the miso mushrooms: About 250gr of chestnut mushrooms – sliced 1 tbsp of olive oil for cooking 1 tsp of brown rice miso paste mixed with 2 tsp of boiling water Pasta of your choice to serve Peel and chopped the butternut squash into bite size pieces. Steam the butternut squash pieces for 20-15 minutes until soft. Drain them and leave them aside.While the butternut squash is cooking peel and finely chopped the onion and add it a small frying pan with a touch of oil. Fry the onion on a low to medium heat for 5 minutes until it starts to caramelised. Add in the crushed garlic cloves and thyme leaves and cook for another minute. Add the cooked butternut squash to a blender together with the onion and garlic, soaked cashews, lemon juice, nutritional yeast, smoked paprika, plant milk salt & pepper. Blend until completely smooth and silky. Add more plant milk if needed. Cook the pasta according to the packet instructions. While the pasta cooks add the sliced mushrooms to pan with the oil. Pour over the miso paste mixed with water and cook the mushrooms on a fairly high heat for 10 minutes until all the liquid has evaporated. Drain the pasta and put it back in the pan and pour in the butternut squash sauce. Made a lovely & fresh yummy mixed bean salad to have with loads of stuff over the next 2-3 days! It’s got 1 can of @aldiuk mixed beans and the vinaigrette was made with a bit of extra virgin olive oil, white wine vinegar, a pinch of sugar, a splash of lemon juice, a pinch of cayenne pepper, parsley, thyme, a little bit of whole grain mustard, a raw minced garlic clove, a chopped spring onion, sea salt & black pepper 🤤 so versatile and quick and healthy! I do love a quinoa salad 💜 I’m always surprised when I hear people say that they never know what to do with quinoa... I use it in veggie burgers, salads, ‘meatless balls’, porridge, granola, bread and often just in place of rice 👍 it’s packed with nutrients and high in protein and it won’t spike your blood sugar as pasta or couscous would ✅ it’s now widely available (99p at @lidlgb) give it a go, cook using the same method you use for rice 👍 #quinoa

Since setting up this account it’s made me realise I eat a lot of Vegan Faux meats which is okay to a certain degree however eating meat every day is not good for you so for my lunch yesterday I made up a lovely salad then fried some chickpeas in a little olive oil, garlic purée and light Soya sauce until they started to become nice and brown I then dressed with Plant Chef Cesar salad dressing which is amazing btw! I have also started doing the insanity workout so I really need to start feeding my body the right nutrients!
