FIESTA RICE SALAD 🥗🍚 smokey + spicy roasted corn, seasoned chickpeas, tomatoes, cilantro, peppers & lemony goodness served over pillowy rice of your choice! meal . Ingredients⠀ 3-4 tablespoons extra virgin olive oil⠀ 2 cups of any rice of your choice⠀ 4 cups of water or bone broth (any broth makes it more flavorful! 💯)⠀ 1 small onion, finely chopped⠀ 2 shallots, finely chopped⠀ 4 cloves of garlic, finely minced⠀ sea salt to taste🧂⠀ 2 cups of halved cherry tomatoes⠀ one can of small organic chickpeas OR black beans⠀ a handful of chopped organic cilantro⠀ 1 cup of finely chopped red or green bell peppers⠀ 2 cups of roasted corn (or organic corn) I season mine with paprika, chili powder, cumin, a pinch of Tabasco and garlic powder. About 1/4 tsp each! In a large saucepan with a lid, heat the extra virgin olive oil & add the shallots and onions. Stir until softened/translucent then add the garlic. Finally, stir in the rice until well coated/ mixed with the oil and onions. Add the broth and stir, once it boils reduce heat to a simmer and cover the saucepan with a lid. Simmer for ~ 20 mins. Turn off the heat and leave covered for at least another 10 mins so it can fluff up. In a separate bowl mix in all the vegetables. Before serving, top over the rice and mix in. Avocado bread buns! .⠀⁠⠀ 📷 by @anettvelsberg .⠀⁠⠀ Recipe: .⠀⁠⠀ 3/4 cup (175 ml) lukewarm unsweetened plant milk⠀⁠⠀ 2 1/4 tsp (1 standard packet, 7 grams) active dried yeast⠀⁠⠀ 1/2 cup neutral cooking oil, such as canola⠀⁠⠀ 1/2 tsp sea salt ⠀⁠⠀ 1/2 cup (100 grams) organic cane sugar⠀⁠⠀ 2 3/4 - 3 cups (400-450 gr) all purpose flour, as needed ⠀⁠⠀ Edible black paint, to decorate⠀⁠⠀ ⠀⁠⠀ For the matcha dough:⠀⁠⠀ 1 tbsp matcha + 1-1/2 tbsp plant milk⠀⁠⠀ ⠀⁠⠀ For the chocolate dough:⠀⁠⠀ 1 tsp cocoa powder + 1 tbsp plant milk⠀⁠⠀ ⠀⁠⠀ Method⠀⁠⠀ Add the lukewarm plant milk, yeast, oil, salt and sugar in a mixing bowl. Whisk until well mixed.⠀⁠⠀ Slowly add in flour until a dough forms. Once the dough has come together, use the dough hook to knead the dough with a stand mixed for 5-6 minutes or knead by hand on a well-floured surface for 8-10 minutes, until uniform and elastic. ⠀⁠⠀ Remove a quarter of the dough and set aside. The large piece will be your matcha dough. Flatten the dough piece slightly and add the matcha and milk mixture. Knead until uniform, adding more flour as needed. Vegan Green Goddess Pizza 🍕 - Follow @eatrightfoodideas - Ingredients Cashew Cheese 1/2 Cup Raw Cashews soaked overnight 1/4 Cup Extra Virgin Olive Oil 1/4 Cup Unsweetened Almond Milk 1/2 Tsp Celery Salt 2 Cloves Garlic 1 Tbs Nutritional Yeast 2 Tsp Tamari or Soy Sauce Water if needed, to thin - Pesto 1 Small Shallot chopped 2 Cloves Garlic minced 3 Cups Mesclun Greens 1/4 Cup Extra Virgin Olive Oil 1/4 Tsp Salt 1/4 Tsp Pepper 1/4 Tsp Red Pepper Flakes - The Pizza 1 Package Whole Wheat Pizza Dough Greens and Sprouts for topping Hemp Seeds for topping - Instructions Preheat oven to 425 degrees F. In a blender, combine the cashew cheese ingredients (making sure to use soaked cashews). Blend on high until a smooth, creamy sauce is formed, using water to thin if necessary. Set aside. In a food processor, combine all pesto ingredients and process until a slightly chunky pesto is formed. Set aside. On a pizza tray, roll out your pizza until it's between 1/4 - 1/2 inch thick. Shape the crust so that it's a little thicker than the rest of the pizza. Take about 1 tablespoon of olive oil and spread it on the pizza as a base. Then, add a layer of the cashew cheese, and then a layer of the pesto. Bake pizza in the oven for 20-25 minutes, until the crust is golden brown. Remove from oven, and let cool for a few minutes. Then, top the pizza with more greens, sprouts, and hemp seeds (if desired). Cut into slices and enjoy!

Creamy Filling 2 cups raw cashews 1 1/2 cups frozen or fresh mango chunks, (approx 1 1/2 medium-size mangoes) 3/4 cup plant-based yoghurt, such as coconut, soy or almond 1/3 cup melted cacao butter 1/4 cup maple syrup, to taste 1/4 cup passionfruit pulp . Fruity Topping 2 cups frozen or fresh mango chunks, (approx 2 mangoes) 1 1/2 tbsp corn flour or corn starch 1/4 cup passionfruit pulp To make the base: Add the hazelnuts to a food processor and process until it forms coarse crumbs. Drain the dates. Add the dates and almond butter to the food processor and process until everything is combined. The mixture should stick together when it is pinched between two fingers. To make the filling: Add all ingredients to a blender and blend until combined. Pour the filling on top of the base and set it aside in the fridge to set for at least 6 hours. To make the fruity topping: Add the mango and cornstarch to a small saucepan. Use a stick blender to puree the mango. Bring the mixture to medium-high heat and quickly whisk until thickened. Remove from the heat and add the passionfruit pulp. When the bars have set, spread the topping on the creamy layer. General Tso’s Tofu by @the_buddhist_chef. Ingredients: 1 block (450 g) firm tofu, diced 1/4 cup (35 g) cornstarch 3 tablespoons (45 ml) vegetable oil 2 cloves garlic, minced 1 tablespoon (15 ml) minced fresh ginger 3/4 cup (180 ml) vegetable broth 3 green onions, minced 2 tablespoons (30 ml) maple syrup 2 tablespoons (30 ml) soy sauce 2 tablespoons (30 ml) ketchup 1 teaspoon (5 ml) sriracha sauce, or chili paste Sliced green onion, to garnish Sesame seeds, to garnish Method 1. In a bowl, combine the tofu with the cornstarch and shake to coat. 2. In a large skillet, heat the vegetable oil over medium-high heat. Add half of the tofu cubes and fry, turning from time to time, until they’re golden brown and crisp. Transfer the tofu cubes to a plate lined with paper towels to drain excess oil. Repeat the steps to fry the remaining tofu cubes, adding more oil as needed. 3. In the same skillet, cook the garlic and ginger together for 1 minute. Add more oil, if needed. 4. Add the vegetable broth, green onions, maple syrup, soy sauce, ketchup, and sriracha sauce, and stir to combine. Double Chocolate and raspberry ice cream sandwiches 😍😋👌 Follow us 👉 @veganshiftology Credit @rainbownourishments Cookie Dry Ingredients 2 cups blanched almond meal 1 cup coconut sugar 3/4 cup white rice flour, or plain flour 3/4 cup roughly chopped chocolate 1/4 cup cocoa or raw cacao powder 1/2 tsp baking soda 1 tbsp (12g) chia or flax seeds, finely ground Pinch of any good-quality salt . Cookie Wet Ingredients 1/3 cup light-tasting vegetable oil 1/4 cup plant-based milk (as needed) 3/4 cup frozen raspberries Filling 1/2 cup raspberries 2 tbsp chia seeds 7 scoops vegan ice cream Preheat the oven to 180°C. To make the cookies: In a large-size bowl, add all the dry ingredients and mix. Add all the wet ingredients except the raspberries and mix until the mixture forms a soft dough and can be pinched between two fingers and stays together. Add more milk if necessary. Gently fold the frozen raspberries into the cookie dough. Line a baking tray. Roll the cookie dough into balls and flatten on the baking tray. Bake the cookies for 12-18 minutes or until the edges are crisp. Allow the cookies to cool at room temperature. To make the raspberry chia jam: Add the raspberries and chia seeds to a small bowl. Mash with a fork until combined. Set aside to thicken. Spread the raspberry chia jam on the flat side of half the cookies. Scoop the ice cream on those cookies. Use the remaining half of cookies to sandwich the ice cream. Follow @VeganRecipeTube Quinoa black bean burgers by @feelgoodfoodie (and that’s vegan mayo & mustard, not an egg 😋) 🍔 Ingredients: 1/4 cup uncooked quinoa 2/3 cup water 1 15 oz can black beans rinsed and drained 3 oz tomato paste 1 teaspoon paprika 1 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon oregano 1/2 teaspoon salt 1/2 teaspoon pepper 1/3 cup breadcrumbs 1 tablespoon olive oil Burger buns and toppings of choice Steps: In a small pot, cook the quinoa with water and add salt to taste. Bring a boil, cover and simmer for 14 minutes. Uncover and fluff with a fork. In a large bowl, add the rinsed black beans and mash the bean fully with a fork or potato masher. Add the cooked quinoa to the black beans, then add the tomato paste, all the seasoning and the breadcrumbs. Form four patties. Heat olive oil in a grill pan, place the quinoa burgers in the pan and fry over medium heat for about 4 minutes per side. Vegan & Paleo Superfood Ice Cream Bars by @feastingonfruit. Recipe in the video and here: Crust 1 cup (~180g) pitted medjool dates 2/3 cup water 1/2 cup (60g) coconut flour 1/4 cup (20g) cacao powder 1/2 tsp salt Ice Cream 2 cups (240g) raw cashews 1 cup (240g) coconut milk* 1/4 cup (80g) maple syrup 1/2-1 tsp spirulina 1/2-1 tsp turmeric 1/2 cup blueberries, pureed Cover the cashews with warm water and soak for at least 30 minutes (if you don’t have a high speed blender, you will need to soak them for at least a few hours). Blend the dates and water. In a bowl, combine the coconut flour, cacao powder, and salt. Stir. Add the date paste and mix to form a sticky dough. If it’s too dry/crumbly add a few tablespoons of water. Press into the bottom of a pan/dish lined with parchment paper or plastic wrap (I used a 9×6″ tupperware). Set aside. Blend the (soaked and drained) cashews, milk, and maple syrup until very smooth and creamy. Divide into 3 bowls. Mix the spirulina into one, turmeric into another, and blueberry puree into the last. Add more/less to reach desired color. Spoon/dollop the colors on top of the crust and swirl with the back of a spoon or a straw. Freeze overnight. Once frozen, cut into bars and top with melted chocolate if desired. Enjoy! Scallion Oil Noodles 🥢👌😋 Follow us 👉@veganshiftology Credit @thefoodietakesflight ♥️ Scallion Oil Noodles Good for 2 servings 2 bundles (65g each) dry wheat noodles or other noodles of choice More chopped scallions, for topping Veggies and mushrooms of choice, optional Salt, to taste Scallion Oil 1/4 cup olive oil, you can also use other oil like rice bran, canola, sesame 3/4 cup chopped scallions (around 5 stalks) - 1/4 cup of the white part + 1/2 cup of the green part 2-3 tsp soy sauce* 2 tsp sugar 1 tsp mushroom/dark soy sauce for colour (optional but highly recommended!) 1/2 tsp sesame seeds For the veggies and mushrooms (if using), sauté them in a pan with some oil until cooked. Season with some salt, to taste. Set aside or mix with the the noodles later on. Heat a pot of water. Once it boils, add in the noodles. Cook until chewy and then drain the water. While the noodles are cooking, heat a pan. Add 1/4 cup oil. Leave to heat on medium low heat. Add in the white chopped scallions first. Leave to cook over low heat for 3-4 minutes or until lightly brown, so as not to burn them. Add in the green part of the scallions. Mix well and then cook for another 3-4 minutes until lightly brown. Add in the sesame seeds and then mix. Add the cooked noodles into the scallion oil. In a small bowl, mix soy sauce and sugar until sugar is diluted. Add soy sauce mix into the noodles. Feel free to add more soy sauce to taste. Add in the dark soy sauce (if using) for colour. Keto Tips! ❤️❤️❤️ CHICKPEA VEGAN MEATLOAF 🚨🚨Recipe: 2-14 oz. cans or 3 1/3 cups cooked chickpeas, drained and rinsed 1 onion, diced 2 celery stalks, chopped 2 carrots, diced 2 garlic cloves, minced 2 cups panko breadcrumbs 1/2 cup unflavored soy or almond milk 3 tbsp. vegan Worcestershire sauce (Wizard or Annies or Portland brands) 2 tbsp. soy sauce or tamari 2 tbsp. olive oil 2 tbsp. ground flax seeds 2 tbsp. tomato paste 1 tsp. liquid smoke 1/4 tsp. black pepper For the Maple Glaze 1/4 cup tomato paste 2 tbsp. maple syrup 2 tbsp. apple cider vinegar 1 tbsp. soy sauce or tamari 1 tsp. paprika Instructions Preheat oven to 375°. Lightly oil a 9 inch loaf pan. Working in batches if needed, place all meatloaf ingredients into food processor bowl and pulse until chickpeas are broken up and ingredients are well mixed, stopping to scrape down sides of bowl as needed. Do not overblend. If working in batches, transfer each batch to a large mixing bowl when complete and then mix by hand. Press mixture into prepared loaf pan and bake 30 minutes. While meatloaf bakes, stir glaze ingredients together in a small bowl. Remove loaf from oven after 30 minutes and spoon glaze overtop of loaf. Bake another 20-25 minutes. Stir-fried eggplant and tofu in homemade teriyaki sauce 👌😍🥢 Follow us 👉 @veganshiftology Credit @thefoodietakesflight Good for 2-3 servings 3 large long eggplants (400g total), I used chinese eggplants 2 blocks extra firm tofu (200 g each) 3 tbsp sesame oil or other oil 2 cloves garlic, minced 1/2 red bell pepper, sliced 5-6 tbsp teriyaki sauce, adjust according to desired taste (easy homemade recipe in blog) Salt and pepper, to taste Sesame seeds and chopped spring onion, for topping Steps Slice eggplant into strips or your choice of shape. To blanch eggplant, boil a pot with water. Once the water boils, add in the eggplant and leave to cook for 3-4 minutes until half-cooked. Then set aside.* (see notes) Drain excess liquid from the tofu. I like to do this by wrapping the tofu in a towel and pressing down with a heavy surface. Slice tofu into strips or shape of your choice. Heat a non-stick pan. Add in 2 tbsp oil. Once hot, add in the tofu. Pan-fry until golden brown and crisp on each side. You may need to do this in batches depending on the size of your pan. Set tofu aside. In the same pan, add 1 tbsp sesame oil. Sauté the garlic until aromatic then add in the bell peppers. Once the bell peppers are cooked, add in the tofu and eggplant. Pour in the teriyaki sauce. Leave to cook for a few minutes until the tofu and eggplant have absorbed the sauce. Feel free to add more teriyaki sauce. Season with some salt and pepper, to taste. Drizzle more sesame oil, if desired. Sweet potato brownies by @bosh.tv. Recipe: Brownies 4 medium sized sweet potatoes (cubed & roasted for 35 mins) 1.5 cups oats 10 medjool dates (pitted & chopped) 1.5 cups ground almonds 1 cup cocoa (or cacao) powder 1/2 cup maple syrup 5 tbsp coconut oil (melted) Icing 5 tbsp coconut oil 1/3 cup maple syrup 1/3 cup nut butter 1/2 cup cocoa powder 2 large squares dark chocolate . How To Make: Put all the brownie ingredients in a food processor & whizz them up into a thick paste (you may want to add the ingredients in 3 or 4 stages so they blend more easily) 2. If your mixture seems too thick, add 1/3 cup of water & whizz everything together for a couple of minutes - this will loosen it up. 3. Pour the mixture into a lined baking tray & pop it in the oven at 180℃ (352℉) for 45 minutes. 4. Take the Brownies out of the oven, let them cool to room temperature. 5. Put all the icing ingredients in a pan over a low heat & melt them all together until you have a smooth paste. 6. Pour the icing on top of the brownie, smooth it out & then pop the whole thing in the refrigerator. 7. PAD-THAI 😋👌 Follow us 👉 @veganshiftology Credit @woon.heng Recipe ⁣ 🌱Ingredients:⁣ - 4 servings Pad Thai rice stick (used around 250g [8oz] and size 'L')⁣ - 7oz [200g] firm tofu, pressed, cut into cubes & pan-fried⁣ - 8 oz [236g] mung bean sprouts (save some for side)⁣ - 3 shallots & 3 cloves garlic - finely chopped⁣ - 2 tablespoons preserved dried radish (optional)⁣ - a pinch of chili flakes (optional)⁣ - a handful of green onions/scallions - cut into 3" length⁣ - a handful of crushed roasted peanuts⁣ - oil for cooking⁣ 🌱*Pad Thai Sauce (adjust for lesser servings): 3 tablespoons tamarind juice (from 1 ping pong ball size tamarind pulp + 1/4 cup [60g] water), 3 tablespoons vegan 'fish' sauce (nước mắm chat - recipe in highlights), 1 - 2 tablespoons coconut/palm sugar, 1 tablespoon tamari/soy sauce (omit if using store-bought vegan fish sauce), 1 teaspoon lime juice, 1 teaspoon rice vinegar & 1/4 cup [60g] vegetable broth⁣ ⁣ 1. Soak rice stick in room temperature water until soft. Drain & set aside until ready to use.⁣ 2. Mix Pad Thai sauce ingredients until well combined and store in a jar until ready to use. Vegan sushi burger by @peta 💚 Full Recipe 1 cup sushi rice, cooked 1/4 cup rice vinegar 1 Tbsp. sugar 1 tsp. salt 1 Tbsp. coconut oil 1 clove garlic, crushed 1/3 cup tamari or soy sauce 1 Tbsp. mirin 1 Tbsp. brown sugar 1 cup shiitake mushrooms, sliced 1/2 avocado 1 tsp. wasabi or wasabi powder 1 tsp. vegan mayonnaise 1 tsp. Sriracha Pickled ginger, to taste Shredded red cabbage, to taste Black sesame seeds, for garnish In a bowl, mix together the rice, vinegar, sugar, and salt, then refrigerate. Combine the coconut oil, garlic, tamari, mirin, and brown sugar in a small pot or skillet. Add the mushrooms and simmer for 5 to 10 minutes over low heat. Mash the avocado and wasabi together in a bowl. Set aside. Mix together the vegan mayo and Sriracha. Set aside. Wet your hands and the inside of a small bowl with some water. Pack 1/2 cup rice into the bottom of the bowl as tightly as possible. Flip over and gently tap the bottom until the rice "bun" pops out. Repeat with the remaining rice. Spread the wasabi-avocado mixture on one of the "buns." Then top with the mushrooms, Sriracha-mayo mixture, ginger, and shredded cabbage. Watermelon feta superfood salad🥗 It is no secret that I‘m totally obsessed with this watermelon feta salad. Originally, in my non-vegan days, I used regular feta. Since depriving myself of anything is not an option, I created a plant-based version of my favorite summer salad. This salad is so hydrating, juicy and savory. The mint, kale and chia seeds make this one a real nourishing powerhouse ✨ For the feta 250gr Firm Tofu, cut in cubes 2 Tbsp. Nutritional Yeast 2 Tbsp. Olive Oil 2 Tbsp. Lemon Juice 1/2 Tsp. Salt 1 Tbsp. Water 1/3 Cup Mint, chopped For the salad Greens - Kale & Arugula Watermelon 1/4 medium Cucumber, cut in cubes 1/2 red Onion, cut into rings 2 Tbsp. Apple Cider Vinegar Salt & Pepper to taste For the toppings Mint Chia Seeds Pumpkin Seeds Pistachios Mix all ingredients for the feta, except the tofu. Once a smooth paste is formed, add the tofu cubes and coat well. Let marinade, until the salad is prepared. Assemble the salad, adding all ingredients. Vegan&GF Chocolate peanut butter cheesecake🍫🥜 ⠀ Ingredients👇 for 16cm/6.3 inch mould Crunchy chocolate base 65gr (1/2cup/ 2.3 oz) GF flour 15gr (2tbsp/ 0.5 oz) Cacao powder 35gr (1/6cup/ 1.2 oz) Sugar/sweetener 45gr (1/5cup/ 1.6 oz) Vegan butter 60gr (1/3cup/ 2.1 oz) Dark chocolate 25gr (1 2/3tbsp/ 0.9 oz) Peanut butter ⠀ Chocolate mousse 115gr (3/4cup/ 4 oz) Melted dark chocolate 260gr (1 1/6cup/ 9.2 oz) Vegan cream cheese 105gr (7,5tbsp/ 3.7 oz) Coconut cream 50gr (1/4cup/ 1.8 oz) Powdered sweetener 1 tbsp Vanilla extract Pinch of salt (if your vegan cream cheese is not salty already) ⠀ Peanut butter cheesecake 260gr (1 1/6cup/ 9.2 oz) cream cheese 75gr (1/4cuo+2tbsp/ 2.6 oz) Powdered sweetener 130gr (1/2cup+1tbsp/ 4.6 oz) Smooth peanut butter 1 tbsp Vanilla extract 100gr (1/3cup+2tbsp/ 3.7 oz) Coconut cream Pinch of salt (if your cream cheese is not salty already) ⠀ Chocolate peanut butter ganache 160gr (1cup/ 5.6 oz) Melted chocolate 30gr (2tbsp/ 1 oz) Peanut butter 100gr (1/3cup+2tbsp/ 3.7 oz) Warm coconut cream ⠀ Notes: 💚I didn’t use my homemade cream cheese for this recipe because it’s a bit too acidic, to my taste, to combine it with chocolate and peanut butter. I prefer to use homemade cream cheese for fruit or classic cheesecakes. 💚When you make a top layer you will create an emulsion between fat (chocolate&peanut butter) and water (coconut cream). Shepherds pie! 1 x cup tvp 1 x 400g can of lentils 3 x celery stalks 1 x onion 1 x carrot 1 x massels beef stock cube 1 x cup Passata 2 x tbps tomato paste 1 x tbps woolworths traditional gravy mix (boxed) Thyme Parsley Garlic powder Salt & pepper 4 x white potatoes Nutritional yeast Nuttelex Soy milk Substitute nuttelex, gravy mix or massels beef stock cube to any other vegan options you prefer. 1. Finely dice onion, carrots & celery. Boil one cup of water and add it too one cup of tvp with vegan beef stock cube. 2. Heat a tbps oil of your choice in a medium sized pot and add onion, carrots & celery. Cook until onions are translucent. 3. Add tvp & drained can of lentils to mix. At the same time add thyme, parsley & garlic powder until you reach a seasoning you like. 4. Add tomato paste to pie filling mix as well as one cup of passata and one cup of water. Allow to cook until the mix is quite think. 5. Whilst that is cooking peel and dice potatoes and add to water to boil until very soft. 6. Once pie filling mix has thickened add a tbps of woolworths traditional gravy mix (please make sure it is the boxed 425g one as it is the only vegan one to my knowledge). Stir through thouroughly making sure there is no clumps. Leave it on the heat for a while stiring until nice and thick and then switch it off. 7. Drain and mash the potatoes. Add nutritional yeast, a dash of soy milk (or any unsweetened plant based milk you prefer), a tsp of nuttelex and salt & pepper to taste. 8. Mash and stir until nice and smooth. 9. Transfer pie filling to a baking pan and then dollop the mash on top. I like to add more nutritional yeast or vegan cheese on the top if I have it in the fridge. 10. Add to a preheated oven at 180 degrees. Cook until potato top has colour/cheese is melted. 11. Serve into your face at full velocity.

One pan pasta - Follow @eatrightfoodideas - Credit: @feelgoodfoodie - Ingredients: 8 ounces linguine 1 pint cherry tomatoes, sliced in half 2 ounces baby spinach leaves 1 small onion, finely sliced 3 cloves garlic, finely sliced A small handful of basil leaves, roughly chopped 2 tablespoon extra virgin olive oil 1/2 teaspoon crushed red pepper 1/2 teaspoon salt 2 ounces vegan parmesan cheese 1. In a large deep pan, place the spaghetti in addition to the cherry tomatoes, spinach, sliced onions, garlic and basil. Drizzle the olive on top and season with crushed red pepper and salt. 2. Pour 4 cup of boiling water (or vegetable/chicken stock) into the pan and bring the mixture to a boil. Cook for 8-10 minutes on medium heat stirring occasionally with tongs, until the liquid in nearly evaporated, creating a sauce. 3. Remove the pan from heat and stir in parmesan cheese and fresh basil. Nacho cheese by @anettvelsberg. Ingredients: Cheese sauce:
1/2 cup raw cashews, soaked for 1 hour in hot water
3/4 cup (180ml) water
1 cup (235ml) @elmhurst1925 unsweetened almond milk
8 pickled jalapeno slices + 2 tsp liquid
1/4 cup tapioca starch (also called tapioca flour)
1/4 cup nutritional yeast
1 teaspoon turmeric
1 tsp paprika
salt (or to taste)
1 packet natural tortilla chips
1 avocado, sliced
1 cup cooked beans (seasoned with salt, chilli and cumin)
1 cup chunky salsa
Handful of cherry tomatoes, halved
1/2 red onion, sliced
1 avocado, sliced
Handful of fresh cilantro
1/3 cup vegan sour cream
Preheat oven to 200C. Place all the ingredients for the cheese sauce in a high-speed blender and blend until very smooth. Pour it into a saucepan and cook, stirring frequently, until it gets thick, stretchy and gooey, about 3-5 minutes.
Arrange the half chips on a baking tray or cast iron pan, then top with the half the beans, salsa and cheese sauce. Do another layer with the rest of the items. Place in the oven for 10 minutes, until the edges of the chips have browned. Take out of the oven and top with red onion, cherry tomatoes, avocado, sour cream and cilantro. Quinoa black bean burgers by @feelgoodfoodie (and that’s vegan mayo & mustard, not an egg 😋) 🍔 Ingredients: 1/4 cup uncooked quinoa 2/3 cup water 1 15 oz can black beans rinsed and drained 3 oz tomato paste 1 teaspoon paprika 1 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon oregano 1/2 teaspoon salt 1/2 teaspoon pepper 1/3 cup breadcrumbs 1 tablespoon olive oil Burger buns and toppings of choice Steps: In a small pot, cook the quinoa with water and add salt to taste. Bring a boil, cover and simmer for 14 minutes. Uncover and fluff with a fork. In a large bowl, add the rinsed black beans and mash the bean fully with a fork or potato masher. Add the cooked quinoa to the black beans, then add the tomato paste, all the seasoning and the breadcrumbs. Form four patties. Heat olive oil in a grill pan, place the quinoa burgers in the pan and fry over medium heat for about 4 minutes per side. Build a burger with your favorite buns and toppings. 💥Black Bean Tacos with Sweetcorn & Mango Salsa💥 Recipe below 🌮 No need to worry about ‘What’s for dinner tonight?’ Or any night for that matter! PISTUU App helps you PLAN, SHOP and COOK easy, healthy & delicious meals 💚 INGREDIENTS: 6 corn tortillas (serves 2) For the Sweetcorn & Mango Salsa: 1 corn cob, leaves removed 1 mango, diced 1 Jalapeno pepper, de-seeded and finely chopped (leave seeds in if you prefer it hot) 2 radishes, grated with a mandolin ½ sm red onion, diced ½ bunch coriander, chopped 1 large lime, juiced Salt, to taste For the Black Beans: 1 400g (15oz) can black beans, rinsed and drained ½ yellow onion, diced 1.5 tsp cumin powder Water for frying Salt & black pepper, to taste Toppings 1 small avocado, thickly sliced Hot sauce/sriracha (optional) METHOD: 1) Over a large bowl, hold one end of the corn cob and rest the other end on the bottom of the bowl. Using a sharp knife, slice the kernels off the cob. 2) Add the remaining Sweetcorn & Mango Salsa ingredients to the large bowl with the corn. Toss to coat and set aside. 3) For the black beans, heat a medium fry pan over medium heat. Add yellow onion and ⅓ cup water and sauté for 3-5 minutes or until onion is translucent. Keep adding splashes of water as needed if onion begins to stick. 4) Add the cumin and stir for 30 seconds then add the black beans and ½ cup water to the pan. Cook for 3-5 minutes until beans are heated through and water has evaporated. Roughly mash beans with a fork and season with salt and pepper. 5) While the beans are cooking, heat corn tortillas according to packet instructions. 6) To assemble tacos, spread the black beans down the centre of each tortilla and top with salsa and a slice of avocado. Add a squirt of hot sauce if desired. Baked Smoky Potato Wedges with a Limey Avocado Mash 🥑😍 Follow us 👉 @veganshiftology Credit @cleanfoodcrush 🍟🥑 Ingredients: ​makes about 4 servings ​2 lbs. small russet potatoes, skin on, washed well and pat dried 1 tsp sea salt, or to taste 1/2 tsp cayenne pepper, or to taste 1 tsp garlic powder 1 Tbsp smoked paprika 1/2 Tbsp dried Italian seasoning 1 1/2 Tbsps avocado oil or olive oil OPTIONAL: mashed avocado, guacamole, marinara sauce, hot sauce, homemade ranch I mashed 1 ripe avocado with 1 Tablespoon fresh squeezed lime for my dip Instructions: Preheat your oven to 375 degrees f. and add a silicone baking mat on a large sheet pan. Alternatively you can line it with parchment paper. Slice the potatoes in half lengthways, then into wedges as shown. In a large bowl place wedges and sprinkle with seasonings, and oil. Toss to get them really well coated. Arrange the potato wedges on the prepared baking sheet leaving some space in between each one so they can crisp up! Bring a boil, cover and simmer for 14 minutes. Uncover and fluff with a fork. In a large bowl, add the rinsed black beans and mash the bean fully with a fork or potato masher. Add the cooked quinoa to the black beans, then add the tomato paste, all the seasoning and the breadcrumbs. Form four patties. Heat olive oil in a grill pan, place the quinoa burgers in the pan and fry over medium heat for about 4 minutes per side. Cinnamon Banana French Toast Sticks 😍😊 Follow us 👉 @veganshiftology Credit @itsallgoodvegan ❤️ 4 slices of bread, substitute with gluten free bread. 1 cup dairy- free milk, I used almond milk 1 Tbsp ground flax seed 1 medium banana, mashed into a paste 1 tsp cinnamon 1 tsp vanilla 1 Tbsp oil, canola spray oil or coconut oil. This is for the pan. Toppings 1/3 cup maple syrup ¼ cup walnuts Directions Cut your slices of bread into sticks. Repeat until all of the slices have been cut. Set bread aside. Combine the mashed banana, milk, cinnamon, vanilla, and ground flax seed in a large bowl and whisk. Place the mixture in the refrigerator for 10 minutes to thicken. Whisk mixture once more. Completely dunk your stuffed French Toast Sticks in the mixture covering all sides. Repeat until you have covered all sticks. Heat a large pan on medium heat. Once hot, add the oil to your pan. Add 3-4 coated sticks to the pan (you don’t want to add too many at once). Fry slices on both sides until golden brown. I cooked my slices for 2 minutes on each side. RECIPE🌱⁠ For the pink rice:⁠ 250g sushi rice⁠ 3 Tbsp rice vinegar⁠ 1 Tbsp maple syrup⁠ 1 tsp salt⁠ 1 tsp pink unicornsuperfoods pitaya powder⁠ .⁠ .⁠ For the filling:⁠ 2 Tbsp soy sauce⁠ 1 Tbsp sesame oil⁠ 1 Tbsp mirin⁠ 1 tsp garlic powder⁠ 300g oyster mushrooms, chopped⁠ 1 carrot, julienned⁠ 1 cucumber julienned⁠ 1 avocado, sliced⁠ purple cabbage, sliced⁠ .⁠ .⁠ 6 nori sheets⁠ black sesame seeds⁠ .⁠ .⁠ HOW TO⁠ 1.Prepare the sushi rice according to instructions on the package.⁠ 2.Add the rice vinegar, maple syrup, salt and pitaya powder and combine well. Set aside and let cool down.⁠ 3.For the oyster mushroom filling, place all marinade ingredients into a bowl and whisk together. Add in the oyster mushrooms and use your hands to coat them evenly in the marinade.⁠ 4.Heat a sauce pan over medium heat and add the mushrooms. Fry the mushrooms for 5-8 minutes until they become dark brown and chewy.⁠ 5.Prepare the veggies as instructed.⁠ 6.Take out a nori sheet place it on a bamboo mat, place 3-5 tbsp of rice (depending on desired thickness) on the sheet and use your hands or a rice spatular to evenly press it down (see video for instructions). BLACK BEAN QUINOA NEATBALLS 🤩 Follow us 👉 @veganshiftology Credit @terianncarty 🧡 ⠀⠀ 1 cup dried black turtle beans, soaked overnight (or canned) 2 tbsp olive oil 1/2 yellow onion small diced 2 cloves garlic minced 2 tsp ground cumin 2 tsp smoked paprika 1/4 tsp cayenne 1/4 tsp salt and cracked pepper 5 cherry tomatoes halved 1/4 cup homemade tomato sauce ⠀ in an instant pot, sauté onion, garlic & olive oil. Once soft, add in spices to toast for 30 sec to 1 minute. Add drained and rinsed beans and cover with water. Pressure cook on high for 25 min. ⠀ NEATBALLS ⠀ 1 1/2 cups cooked black beans 1 cup cooked and cooled quinoa 1/2 cup roughly chopped basil 1/2 yellow onion diced 2 cloves garlic minced 1 tsp dried oregano 1 tsp dried parsley 2 heaping tbsp vegan Parmesan 1 tsp fennel seeds 1 tbsp vegan Worcestershire sauce (or balsamic vinegar) 2 tsp tomato paste Handful baby spinach 1/4 teaspoon cayenne Pinch of chilli flakes 1/2 teaspoon sea salt Cracked pepper ⠀ Preheat oven to 375F. Place cooked black beans on parchment paper and spread evenly. Place in pre-heated oven for 15 min. Saute garlic and onion and add to food processor. Place everything into food processor and pulse to combine. We are looking for texture, not puree. If the mixture is too wet, add more vegan Parmesan OR a couple tablespoons of bread crumbs. Place parchment on a baking sheet. Roll balls (its ok if they are very moist) and place in fridge to firm up for 20 minutes. Heat 2 tbsp olive oil over medium high heat into same pan as garlic and onion. Gently add neat-balls in. Sear on all sides and place on baking sheet. Bake for 25-30min turning half way. ⠀

Creamy Curry Pasta 😍👌 Follow us 👉 @veganshiftology Credit @nourishingalex Recipe: Serves 1-2 Ingredients: - 2 servings of dried pasta of choice (I used wholewheat penne) ⁣ - 1/2 medium/large onion, diced⁣ - 1 clove garlic, minced or 1tsp garlic granules ⁣ - a few closed cup mushrooms, sliced⁣ - 1/2 a 400g can red kidney beans, drained & rinsed⁣ - 1/2 can coconut milk ⁣ - 1/2 tsp ground cumin⁣ - 2 tsp medium curry powder⁣ - a handful fresh organic spinach⁣ - juice of 1/2 a lime⁣ - salt & pepper to taste!⁣ ⁣ Instructions: 1. Cook the pasta according to packet instructions, then also add the red kidney beans to the same pan as the pasta to cook together until al dante. ⁣ 2. Meanwhile, sauté the onion, garlic & mushrooms in a frying pan with a little water/oil for 5-10 mins until the mushrooms are soft. ⁣ 3. Turn the heat down to low, then add in the cumin & curry powder. Stir for 1 min until fragrant.⁣ 4. Pour in the canned coconut milk & squeeze of 1/2 a lime. ⁣ 5. One the pasta is cooked, drain the pasta and kidney beans from the pan through a colander, then stir them into the pan with the curry. ⁣ 6. Bring the heat up to a medium setting, add a handful of spinach and stir frequently for 5 mins until the spinach has wilted. ⁣ 6. Season with salt and pepper. Recipe for the Baked Falafels (makes 12): 1 shallot or half onion 2 medium carrots, shredded half can of chickpeas 3/4 cup chickpea flour 2 big handful flat parsley, chopped 1/2 tsp salt or less 1 tsp cumin 1 tsp paprika 1 tsp raz el hangout 1/4 tsp fenugreek Directions: 1. start browning onion in a pan for couple mins 2. Peel and finely shred carrots 3. In a big bowl, mash chickpeas with fork and add shallots, spices, parsley & carrots. Combine with clean hands. 4. Vegan slicable Cheese 😍👌 Follow us 👉@veganshiftology Credit @minimalistbaker Cheese 2 cups raw cashews 2 cloves garlic, minced (2 cloves yield ~1 Tbsp) 1/2 tsp garlic powder (plus more to taste) 1 medium lemon, zested 2 medium lemons, juiced (2 lemons yield ~1/4 cup or 60 ml) 3/4 cup water 2 Tbsp nutritional yeast 1/2 tsp sea salt 2 Tbsp olive oil For serving 2 Tbsp finely minced fresh dill Instructions Place cashews in a bowl and cover with cool water. Cover with plastic wrap and set in the refrigerator to soak for 12 hours*. If you can't get to them right away, drain, place back in bowl, and cover with plastic wrap. They will keep refrigerated for 24-36 hours. Once soaked, drain cashews thoroughly and add to food processor. Add minced garlic, garlic powder, lemon zest, lemon juice, water, nutritional yeast, salt and olive oil. Process until very creamy and smooth, scraping down sides as needed. Then taste and adjust seasonings as needed, adding more lemon zest for tartness, nutritional yeast for cheesiness, garlic for zing, or salt for flavor + balance. Place a fine mesh strainer (or colander) over a large mixing bowl, and lay down two layers of cheesecloth (or a clean, fine, absorbent towel). Use a spatula to scoop all cheese over the cheesecloth, then gather the corners and twist the top gently to form the cheese into a "disc." Secure with a rubber band. BEETROOT SALAD// An absolute gorgeous lunch❣️ . . . 🌿INGREDIENTS:- • Boiled Grated beetroot • Curd/ yogurt • Salt to taste • Pepper powder • Coriander leaves . . . 🌿 METHOD:- Put thoroughly washed beets in a pot and cover with water by about 1-2 inches. If using pressure cooker, seal with a lid, bring to a boil and then cook for about 1 hour. If using regular pot, cook for about 2 hours or until beets can be pierced with a toothpick with little resistance.Drain the water and let cool. As soon as beets are cold enough to handle peel off the skin. Grated the beets and add them in a bowl and then add all the ingredients mentioned above. Stir. Taste and adjust the amount of salt and garnish with your favourite topping. To enhance the flavour of the curd you can add tadka(Take a tadka pan,heat tbsp of oil and add cumin seeds, mustard seeds & curry leaves).I have used roasted paneer, black sesame seeds with some fresh coriander leaves.
