Another wrap & veggies for lunch today - this time is tofu “egg” mayo & cress with salad 😍 For this I mashed tofu with salt, pepper, turmeric & black salt, then mixed in vegan mayo & a bit of vegan salad cream because I love a mix of both. Then stirred in some cress & chucked it onto a wrap with loads of mixed lettuce. This was so quick to make & tastes absolutely amazing! It’s so close to what I remember it being like! Oggi MIGLIO CON FAGIOLINI, POMODORINI E RICOTTA 😋😋 Un piatto unico e completo per tutta la famiglia! La ricotta di soia la avevo già pronta da ieri, il procedimento per farla è semplicissimo, l’ho scritto più volte ma lo ricondivido volentieri ❤️ 👉🏽ho messo 30 ml di aceto di mele in una ciotola e 1 litro di latte di soia a scaldare in una pentola. Appena ha cominciato a bollire ho versato il latte nella ciotola e ho mescolato bene. Ho coperto per una decina di minuti e poi ho travasato il tutto in due fuscelle da ricotta. Il siero colato l’ho versato in un barattolo e l’ho usato oggi per cucinarci il miglio. 👉🏽i fagiolini li ho bolliti in acqua, un pizzico di sale e aglio per 20 minuti circa lo stesso tempo di cottura del miglio infatti li ho cotto contemporaneamente. 👉🏽Il miglio l’ho sciacquato bene, messo a tostare in padella per qualche minuto e poi ci ho aggiunto il siero della ricotta e un po di acqua. Ho unito della salvia, una manciata di anacardi tritati, semi di Canapa e ho fatto cuocere a fuoco basso. 👉🏽 a fine cottura ho unito un cucchiaio di Tahin, un cucchiaio di lievito alimentare e qualche pomodorino. 👉🏽dopo aver impiattato ho aggiunto la ricotta, gambo di cipollato essiccato e semi di lino tritati. 😋😋😋😋😋😋😋😋 Veramente buonissimo! Attenti al taglio dei pomodorini in svezzamento. Here's the recipe - Ingredients: ➡️Watermelon white part - 2 cups ➡️ Potato - 3/4 cup ( 1 medium ) ➡️ Onion -1 medium ➡️ Garlic - 2-3 cloves ➡️ Chopped coriander - 1/2 cup ➡️ Lemon juice - 1tea sp ➡️ Salt and black pepper to taste. . STICKY SESAME CRISPY TOFU . #veganrecipe by @alexafuelednaturally .⠀ .⠀ Ingredients:⠀ Crispy tofu: ⠀ 1 package Extra firm tofu ⠀ 1/4 cup corn starch ⠀ Sesame sticky Sauce:⠀ 1 teaspoon avocado oil ⠀ 2 garlic cloves minced ⠀ 2 tbsp organic brown sugar or coconut sugar ⠀ 2 tsp rice vinegar ⠀ 1/4 cup + 2 tbsp Tamari or soy sauce⠀ 1/4 cup organic ketchup⠀ 1 tsp toasted sesame oil⠀ 2 tbsp sesame seeds⠀ Other ingredients:⠀ sliced green onions for garnish ⠀ White or brown rice to serve⠀ ⠀ Method:⠀ 1.Remove tofu from package and wrap in a couple paper towels gently pressing on tofu to release a bit of the moisture. Cut tofu into cubes then roll each tofu cube in corn starch making sure each side is coasted. ⠀ 2.Bring a hot skilled to medium heat and add enough avocado oil to cover the bottom of the pan. Once hot, add cubed tofu and cook on each side until golden & crispy. Season with salt and once removed from pan place on a plate lined with paper towel.⠀ 3. In a bowl combine all sauce ingredients (except garlic & avo oil) mix to combine. Heat 1 tbsp of oil in a large pan over medium heat. Add the minced garlic and cook for 30 seconds. Add the sauce mixture and bring to a simmer. Cook for 3-4 minutes or until just thickened.⠀ 4. Add the crispy tofu to the pan and toss to coat with the sauce. Creamy Vegan Polenta with Mushrooms and Spinach by @biancazapatka Follow us @healthy.organic.food for daily vegan recipes Ingredients Polenta (Basic Recipe) 1 cup polenta (150 g) 3/4 cup full-fat coconut milk (200 ml) 1 1/4 cup vegetable broth (300 ml) 2-3 tbsp nutritional yeast flakes or vegan parmesan cheese (optional) ⠀ Mushroom Spinach Topping 1 tbsp olive oil or coconut oil 1 onion sliced 7 oz mushrooms (200 g) sliced 2 cloves garlic minced 1-2 tbsp soy sauce 2 cups spinach roughly chopped salt, black pepper to taste 2-3 tbsp pine nuts (options see above) ⠀ Instructions Polenta Bring coconut milk and vegetable broth to a boil in a pot. Stir in polenta by using a whisk.⠀ Reduce heat to a low simmer and continue to whisk for 1-2 minutes to avoid lumps.⠀ Then cover and let simmer for about 10 minutes (or according packaging instructions), stirring occasionally. (If the polenta thickens too much you can add additional milk and/or water and stir to thin.) Once the Polenta is creamy and smooth, remove from the stovetop. Add nutritional yeast or vegan parmesan and stir (optional). Mushroom Spinach Topping Heat oil in a skillet or pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown. Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste. Add a splash of fresh lime juice, if you like. Toast pine nuts in a small pan without oil until lightly browned. Serve polenta with mushrooms, spinach and pine nuts. I know that it’s been radio silence from me the past few days, and that’s because I’ve been taking time to process my own emotions over the recent events and getting a feel for everyone else’s emotions before making any moves. I know that none of you followed me for anti-racism or human rights content, but these times are making it evident that some people really do need a reminder to be a decent freaking person with every step they take. it simply isn’t enough to verbally commit to being “anti-racist” and refrain from being racist yourself. you have to commit to realizing that police & other authorities are normal people just like you, and make your own judgements of their reactions accordingly (their position doesn’t make them immune to poor decisions or bad intentions). you have to truly understand that all humans are equal and refrain from making degrading and racist remarks that then contradict that understanding. you have to evaluate the rhetoric maintained by the political figures you support and decide whether or not you agree with their suggestions for how human beings should be treated, then reallocate your support if their suggestions don’t sit right with you morally. and when you’re upset about riots, you have to understand that people who aren’t heard feel pressed to exhaust every opportunity for their voice to be heard, sometimes even if they agree that violence isn’t the answer. please support those currently fighting for this cause by donating time & money, peacefully protesting, and signing petitions, but remember that the only permanent fix to a centuries-old problem is contributing to the reparation of humankind’s views & actions on race as a whole. ••• with all that said, I will resume posting food content while incorporating more intersectional discussions in order to maintain both amplification of this message and the typical food & wellness entertainment/inspiration/whatever it is for you. In a food processor, combine crust ingredients and pulse to combined. You should get a moist mixture than can be easily moulded. Firmly press into bottom and up the sides of tart tin. Bake for 20-25 mins until crust is golden brown. Transfer to a wire rack and let it cool while you're preparing the filling.
. Add the cherries and 1/4 cup of water into a saucepan over a medium heat. Mash the cherries as they begin to heat up. Transfer cherry mixture into a blender and blend until smooth. Strain it through a fine mesh sieve. . Then add the cherry mixture and coconut milk into a saucepan and place on the stove on low heat. When the mixture becomes warm and add the agar-agar, and maple syrup. Stirring constantly, cook until agar completely dissolve. Allow to boil for approximately 30 seconds. Pour the filling into the crust. Banana,date and peanut butter pancakes! If you scratch the golden syrup I drizzled all over them afterwards, they are refined sugar free! Cooked without oil too! All unintentionally of course,it's the day before the food shop and the cupboards are bare 😅 I just blended a ripe banana with a few dates and a tsp of peanut butter, then tip into a bowl,add in some plant milk,we used almond,was about 1/4 of a cup,add a tsp of baking powder, then plain flour until it makes a thick batter. Spoon into a non stick pan and add chopped dates in top. Cook on a low heat until bubbles appear and flip. Take a few minutes each side! Баклажаны а-ля кавказоид👌🏻 ⠀ 🍆4 баклажана 🍆2 болгарских перца 🍆500г помидоров (можно консервированных) 🍆чеснок ⠀ 🌶 Баклажаны режем на кусочки, кладём в миску, щедро солим, заливаем холодной водой. Отставляем до окрашивания воды в темный цвет. Так мы убираем горечь. 🌶 В глубокой кастрюле на масле быстро обжариваем мелко порезанный чеснок, добавляем порезанный кусками перец, накрываем крышкой, тушим на среднем огне мин 10. 🌶 Баклажаны промываем, отжимаем, добавляем к перцу, тушим под крышкой ещё мин 20. 🌶 Добавляем помидоры. Если брали свежие, заранее надрежьте крест-накрест, залейте кипятком, потом снимите кожицу. 🌶 Добавляем соль, перец, паприку, тушим до готовности. 🌶 Если перед подачей накидаете в тарелку кинзы, будет вообще супер🤓

Carrot and Ginger Soup 🥕 . Zesty, tangy, fresh and anti-inflammatory... this soup will liven up your tastebuds for sure!! 😍🙌🏼 Also, one of the best things about soup... you literally only have to use one pot!! 😂 minimal washing up. One pan dishes are the way forward!! Also, the weather may be a little warm for soups.. but you can serve this cool and it’s just as good! Better for the coconut bowls too 🥥🙏🏻 here we go: . Ingredients; ▪️2 Tbsp Olive oil ▪️1 White onion ▪️1 tsp Crushed Garlic ▪️1 thumb sized chunk of minced ginger ▪️10 Large Carrots - sliced ▪️600ml Vegetable Stock ▪️1 Tbsp Lemon Juice ▪️1 tsp turmeric powder ▪️400ml coconut milk ▪️Salt and Pepper OPTIONAL: Tiny squeeze of balsamic glaze 👀 . Method: 1. Add the oil and the onions - medium heat for 2 mins 2. Add the garlic and ginger and sauté until onions are soft and translucent 3. Add the carrots, veggie stock, lemon juice, turmeric and coconut milk and stir together. 4. Bring to the boil then reduce to simmer until the carrots can be pierced with a fork (30 mins or so) 5. Remove from the heat, grab an immersion blender and go to work. 6. Season, and garnish with a couple of pumpkin seeds and coriander or whatever you want to make it look pretty 😂 . Рецепт для ленивых 😉 Оладьи из чечевицы: 🔸Стакан красной чечевицы; 🔸Морковь; 🔸Лук белый; 🔸Перышки зеленого лука; 🔸Вода; 🔸Соль, перец, куркума. На ночь замачиваем чечевицу. Утром промываем и взбиваем блендером с небольшим количеством воды. Отдельно обжариваем лук белый, добавляем морковь (желательно не целую, а натереть ее на терке😋). Я еще в конце добавила немножко томатной пасты. Все обьединяем и блендерим еще немножко. Добавляем нарезанный зеленый лук и специи. Обжариваем на сковороде с двух сторон. Teriyaki mushroom udon noodles 👅 . This is such a fresh stir fry and literally takes under 10 minutes to cook. . To make start by frying carrot, red pepper and green pepper (or any other veggies you have) in a pan with some sesame oil. Next add a generous amount of garlic and fresh ginger. Next I added some pre-cooked udon noodles. In a separate pan I fried some mushrooms in teriyaki sauce until crispy. Diverting away from the contents of my kitchen for a moment to share with you all something I’ve just received in the post. Everyone knows that most period products aren’t very sustainable - there’s a lot of waste plastic and single use involved, and the reusable products on the market just aren’t for everyone. I was flicking through Instagram earlier in the week and an advert for @meetdaye popped up - and it took literally 30 seconds of looking at their page to convince me to subscribe. Their products are carbon neutral, the wrappers are compostable, the applicators are recyclable once cleaned, their packaging is recyclable, the tampons themselves aren’t bleached cotton, not to mention their branding is simply to die for. I’ve bought the CBD infused tampons which are designed to alleviate cramps (I’m one of those blessed girls that finds it hard to stand up some days from the intensity of the pain, so I’ll try anything!) and the reviews online are all incredible - so I’ll check back in when I’ve got some feedback to share and save it to my health & beauty highlight. Daye work with scientists to sterilise and sanitise their products (sounds standard doesn’t it? turns out it’s not even a legal requirement for sanitary products to be sanitised!). Their brand value is “leave an impact, not a trace” and I think that’s applicable to so many things in life too. #vegan Melanzane Parmigiana Melanzane means aubergine, which is the base of this recipe. I mean, what did you expect? It’s tangy and moorish. Its the kind of dish that you know you should have stopped eating but you still go back for more. Like that time at your friend’s party when Andy asked: “what happened to the last piece of cake?” Just to make it clear, everyone saw the crumbs on your face! INGRIDIENTS: Vegan parmesan Vegan mozzarella 400g of chopped tomatoes 1 tbs of breadcrumbs 2 cloves of garlic 1 tsp of dried thyme 1 medium aubergine 5 walnuts 1 tbs of Olive oil 1 Onion 1 tsp of chopped basil 5 seedless red grapes Thinly Slice aubergines and cover in some oil, herbs, salt and pepper. Bake in a preheated heated oven (180 degrees). Bake until a bit golden. When done, take out and set aside. In the meantime, finely chop the garlic and onions and fry with a bit of oil. Add some finely chopped walnuts to the mixture and stir. Fry until onion become translucent. Add the chopped tomatoes and diced grapes. (Make sure they are very small cubes.) Stir in thoroughly and simmer until reduced. Line or oil your tin and start layering the aubergine first. When bottom is covered add your sauce and cover it with vegan Parmesan and breadcrumbs. Bake in the oven for another 20 - 30 minutes.
