Good morning family! Every week I want to shine light on my customers. It honestly feels weird calling most of you customers because you are definitely customer turned friends/brothers/sisters. . This guy right here is my big bro. Bruce came to us Fall of last year and never left. Outside of dedicated orders and referrals, Bruce checks in on us and our children once a week sending peace love and blessings. Cheesy Pumpkin Pasta by @happyskinkitchen Follow us @deliciousveganrecipes for daily vegan recipes Ingredients: About 1/2 butternut squash/pumpkin – about 300gr 1/4 cup of cashews – soaked in some boiling water for 30 minutes 1 white onion – peeled and finely chopped 2 garlic cloves – crushed 1 tbsp of lemon juice 3 tbsp of nutritional yeast Few sprigs of fresh thyme 1/2 tsp of smoked paprika 1/2 cup or more of plant milk – soy or oat are great Plenty of salt and pepper to taste 1 tbsp of olive oil for frying For the miso mushrooms: About 250gr of chestnut mushrooms – sliced 1 tbsp of olive oil for cooking 1 tsp of brown rice miso paste mixed with 2 tsp of boiling water Pasta of your choice to serve Peel and chopped the butternut squash into bite size pieces. Steam the butternut squash pieces for 20-15 minutes until soft. Drain them and leave them aside.While the butternut squash is cooking peel and finely chopped the onion and add it a small frying pan with a touch of oil. Fry the onion on a low to medium heat for 5 minutes until it starts to caramelised. Add in the crushed garlic cloves and thyme leaves and cook for another minute. Add the cooked butternut squash to a blender together with the onion and garlic, soaked cashews, lemon juice, nutritional yeast, smoked paprika, plant milk salt & pepper. Blend until completely smooth and silky. Add more plant milk if needed. Cook the pasta according to the packet instructions. While the pasta cooks add the sliced mushrooms to pan with the oil. Pour over the miso paste mixed with water and cook the mushrooms on a fairly high heat for 10 minutes until all the liquid has evaporated. Drain the pasta and put it back in the pan and pour in the butternut squash sauce. 🥕😍 Fluffy and Moist Carrot Cake! 📷 by @tmdraeger Follow us @veganfantasy for daily delicious vegan recipe!🌱🌱#veganfantasy Recipe: 3 batches flax egg 1/3 cup melted coconut oil 1/4 cup maple syrup 1 scant cup unsweetened applesauce 1/2 cup organic brown sugar 1/4 cup cane sugar 3/4 tsp sea salt 1 1/2 tsp baking soda 1 1/2 tsp baking powder 1 tsp ground cinnamon 3/4 - 1 cup plain unsweetened almond milk 1 1 /2 cups loosely packed grated carrot 1 1/2 cups almond flour 1 1/2 cups gluten-free flour blend 3/4 cup chopped raw walnuts 1/2 cup raisins FROSTINGS optional Vegan Cashew Buttercream Frosting (2 Ways) Vegan Buttercream Frosting Vegan Cream Cheese Frosting Coconut Butter or Coconut Yogurt Coconut Whipped Cream Instructions Preheat oven to 350 degrees F (176 C). Butter and flour two 8-inch, 1 9x13-inch, or 3 6-inch round pans with coconut oil or vegan cooking spray and dust with gluten-free flour. Shake out excess. Set aside. Prepare flax eggs in a large mixing bowl. To flax eggs, add oil and maple syrup and whisk to combine. Next, add applesauce, sugars, salt, baking soda, baking powder, and cinnamon and whisk to combine. Add almond milk and stir. Add grated carrot and stir. Then add almond flour and gluten-free flour blend and stir. The batter should be thick but pourable. If too thick, add remaining almond milk 1/4 cup or 60 ml . If adding walnuts, add at this time and stir. Divide evenly among cake pan(s). Bake for 40-50 minutes or until deep golden brown and a toothpick inserted into the center comes out clean. When you press on the top, it shouldn’t feel too spongy, so don’t be afraid of over-baking! The gluten-free blend just takes a little longer to bake. Also, note that the size of pan you use will vary baking time. Remove from oven and let rest in the pans for 15 minutes. Then carefully run a knife along the edges and gently invert onto cooling racks to let cool completely.

Pasta With Spinach Almond Ricotta ans Sundried Tomatoes Follow @vegan.foods.happy for Daily vegan recipes Photo cred and recipe @alexafuelednaturally Spinach & almond ricotta Recipe 1 (14 ounce) package of firm tofu⠀ 1 cup raw almonds⠀ 3/4 tsp salt⠀ 4 tbsp nutritional yeast⠀ 1/2 tbsp garlic powder⠀ 1/2 tbsp onion powder⠀ 1/4 tsp pepper⠀ 3 cups chopped spinach⠀ 1/2 cup unsweetened almond milk⠀ ⠀ INSTRUCTIONS⠀ Preheat oven to 350 degrees F.⠀ Cook the pasta according to the package directions, drain and set aside.⠀ Mean while bring a small pot of water to a boil. Place your raw almonds into the boiling water. Let boil for 2 minutes.⠀ Drain the almonds immediately in a colander or strainer and rinse them with cold water to cool them. Blot the almonds dry with a paper towel.⠀ Use your fingers to gently squeeze the almonds and loosen the skin from them. Set skinless almonds in a bowl and set aside.⠀ Remove tofu from package and wrap in a clean kitchen towel or paper towel and squeeze for 20 seconds to allow for excess water to strain.⠀ In a food processor or high speed blender combine tofu, blanched almonds, nutritional yeast, unsweetened almond milk, garlic powder, onion powder, salt & pepper. Blend for 1-2 minutes or until there is no chunks. Mixture will look lumpy and that is okay! Add more almond milk if needed.⠀ In a small pan cook chopped spinach with 1 tbsp on water for 1 minute or until spinach is wilted down.⠀ Once ricotta mixture is made and spinach is ready, combine the two in a medium size bowl and mix well. Taste mixture and add any extra salt or seasonings if needed.⠀ Grab baking dish and pour 2 cups of marinara sauce on the bottom, spreading sauce evenly.⠀ Grab a spoonful of ricotta spinach mixture and spoon it into the cooked pasta shells. Be generous with the filling and then place the stuffed shells in the baking dish.⠀ Once all shells are stuffed place into the oven & bake for 20 minutes. Enjoy!

Grilled Cabbage Wraps🤩- stuffed with glutinous rice & kale stems, these wraps have an amazing smoky flavor😋from searing the cabbage by @woon.heng Follow us @best.vegan.recipe for Daily vegan recipes ⁣ Recipe⁣ 🌱Ingredients⁣ - 3 cups cooked rice (used glutinous rice or sub with other rice)⁣ - about 15-20 cabbage leaves - 3/4 cup kale stems, finely chopped (or use broccoli stem)⁣ - 1/2 cup mushrooms, finely chopped - optional (used mini King Oyster mushrooms)⁣ - 1 small carrot, finely chopped⁣ - 1 tablespoon finely minced ginger⁣ - oil for cooking, salt to taste⁣ - Seasoning (see step) 1 tablespoon soy sauce/tamari, pepper, 2 teaspoons toasted sesame oil, salt & pepper to taste⁣ 🌱Sauce (optional, cabbage wraps can be served as is) Whisk together 1 1/2 tablespoons soy sauce/tamari,1 tablespoon maple syrup, 1 tablespoon mirin, 1 chopped Thai chilis (optional) salt & pepper in 1/2 cup water until well combined. ⁣ ✅To make the filling, heat a non-stick pan with 1 teaspoon oil, sauté ginger until fragrant, add mushrooms, cook for 1-2mins. Add kale stems & continue to cook for about 30 secs, turn off the heat. ⁣ ✅Transfer mixture to a bowl, then add carrots, cooked rice & mix well with seasoning ingredients. Taste test👌🏻 ✅Bring a pot of water to boil, blanch cabbage leaves for about 45secs. Remove & quickly plunge them in icy water to stop the cooking. (If you have a small cabbage, 👀my stories on how I cook mine.⁣) ✅Place one cabbage leaf on a cleaned surface. Add a heaping spoon of filling in the middle, fold in the sides & wrap to seal. (Note more filling for a larger leaf). Repeat with the remaining ingredients.⁣ ✅In a heated non-stick pan with 1 teaspoon oil, place as many cabbage wraps as will fit in one layer in the pan. Cook until both sides are nicely browned, flipping in halfway. ✅Sauce Add the sauce ingredients in a pan, then bring it to simmer & cook until slightly thickened.⁣ ✅Drizzle sauce on the cabbage wraps & garnish with sesame seeds & chopped cilantro.

Chia Seed Jam 🍓🍒 Chia seeds are for sure a super food in many ways! This Jam is full goodness, no nasties and easy to make! I have been making this for our little human for a while now and he loves it! It’s also a great one to have in the fridge for us adults! You could try all different flavours love to see what you come up with! Chia seeds expand in liquid so be sure to make and then allow them to sit in the fridge over night before trying for the first time ❤️ Ingredients: 300g of frozen mixed berries 300ml Water 90g chia seeds 1 Tbsp agave nectar Method: Take the frozen berries out the freezer and let them sit for 30 mins - 1 hour to thaw a little. Then add the berries to your blender, and add 200ml of the water and blend until a smooth but thick consistency. Then with a spoon stir in the 90g chia seeds and add the remaining water and mix well ( you could also blend slightly) Then again with a spoon stir in the agave nectar. Place the mixture in a clean Jar to store in the fridge. Allow it to rest overnight to let the chia seeds expand. In the morning mix then spread on Toast, add to porridge and so on ❤️🍓🍒 Enjoy! * When I am storing things like this I use glass jars and sterilise in boiling water beforehand. Remember this is a fresh Jam and because it has no preservatives added it will not last as long as your typical supermarket Jam. There are a lot of great finds by going to the market in the Philippines! A lot of local vendors that connects you to local farmers, fishermen etc. In the Philippines, our farmers get paid really really low for all their crops and this is a great way to kind of shorten the supply chain and that only means more profit for smaller businesses and farmers and cheaper produce for us!

Lentil Moussaka by @elavegan 🧡 . Ingredients For the base: 2 pounds potatoes, peeled (1 kg) 3 large eggplants Olive oil to brush Sea salt & pepper to sprinkle For the lentil mixture: 3 cups of cooked lentils (600 g) 2 cups tomato purée (450 g) 1 cup chopped tomatoes (150 g) 1 tbsp olive oil 1 large onion, chopped 2 cloves of garlic, minced 2 bay leaves 1-2 tsp dried thyme 1 tsp oregano 1 tsp paprika 1 tsp coconut sugar or brown sugar pinch of cinnamon Sea salt & pepper to taste For the béchamel sauce (or use mashed potatoes): 2 tbsp vegan butter (28 g) 2 cups plant-based milk (480 ml) 3 1/2 tbsp cornstarch (28 g) 2 tbsp nutritional yeast flakes Sea salt & pepper to taste Pinch of nutmeg Vegan cheese to taste (optional) . Instructions Preheat oven to 390F/200C and prepare two baking sheets with parchment paper. Slice each eggplant lengthwise into 4 pieces. Cut the potatoes into 1/2 inch (1 cm) thick slices. Arrange all slices in a single layer on the baking sheets and brush lightly with some olive oil, sprinkle with salt & pepper. Bake in the oven for about 20 min or until lightly brown. Meanwhile, heat 1 tbsp olive oil in a skillet over medium heat. Add the onion & garlic and sauté for about 4-5 min. Add the tomato purée, chopped tomatoes, all spices, and salt & pepper to taste. Finally, add the cooked lentils and let simmer on low heat for about 5 minutes. For the béchamel sauce, add the plant-based milk to a pan/skillet. Mix in the cornstarch, nutritional yeast, salt and pepper, and whisk. Add the vegan butter and bring the mixture to a boil. Let simmer on low heat for a few min until it thickens. Whisk continuously. Remove from heat. Grease a 13"x9" (33x23 cm) or larger baking dish and arrange half of the potato and eggplant slices on the bottom of the baking dish. Top with the lentil mixture, followed by the remaining potato/eggplant slices (see photo above in the blog post). Pour the béchamel sauce on top and spread evenly. Add vegan cheese to taste (optional). Bake in the oven for about 30 min or until golden brown. Garnish with fresh herbs. Enjoy!

Recipe (makes 10): 70g jumbo Oats 20g oat flour (20g oats ground into a flour) 55g ground almonds 1/4 tsp fine sea salt 60ml Light Syrup 50ml Coconut Oil, melted 50g Dark Orange Chocolate, melted Method: Preheat the oven to 160 degrees Celsius. Line a baking tray with parchment paper. Mix all the ingredients except the chocolate in a bowl. Using a round biscuit cutter as a template, flatten the mixture on the parchment paper, dividing into 10. Bake for 15 minutes until golden brown. Allow to cool. Melt the chocolate. Turn the biscuits over and spread over the melted chocolate. Set in the fridge for 30 minutes. if you make this one! Humus de Garbanzos y Betarraga Amo el Humus porque se puede hacer de tantas maneras, aunque el original es solo de garbanzos ☝️pero yo invento con distintas legumbres y sabores y quedan ricos igual 😄 1 1/2 taza de garbanzos cocidos 1 betarraga mediana 2 dientes de ajo Jugo de un limón mediano 2 cdas. de Tahini o aceite de oliva 1/2 cda. de pimentón páprika 1/2 cucharada de comino (yo no le pongo porque no me gusta el sabor pero la receta original lleva 🤷‍♀️) Sal 1 chorrito de agua si es necesario Poner todos los ingredientes en una procesadora, yo lo hago en la minimiper y proceso hasta que quede una pasta cremosa 🤤 si lo quieren más líquido le ponen un chorrito de agua y listo! Curry de Garbanzos🥘 Creo que es uno de los platos más ricos que he preparado este último tiempo 😁 Un poco más producido y con ingredientes no tan comunes quizás pero vale la pena hacerlo por lo menos una vez 😁 Para 2 o 3 porciones 2 tazas de garbanzos cocidos 1/2 taza de pasta de tomates 1/2 Cebolla 1 o 2 dientes de ajo 1 cdta. de pimentón paprika 1 o 1/2 cdta. de cúrcuma 1 o 1/2 cdta. de curry 1/2 lata de leche de coco Sal, aceite Agua caliente solo si es necesario En una olla con aceite poner a fuego bajo la cebolla por 4 o 5 minutos hasta que esté semi transparente, agregar el ajo, pimentón paprika, cúrcuma, curry y revolver, luego agregar los garbanzos, la pasta de tomates, la leche de coco y sal a gusto, dejar cocinar hasta que hierva y listo Si en algún momento se ve muy seca la preparación y para evitar que se pegue pueden ir poniendo un poquito de agua hervida, pero muy poquito para que quede cremoso y no aguado La cúrcuma y el curry elegir cantidad según cuanto les gusten estos sabores 🇮🇳 Encima puse cilantro picado 🌱 y lo acompañé con Arroz Basmati blanco 🍚 #veganstyle #veganstrong #veganuary #comunidadvegana #bestofvegan #healthyfood #cleaneating #veganhealth #plantbasedmeal #plantbased #veganhealthy #veganrecipeshare #vegansoulfood #veganchallenge #veganlunch #dairyfree #goveganfortheanimal #happyvegan #easyvegan #veganmealprep #vegancomfortfood #veganideas #newvegan #veganbrunch #whatsvegancook #bevegan #veganinspiration #vegancurry #curry #garbanzos

Guiso de Lentejas 🥘 Para 2-3 porciones 1/2 cebolla blanca 1 diente de ajo grande 3 cucharadas de pasta de tomate 1 taza de pure de zapallo camote 1 taza de caldo de verduras o crema 2 tazas de lentejas cocidas Aceite, sal, paprika, laurel En una olla poner aceite vegetal, cuando esté caliente poner la cebolla 🧅 el ajo 🧄y el laurel, cocinar por 5 minutos hasta que la cebolla esté transparente, luego agregar el caldo o crema de verduras, pasta o salsa de tomate 🍅 el puré de zapallo y las lentejas cocidas, agregar condimentos como sal, paprika, cilantro en polvo, etc. Dejar cocinar por 5 minutos con tapa A mi me gusta con textura más cremosa, entonces saco la olla del fuego y con la minipimer muelo la mitad de la mezcla y revuelvo. Fritos o mini tortillas de Coliflor 🍴 Ingredientes: 1/4 de Coliflor (grande) o media si es pequeña 1 Diente de ajo 1 Taza de harina de garbanzos 1 Vaso de agua Un puñado de hojitas verdes frescas como cilantro, perejil, albahaca, etc. Sal, ajo en polvo, cebolla en polvo, pimentón paprika, etc. Aceite vegetal *Opción 1: Maicena, Panko o pan rallado Mezclar en un bowl la harina, el diente de ajo, cilantro picado chiquitito (o lo que tengan), condimentos y sal, comenzar a poner el agua de a poco revolviendo siempre, hasta que se forme una mezcla cremosa Para freirlos son 2 opciones: 1️⃣Tener las florcitas de coliflor cocidas y separadas, pasarlas por maicena, luego por la mezcla cremosa de harina de garbanzos y luego por panko o pan rallado y llevar al aceite muy caliente a freír, esta opción es un poco más 🐽 porque hay que sumergir la coliflor en el aceite para que dore bien, pero quedan 😋 2️⃣Esta fue mi opción, rallar la coliflor cruda, incorporar a la mezcla de harina de garbanzos y revolver. Soñaba con hacer este Zapallito #butternutsquash 🎃 pensé que era muy difícil conseguirlo pero lo están vendiendo en todas partes 😬 Receta: 1 zapallo butternut 1 bandeja de champiñones 1/2 cebolla morada o blanca 2 dientes de ajo Parte blanca de un cebollín 2 cdas. de pasta de tomate o salsa 1 chorrito de leche vegetal sin azúcar 1 taza de quinoa cocida (yo usé tricolor) Aceite, sal, laurel, pimentón paprika Primero partir el zapallo 🎃 por la mitad a lo largo, retirar las pepas y hacer unos cortes con un cuchillo con forma de rejilla en la parte más gruesa para que se haga más rápido, pincelear con aceite de oliva y un poquito de sal y llevar al horno por 45 min. a 180° (esta listo cuando se pueda enterrar un cuchillo facilmente) Sacar del horno y ahuecar con una cuchara separando el puré Para el relleno: Poner un sartén con un poquito de aceite, cuando esté caliente poner la cebolla 🧅 el ajo 🧄 y el cebollín hasta que la cebolla esté "sudada", agregar 2 hojas de laurel, los champiñones cortados en cuadros y dejar cocinar por unos minutos hasta que los champiñones se ablanden un poco, agregar la pasta de tomate 🍅 el chorrito de leche vegetal 🥛 la quinoa y el puré que sacamos al raspar el zapallo, dejar cocinar por 5 minutos tapado Rellenar el zapallo con el pino y listo! Tortilla de Zanahorias sin huevos 🥕🚫👉🥚 •1 taza de zanahoria rallada. •Sofrito de 1/2 cebolla, 1 diente de ajo y 1/2 pimentón. •4 cdas. de harina de garbanzos •1,5 a 2 tazas de agua. •Sal, pimienta, paprika, etc. •Aceite de oliva o la que usen. Primero hacer el sofrito con un poco de aceite (yo uso de oliva o de canola) Luego en un bowl mezclar la zanahoria rallada cruda, el sofrito, la harina de garbanzos y aliños 🥕🧅🧄🧂 ir poniendo el agua de a poco y mezclando hasta que quede un poco cremoso, dejar reposar 10-15 min. Mi versión deliciosa de Mac & Cheese Obvio #vegan Para 2 porciones: 1 papa grande 1 zanahoria grande 1 diente de ajo 2 cucharadas de levadura nutricional (en copos) Sal Pimienta Pelar la papa 🥔 y la zanahoria 🥕 poner a cocer hasta que estén blandas, luego poner en la licuadora (peladas) con el ajo, levadura nutricional, sal, pimienta, mezclar con la pasta de preferencia y listo! Encima puse para adornar garbanzos crocantes y cebollín picado.
