My love goes to all of you ✨ * * Chocolate Peanut Butter Cookie Dough: 3 tbs @funksjonellmat peanut flour mixed with 3-5 tbs water, you want it to be quite runny 1 tbs @cocosa_norge refined coconut oil 1 tsp vanilla 1 additional tbs peanut flour 1 tbs @urtekram coconut flour 1/2-1 tsp liquid sweetener, I used @cocosa_norge coconut syrup 1 1/2 tbs cocoa powder 1 tbs @helios.no Coconut Sugar Pinch of salt Choc chips, I used a chopped piece of @kingmontychocolates Rice Puff Chocolate ~Mix the liquid peanut flour with the coconut oil and vanilla until smooth ~Add the rest of the ingredients and stir to combine, add water if it gets to thick ~Add the chocolate chips and serve up! CREAMY NON DAIRY PASTA! - This dish is vegetarian and vegan friendly and it was super yummy! Something to make for the whole family. - Ingredients: 1 onion 3 garlic-minced 2 tbsp tomato paste 1 pint grape tomatoes-halved Salt & pepper to taste 2 1/2 cups vegetable broth 2 1/2 cups non dairy milk 16 oz pasta Few handfuls of spinach 1/2 cup nutritional yeast - In a large pot(sorry mine was ugly, its all I had lol) add avacado oil and onion. Cook 3-5 min. Add garlic & tomato paste. Cook 3 min. Add grape tomatoes. Cook 3-5 min. Season with salt&pepper. Add vegetable broth, non dairy milk & pasta. Bring to boil. Cover and simmer about 10 min, or until pasta is soft and most liquid absorbed. Add spinach(i should have added more) stir until wilted. Add nutritional yeast & stir until combined. Serve immediately. ✩ chai mini muffins ✩⁣ ⁣ 1/3 cup almond meal ⁣ 2/3 cup buckwheat flour ⁣ 1 tsp baking powder⁣ 1/4 tsp cinnamon ⁣ 1 tbsp coconut sugar ⁣ 2/3 cup @minorfigures chai latte milk ⁣(found in this months @goodnessmebox ) 1 tbsp flax meal ⁣ 1 tsp vanilla essence ⁣ ⁣ 1. Preheat the oven to 180C⁣ 2. Start by making the flax egg. Add the flax meal and 3 tbsp water into a small bowl and set aside ⁣ 3. In a larger bowl add all the dry ingredients and stir ⁣ 4. Then add the remaining wet ingredients into the bowl, including the flax egg ⁣ 5. Stir until well combined ⁣ 6. Evenly distribute the mixture into 12 mini muffin moulds⁣ 7. Cook for 10-15 minutes or until a toothpick comes out clean ⁣ 8. After cooling, I added a small drizzle of icing sugar mixed with water to give the muffin a little bit of extra sweetness ⁣

By @thewhitechestnut Follow us @veganbowlsrecipes for Daily vegan recipes INGREDIENTS Ingredients for the panko coated aubergine katsu: 2 aubergine medium size 2 cups of water 1/2 cup chickpea flour a tsp black salt 1/3 cup nutritional yeast a cup panko breadcrumbs 3 tbsp olive oil a pinch of Himalayan salt Ingredients for the katsu curry sauce: a tbsp olive oil a chopped red onion a cup of canned coconut milk a tbsp maple syrup a tbsp tomato puree a tbsp curry powder Rest of the ingredients needed: 200g cooked sushi rice a salad of your choice a tbsp white sesame seeds Preparation time: 30 minutes METHOD Let´s make the best ever vegan aubergine katsu curry recipe! We are going to start by preheating the oven at 200ºC – 392ºF, whilst the oven is heating we will prepare the aubergine katsu. We are going to make a vegan egg, in a medium-size bowl mix 2 cups of water, 1/2 cup chickpea flour, a teaspoon of black salt and 1/3 cup nutritional yeast, whisk until you get a smooth consistency, it should take 1 minute approximately. In a medium-size plate put a cup of panko breadcrumbs, prepare also a baking tray or a baking mat. Chop the aubergine in thin slices, but not too thin! dip the aubergine slices first into the vegan egg, then cover them with the panko breadcrumbs, make sure that they are well covered, this is key for a really delicious aubergine katsu! Once the aubergine is well covered, leave them onto the baking tray or baking mat, repeat the process until you´ve done it will all the aubergine slices. If you run out of the vegan egg, just use the same proportion: 1 cup water:1/4 cup chickpea flour:1/2 tsp black salt:1/6 cup nutritional yeast. Once you have all your katsu pieces ready to go into the oven, sprinkle 3 tablespoons of olive oil and a pinch of Himalayan salt or any salt of your choice, then cook in the oven for around 20 minutes at 200ºC – 392ºF. Time to make curry sauce! In a medium-size pan at medium heat add a tablespoon of olive, once warm add the chopped red onion, cook it at medium heat until the red onion is soft, it will take 7 minute

Wild rice mushroom soup by @itsallgoodvegan Loaded with wild rice, hearty mushrooms, and tender veggies . Follow us @veganlunchrecipes for Daily vegan recipes . Ingredients 1 cup of wild rice, I used a gluten-free wild rice blend. 1 container of mushrooms (8 ounces), chopped 1 medium white onion, chopped 3 medium carrots, chopped 3 stalks of celery, chopped 4 cups of veggie broth ½ cup all- purpose flour, substitute for gluten-free flour. ½ cup dairy-free butter 3 cups of dairy-free milk, I used oat milk 1 tsp salt 1/2 tsp pepper 1/2 tsp dried basil 1/2 tsp dried oregano 1/2 tsp dried thyme ½ tsp garlic powder . Directions Cook the wild rice according to the back of the package. Drain and set aside.Heat a large pot on medium heat. Once warm, add the butter, onion, carrots, and celery. Cook for 5 minutes or until the onions are translucent. Add the flour to the pot and mix covering the vegetables with flour. Slowly add the veggie broth, salt, pepper, basil, oregano, thyme, garlic powder and stir. Bring soup to a boil then simmer for 5 minutes on low heat stirring occasionally. Combine the rice, mushrooms, and milk to the pot. Cook for an additional 10 minutes on low heat or until the mushrooms are fully cooked.Divide soup into bowls and serve.

Lemon Pumpkin Mac and Cheese with Roasted Pumpkin by @plantbased.traveler Follow us @healthy.organic.food for daily vegan recipes Recipe 1 small Hokkaido pumpkin (organic if possible) 1/2 cup cashews 1/2 tbsp olive oil 1 small red onion 3 garlic cloves 2 tbsp tapioca starch 2 cups water 3 tbsp nutritional yeast 1 tsp turmeric 1/2 tbsp coconut aminos 1 lemon Salt to taste Optional 1 tsp of vegetable broth paste/powder For the roasted pumpkin 1/2 tbsp olive oil 1/2 tsp paprika 1/2 tsp turmeric Dash of cayenne pepper Salt to taste Additionally 2 servings pasta of choice (I used lemon rigatoni) Optional to serve with Fresh arugula Pumpkin seeds Wash pumpkin (peel if not organic), cut into 4 large pieces and clean out seeds and strings. Cut everything into bite size chunks. Dice onion and garlic, heat up 1/2 tbsp of olive and fry onions until fragrant, then add garlic, cashews and 2 cups of the cubed pumpkin. Continue cooking for a few more minutes. Add 2 cups of water, bring to a boil and let simmer for 20 minutes. Turn off the heat and add tapioca starch, nutritional yeast, turmeric and coconut aminos. Transfer to a blender, food processor or use a handheld blender and blend until sauce is smooth and creamy. Add about 1 tbsp of the lemon juice and season to taste with salt. For the roasted pumpkin, add remaining cubes to a bowl and toss with oil and spices. Place on a line baking sheet and bake for ~ 25 minutes at 375 F/190 C. Depending on how large you cut the pieces you may need to adjust baking time and add another 5 min or more. Squeeze some lemon juice over roasted pumpkin when done. This falafel bowl was definitely one of the best things I’ve ever made... the base was Spring Mix greens and alfalfa sprouts which I topped with roasted red peppers, sweet onions, tomato, cucumber, olives, bbq grilled chickpeas, herbed purple and russet potatoes, shredded beets, roasted cauliflower, and of course homemade falafel! Then to top it all off, I made my favorite tahini dressing ( tahini, lemon juice, salt, garlic, and some warm water to thin it out) so amazingly delicious and colorful

Took a @traderjoes run yesterday! I got Brownie crisp, carrot chips🥕, broccoli chips🥦, cauliflower gnocchi, some vegan ground meat, taco seasoning🌮, and Kale, cashew, and basil pesto! I also picked up some Scandinavian swimmer vegan gummies not pictured, I wanted to get the Cashew Fiesta dip but very sadly they were out of stock
