Recipe: Crispy Sweet Corn . Ingredients: . Sweet corn kernels Cornflour Salt Red chili powder Green chili Coriander Chaat masala (optional) Lemon . Method: . 1. Boil sweet corn kernels for 5 minutes in boiling water. Drain the water and empty them in a vessel. . 2. Add cornflour, salt and red chili powder as per taste. Mix well until coated properly. . 3. Heat oil in a pan. Fry them for 5 minutes in medium to low flame until they turn crispy. . 4. Remove and keep them on a tissue to soak extra oil. . 5. Put them in a bowl and garnish with chopped green chili and coriander. Can also add chaat masala if required. Squeeze some lemon, mix well and they're ready! . I tried making some 'egg' mayo today and it was cracking (zing). I just diced up some firm tofu then mashed it w mayo, a tiny bit of mustard, pepper and the 👑king👑 black salt. I've only recently got into black salt but I'm already addicted, he is truly the key to amazing vegan egg recipes 🙌🙌

Lunch was last nights left overs- mexican fried rice 🇲🇽 i roasted a sweet potato and a red and green pepper in the oven seasoned with paprika, cayenne pepper, chilli powder, olive oil, salt and pepper. When that was roasted I fried one red onion, sweetcorn, 1 glove of garlic and black beans in a pan. Then i added my roasted veggies and finally my cooked rice and MIXED MIXED MIXED. I added some more of the above seasonings to taste and BBQ liquid smoke (bbq sauce would do). 🍅 Vegan Lasagna Roll Ups🍅 Godlike🤤😍😍 ⠀ Follow: @vegalien❤️ Follow: @vegalien❤️ ⠀ 📷Credits: @elavegan ⠀ 📝Recipe: 1/2 tbsp oil 1 onion diced 3 garlic cloves minced One small can mushrooms sliced 1/2 tbsp soy sauce (gluten-free if needed) 100 g (3.5 oz) fresh spinach 360 g (1 1/2 cups) marinara sauce 6-8 lasagna noodles (regular or gluten-free) 400 g (1 2/3 cups) hummus 1/2 tsp cumin (optional) 1/2 tsp paprika (optional) A few tbsp lemon juice (optional) Salt and black pepper to taste 200 g (7 oz) vegan cheese ⠀ 📍INSTRUCTION: Cook the lasagna noodles in a large pot (filled with boiling water and salt) according to package directions or until al dente. Ladle about 1/2 cup marinara sauce (or your favorite tomato sauce) in the bottom of a 9×6 (23x15 cm) baking dish (you can use a larger pan). Set aside. While the lasagna noodles cook, heat oil in a pan over medium heat and add the diced onion, garlic, and mushrooms. Saute for about 4 minutes. Then add soy sauce and spinach. Cook for a further 30-60 seconds, then turn off the heat. Add the hummus and stir with a spoon. Depending on the brand of your store-bought hummus, you might need to add more flavor. I added cumin, paprika, salt, black pepper, and lemon juice to taste. Carefully drain the lasagna noodles and preheat your oven to 360 degrees Fahrenheit (180 degrees Celsius). Lay cooked noodles on a clean surface and place about 1/4 cup of the hummus-mixture on each noodle and spread it evenly. Roll up each lasagna noodle and place it seam-side down in the baking dish. Ladle the remaining 1 cup marinara sauce over the lasagna noodles. Add vegan cheese on top. Vegan Stuffed Sweet Potatoes with Mediterranean Quinoa . By @veggie.ly . Ingredients for Vegan Stuffed Sweet Potatoes The first vegan stuffed sweet potatoes I made were way back in 2012. I had never had one before – unless you count potato skins – and as soon as I made it, I knew it was going to be a staple for me. I've since made them numerous times – and even made a breakfast version – and I still can't get enough. Since we've gone down the Mexican flavor route before, today we're taking things in a different direction. A Mediterranean direction. And I think you're going to love it! These vegan stuffed sweet potatoes are just a few main ingredients: - sweet potatoes - quinoa - chickpeas - spinach - olives - sun-dried tomatoes From there we're going to add a little more magic with spices and a tahini dressing, but otherwise, they're pretty darn simple! . . How to Make Stuffed Sweet Potatoes The base of stuffed sweet potatoes is the sweet potato of course! And we make that by baking them. When you're making stuffed sweet potatoes, I think there are a few tricks to follow: 1.Go small(ish). Pick a sweet potato that is on the smaller side. Since this is going to be one serving, you want one that isn't too big so that you can actually eat it. I say a small(ish) one is best. 2.Use your fork. Before you bake your sweet potato, prick it all over with a fork. This is going to help with the cooking process and speed it up a bit! 3.Leave them be. Once they're in the oven, just leave them be. There's no need to turn, flip, rotate, etc. They'll cook perfectly as is! 4.Use foil. Sometimes sweet potatoes can ooze a bit as they're baking so I recommend laying down a piece of parchment or aluminum foil on the baking pan so it makes the clean up a bit easier! Recipe below: Recipe (makes about 30 dumplings)⁣ 🌱Ingredients:⁣ ~ wonton wrappers, thawed to room temperate⁣ ~ 1/2 lb bok choy + 1/2 lb Napa cabbage, cleaned & separated by leaves⁣ ~ 1 King oyster mushrooms, finely chopped⁣ ~ 1 small carrot, finely chopped⁣ ~ 1 teaspoon grated ginger⁣ ~ 2 cups veggie stock⁣ ~ oil, toasted sesame oil, salt, white pepper⁣ ⁣ ✅Bring a pot of water to boil, add a drizzle of oil & pinch of salt. Blanch bok choy & cabbage for 5 minutes & transfer them to an ice bath, then drain well. When it's cooled to handle, squeeze out all liquid & finely chop the veggies (be sure they are not too wet so it won't break the wrapper when assembling).⁣ ✅Meanwhile, sauté chopped mushrooms with a little oil until fully cooked & fragrant (if other mushrooms are used, please be sure to drain out the liquid).⁣ ✅Place chopped veggies, mushrooms, carrots & grated ginger in a bowl. Season with salt, toasted sesame oil & white pepper.⁣ ✅To make the dumplings, place 1 teaspoon of filling in the middle of the wrapper & press to seal (please check IGTV for wonton folding🙏🏻). Bring a pot of water to boil & using a slotted spoon, slowly drop the dumplings in. Cook dumplings over med-high heat until they float up & let them stay afloat for another 1 min. Black fungus! I am always looking for ways to use it and it's so great to have dried as a staple to add impromptu to a dish that just needs a bit of mystery! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⧍⠀⠀⠀⠀⠀⠀⠀⠀⠀ Here fried with tamari and sesame and tossed with a mix of seaweeds, topping a smoked sesame carrot pureé. Quick pickle daikon ribbon salad and quick fried bamboo and roasted carrots, an orange sesame tahini sauce brought it all together.. Fresh bread with homemade ‘egg’ salad, yummy! This is what you need: 🌱Fresh bread 🌱200 grams of tofu 🌱Kala namak salt 🌱Kurkuma 🌱Curry powder 🌱Fresh pepper 🌱 Vegan mayonaise 🌱 Spring onions 🌱 Watercress This is how you make it: Make sure to squeeze the moist out of the tofu and crumble it with your hands into a bowl. Add a teaspoon of kala manak (I used a bit less tofu and 1 teaspoon and it was too salty), a teaspoon of curry powder and some kurkuma for a nice colour. Mix with 3-4 table spoons of mayonaise (add more or less to your liking), sliced up spring onions and fresh pepper. Put it on a slice of fresh bread and top it off with some watercress. I was vegetarian at the time, so I thought I'd have a go at veganising it, and this is what I came up with I don't have a panini press, but using a frying pan works just as well in my opinion Great for an easy, cheesy lunch. #vegan 🌱 I’ve been cheating on banana blossom with jackfruit. But that’s ok as I have a prenup signed. Also, no one needs to know about it. It’s not like I’m advertising this to the World Wide Web… oh wait. Just enjoy the food. INGREDIENTS For gyros: 1 tbsp oil 1 small shallot or onion ½ can of Jackfruit, drained and rinsed 125ml water 1 stock cube 1 tbsp lemon juice Dried oregano Salt and pepper For flatbread: (Recipe from bbcfood): 125g flour, plus extra for rolling ¼ tsp fine sea salt 2 tbsp sunflower or vegetable oil For gyros Fry the diced shallot until it starts to brown.  Add the jackfruit, lemon juice herbs and spices, together with the water and stock cube. Simmer until the water has almost completely evaporated, and finally add salt and pepper to taste For flatbread Mix the dry ingredients first. When mixed, add water and mix some more. When the dough forms, start kneading. After a few minutes, divide into four parts and roll out each one very thinly. Fry in a hot pan without any oil. When they start to develop brown bubbles, flip and cook on the other side. Serve the gyros with some tomatoes and onions. Add the flatbread to the mixture. So, yeah. Enjoy!

Margherita Toast 🥪 3-ingredient recipe with tomatoes, vegan cheese and basil. So easy and so good! Get the English recipe below: * 4 slices of bread * 2 big tomatoes * 2 handful of vegan cheese * Basil leaves * Plant butter, salt and pepper. _ Cut out the bread into 4 slices. I though I would take advantage of the warmth today and eat lunch outside on the grass after a long walk with a friend ( it wouldn’t of been a walk with us if we didn’t get lost on a straight path, make too many bad tik toks and turn 30 min into 2.5 hours) . . So today was leftovers from last nights bbq dinner. Grilled onions, @lindamccartneyfoods red onion and rosemary sausages, green salad with spinach and tomatoes and @saladservers lentil salad and pumpkin couscous with fresh mint. Both the salads and sausages were divine so I highly recommend.

Dinner last night : Peanut Butter Katsu Curry with Battered tofu and vegetables - katsu curry is a Japanese dish - l’ve varied the recipe slightly to include peanut butter in the curry sauce and then served it with gram flour battered tofu, cauliflower and courgette together with turmeric brown rice with peas and spinach. So this is vegan, gluten and dairy free. If you have a Nut allergy you can take out the peanut butter and it’s just as tasty. Last night I made a tofu curry from a recipe on a newsletter email from @holycowvegan. I added roasted red peppers and sweet potato to it, but otherwise followed the recipe to the letter, as I usually do the first time I cook to a recipe (which isn’t often). I’d make this again but I’d add cumin, turmeric and some coconut milk. I’ll pop the link to the recipe in the comments.

Spicy Thai basil tofu (Pad Krapow tofu)💛 ⠀ ⠀ 📷Credits: @woon.heng ⠀ 📝Recipe: 👉1 package of firm tofu, drained and mashed 👉1/2 cup packed Thai basil leaves 👉7-8 Thai chilies, chopped 👉5 cloves garlic, minced 👉3-4 shallots, minced 👉3 tablespoons coconut amino 👉1 tablespoon soy sauce 👉3 tablespoons vegan 'fish' sauce* 👉3 teaspoons coconut sugar 👉1 teaspoon salt 👉1 tablespoon avocado oil ⠀ 📍INSTRUCTION: 1️⃣Whisk coconut amino, soy sauce, 'fish' sauce, sugar and salt in a bowl until well combined, set aside. 2️⃣In a nonstick pan with low-medium heat (no oil), pan-fry mashed tofu until golden brown to get the chewy texture. 3️⃣Using the same pan, push tofu aside, add 3 teaspoons oil and sauté garlic and shallots until soft. Add half the sauce, mix with tofu and let simmer for 2 minutes. Then, add chilies and remaining sauce and let the sauce thicken (when sugar caramelized). Spicy tuna pittas. One of the things I ‘miss’ most from my pre-gan days is probably tuna. Tuna salad, tuna pasta, tuna sandwiches, tuna sushi ... I used to love the stuff. When I heard about the Good Catch range of ‘tuna,’ I jumped (I say jumped, more like ran to buy it, saw the price, balked, waited for it to come on offer ... and THEN jumped) at the chance to try it. I’ve only tried the plain one so far, and while it’s not quite a ringer for the tuna I remember, it is a pretty delicious sandwich filler, especially when blinged up with some mayo, pepper, red onion, pickled jalapeños, tomatoes, and sriracha. Stuffed Sweet Potato with Balsamic-Date Glaze. Super easy and quick meal! Perfect if you are just making something for yourself, but can also make for the whole family. 1. Put 2 dates in warm water to soak for 10 minutes 2. Use a fork to poke a sweet potato several times then put it in the microwave for 5 minutes 3. Heat 1/4 cup of peas on th stove for a few minutes and chop half a green onion into slices 4. Blend the dates with the water and 1/4 cup balsamic vinegar in blender 5. Heat the balsamic date mixture on the stove to a boil then reduce heat and simmer for about 10 minutes or until thickened. 6. Scoop some of the inside of the sweet potato and mix with the peas and green onion then replace it into the skin and top with balsamic-date glaze, 2 tablespoons almond slices, and salt and pepper to taste. Enjoy! This is the recipe for 1 stuffed sweet potato if you just need something quick for yourself. Made this sticky sesame tofu last night, using @veganricha recipe. I apologise for not having a better photo of it! I don’t want to be dramatic but it was amazing and I can’t stop thinking about it 🖤🖤🖤⁣ ⁣ To make; cut tofu into cubes and coat with corn flour and garlic pepper. Bake at 200 for 20-30 mins until crispy. 🙌🏼⁣ ⁣ For the sauce: add to a pan 1 tbsp sesame oil and sauté garlic & ginger, then add 3 tbsp sugar or syrup (maple works best), 4 tbsp soy sauce, 1 tbsp apple cider vinegar, 1-2 tbsp tomato puree (or ketchup), 2 tsp cornstarch mixed with 60ml water. Bring to boil and simmer until thickened. This is the best sauce ever 🌱

Just in case it wasn’t obvious already, I’m near enough living of pasta in lockdown 😅 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What have been your go to meals in this lockdown period? 👇🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I think I’ve been obsessed with any pasta/ spaghetti dish because it’s such an easy dish to make and I can change it up each time with the sauce ( green pesto, red pesto, bolognese sauce ) , veg ( literally any ) and protein sources ( “sausages”, “meatballs”, tofu, chickpeas ), this was my first time adding tofu and I loved it! Will definitely be doing it a lot more 🙏🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Usually I cover it in nooch too but I ran out the other day and I forgot to get some more whilst on my weekly shop 😭

(I still had some quinoa left, whew!) In it we have: . Roasted beets ❤️ Quinoa 🍚 Mint 🌿 Parsley 🌿 Tomatoes 🍅 Avocado 🥑 Fresh lemon juice 🍋 . To make perfect quinoa in your Instant Pot 👉 . 1 cup quinoa to 1 cup veggie broth or water Cook on high for 1 minute / Release after 12 minutes . I added a few shakes of garlic powder, onion powder + salt to the cooked quinoa, then huge handfuls of the fresh herbs + lots of chopped veggies. Looking for a healthy and filling lunch for the spring and summer? Today’s lunch was just that, and what made it even better is that no recipe was needed! I just cooked up some farro and added edamame, corn, and small red beans. Then I sautéed some onions, garlic, and red pepper in vegetable broth (to keep it oil free), before adding some baby spinach and Swiss chard from the garden. After adding the sautéed veggies to the farro, I served the farro salad over a mix of green and red leaf lettuce, and baby spinach. I did follow a recipe for the dressing, but this would work with any dressing that you like. I used @engine2diet ‘s Dragon Dressing which is a peanut butter, soy sauce and sriracha based dressing.

Simple and easy! You know those lazy days? That’s me. I wasn’t in the mood to make this plate, it may not look pretty but I promise it tasted amazing! Having this dish for lunch for a couple days and it tasted great everyday. I simply baked the whole squash only with some water. No oil, no salt.. nothing, but I love the sweet and delicate flavor from the squash. Then I added steamed kale, bamboo rice (my favorite 🎋🍚💚) and coconut curry sauce with some tofu and veggies). For the coconut curry I used my recipe from another post on my page! . 🍅Lunch/Dinner Idea: Autumn Tomato and Pepper Soup ❤️ ⠀ Follow: @vegalien❤️ Follow: @vegalien❤️ ⠀ 📷Credits: @thewhitechestnut ⠀ 📝Recipe: Ingredients 6 medium size tomatoes 2 medium size red peppers 1 medium size yellow pepper 3 tbsp olive oil 1/2 tsp ground pepper 1/2 tsp Himalayan salt ⠀ vegan creamy cheese: 1 cup almond milk 1/2 cup cashews 1/3 cup nutritional yeast juice of 1/2 lemon 1/2 tsp Himalayan salt ⠀ toppings: 1 cup white big beans 1/2 cup green olives 1/2 cup black olives some oregano leafs ⠀ preparation time: 20 minutes total time: 30 minutes serving size: 4 serves ⠀ 📍INSTRUCTION: To prepare this yummy tomato and pepper soup, we are going to start by roasting the tomatoes. In a oven tray, place the tomatoes and the peppers, add the pepper and salt, to finish add the olive oil and roast them in the oven for around 20 minutes at 250ºC, roast them until soft. Once roasted, in a blender, blend the tomatoes, and the two red peppers, keep in a side the yellow one. Blend it until you get a soft consistency. With the yellow pepper, cut into strips, we´ll use it as toppings. To prepare the vegan creamy cheese, simply blend all the ingredients listed above, you should get a creamy consistency. Now it is time to serve this delicious tomato and pepper soup!
