Cauliflower patties for today, a healthy easy lunch idea, in case your looking for some inspiration! 1/2 cauliflower 3 tbsps buckwheat flour 3 tbsps flaxseed powder 1/3 cup water Olive oil 2 cloves garlic 1/2 parsnip Salt and pepper Boil the cauliflower for a few minutes. Soak the flaxseed in water until it becomes a jelly. Grate the parsnip, chop the garlic and then mix all ingredients together. I put them a bit in the blender. Bake for 15-30 minutes in the oven and then season with aromatic herbs. Serve with a dip sauce or sprinkle some lemon! Mücver & rafine şekersiz limonata Mücver için: 150 gram kırmızı mercimek 4 tane büyük havuç 1 büyük soğan 1 büyük diş sarımsak 3 tane keten tohumu yumurtası (3 yemek kaşığı öğütülmüş keten tohumu + 9 yemek kaşığı su bir kenarda bekletilerek elde edilir) 50 gram nohut unu Baharat, tuz (ben damak tadıma göre ayarladım: 1 ç.k köri, 1 ç.k. kimyon, 1 ç.k. zerdeçal, 1 ç.k. pul biber ve daha fazlası) Mercimekleri haşladım ve süzüp bir kenara aldım. O arada havuçları rendeledim, soğanı, sarımsağı ince ince doğradım. Sonra bütün bu malzemeleri karıştırdım. (Search as "Sambar Kalyani Kitchen" for sambar recipes.) 🍇 Gobi 65 (scroll down for recipe 🥦) 🍇 Walnut Katli (90% walnut and 10% Cashew/Kaaju katli, recipe not available as of now 😋 that means i will make it a few more times before posting) 🍇 Beeda (Paan! not in pic, but safely tucked in B's lunch box) . I love love love grapes squashhhh, only some more left out for a last glass of yumminess. Planning to make mango squash. Will post how it turns out soon. . For gobi 65 i didn't use much ingredients today. B had some chilli chicken powder {it doesn't contain any sort of chicken ingredients - breathe in breathe out} and i used that. Its made up of chillies, ginger, garlic, turmeric, garam masala, salt and some cornflour. . 🔻Blanch the cauliflower florets (i.e soak them in hot hot water with salt for 5 mins) 🔻Marinate the blanched florets in some chilli chicken powder, littleeee salt and some oil for 15 to 30 minutes. 🔻 Dust them with equal parts of Kadalai maavu and arisi maavu (Gram flour/besan and Rice flour) do not add water. Since we last visited Portland, we’ve been awaiting the chance to check out @shadypinesveganfoodcourt and @dirty__lettuce and @sushilovepdx. 💚 By the time we made it there, being hangry with impatient dogs and kids, we ended up focusing our attention on Dirty Lettuce. Grabbed a couple sampler plates to go, that included: fried chikn, bbq ribs, fried ‘catfish’, shrimp and grit fritters, creole potato salad, and Deep South baked beans. We grabbed it to go and headed across Killingsworth to the giant off leash dog park, where we devoured the delectable goods then let the pups run free. Errrrything was on point, with the sauces being critical and epic. vegan sun dried tomato fritters for lunch with an alioli dip🤤 I added diced sun dried tomatoes and chopped basil to vegan batter (flour, cold water, salt and pepper) then left the mixture in the fridge for half an hour. Carrot Fritters 🥕. Fritters have become a bit of a fave way to jazz up and hero one ingredient, making it feel more like a meal. These carrot fritters were a Ready Steady Cook creation, but they were so good, I’ve done another test run and perfected the recipe for you all. I think this recipe is here to stay in our house, lockdown or not. Ingredients for 2 people: 300g carrots, peel them, take the tops off then grate 1 onion, finely diced 1 green chilli finely sliced 15g bunch flat leaf parsley or coriander 150g gram flour 120ml water 1 tsp fennel seeds 1 tsp coriander seeds 1 tsp ground cumin 1 tsp nigella seeds Vegetable oil for frying How to: 1. Toast the coriander and fennel seeds lightly in a dry frying pan, then smash them up in a pestle & mortar. If you don’t have one, put them in a blender & quickly whizz, or put them in a sealed food bag and roll over them with a rolling pin or wine bottle to crush up. 2. Mix everything except the water together with a big pinch of salt & pepper. Stir everything to combine, then add the water, stirring again to make a thick batter. 3. Heat some oil in a large frying pan, once hot, spoon about 1 tbsp of mix into the pan, spread it out with the back of the spoon so its <1cm thick. This means you get a good ratio of crispy crust to softer inside & they cook through properly without burning. 4. Leave the fritters for a good 2-3 minutes to make sure they get a nice even, brown crust on each side, before flipping. Press down with a spatula to ensure the second side also gets good pan contact. 5. Keep cooked fritters warm in a low oven (120°C) on a tray while you do the rest of the batch. Add more oil to the frying pan as you go through the batch so things don’t dry up. I served mine with some minty yogurt (just unsweetened soya yogurt mixed with fresh mint) - but there’s so many sauces that would work, so pick whatever takes your fancy! Hot sauce? Mango chutney? Vegan fritters are a perfect way to use the leftovers . Spinach: 1½ cup cooked navy beans 200g frozen spinach 🥬🥬🥬 ½ cup oats 4 tbsp olive oil (or a cooked small potato)🥔 Dry garlic powder to taste Yondu (or liquid aminos) to taste . Blend spinach to a smooth mash or wait until it thwats (I was in a hurry and used ice crushing mode on my blender). Add the rest of the ingredients and blend until it combines. Leave aside for 10 minutes. You should be able to form balls of dough with your hands easily. (If the dough is too liquid mix in some more oats and wait a few more minutes. If it’s falling apart add some water/vegan broth.) Preheat the oven to 175C/350F. Form falafel size balls and flatten them carefully on a lined/oiled baking tray. Bake for 10-15 min or until slightly golden. . . Carrot: 3 cups cooked brown rice 3 cups grated carrots🥕🥕🥕 2 tbsp olive oil (or ½ cup vegan broth) Dry onion powder to taste Salt to taste Mild curry powder to taste (optional) Turmeric for color (optional) . Heat the oil in a pan. Add carrots and spices. Mix, cover and braise for 5-8 minutes. Add rice to the carrots in the pan and mix. Wait for 10 minutes to let the mixture cool off and the flavors combine.  Preheat the oven to 175C/350F. Form the fritters by placing portions of dough and shaping them with your hands/spoon on a lined/oiled baking tray. Sophisticated dinner made out of simple ingredients: sweet potoato & regular potato fritters with lentils & peas & corn tomato salsa with lemony guacamole 🥔🍠🥑 _______________ ✔️1 large sweet potatoes ✔️2 large regular potatoes ✔️1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water) ✔️3 tablespoons flour ✔️1/2 onion ✔️1 clove garlic ✔️4 tablespoons canned lentils ✔️3 tablespoons canned peas ✔️2 tablespoons canned corn ✔️tomato passata ✔️1 ripe avocado ✔️1 tablespoon lemon juice ✔️salt, pepper, chili powder ✔️sunflower oil to fry Make your flax egg and place in the fridge. Wash, peel, and grate the potatoes using the coarse section of a grater. Finely chop the onion. Press the garlic through the garlic presser. Mix potatoes, garlic, onion, flour, garlic, flax egg, salt and pepper in a big bowl. Form fritters and fry using a fair amount of the oil. In the meantime, mix lentils, peas and corn in a small pot, add tomato passata/ sauce and chili. Delicious courgette & lemon fritters 💚 ✅30 mins to make ✅perfect for light dinner ✅vegan ✅super tasty, baby friendly I really like to make these courgette fritters. Kids love them, we all love them. Lemon gives the freshness and sun-dried tomatoes richness. And they are quick to make - always a win here! What I used: -1 courgette - 4 sundried tomatoes - 1/4 glass of chickpea flour - juice of 1/2 lemon - 10 black olives sliced - zest of 1/2 lemon - salt and pepper - oil to fry - 2 tbsp of chopped parsley Grated the courgette, add finely chopped sundried tomatoes and all the other ingredients. Mix well and fry on a pan for couple of minuets on each side. I served them with couscous and carrot salad. Baked courgette fritters (served with baked baby peppers and romaine lettuce hearts) . Another fritter/frittata/chickpea pancake experiment. I'm getting better every time 💪🌱. . Ingredients: 5 young courgettes Salt 1/2 cup chickpea flour 2 tbsp ground flax/chia seeds 1 tbsp dry onion powder 1 tsp baking powder 2 tbsp olive oil (optional) . Wash the courgettes (zucchinis) thoroughly. Slice them thickly, sprinkle generously with coarse salt and leave for at least 15 minutes. Rinse well. Grate, shred, chop or use the food processor to obtain small julienne-like pieces. (I use the ice crushing mode.) Put the courgettes on a clean dishcloth, gather the ends, and squeeze out the juice. Place the squized courgettes in a bowl and add the remaining ingredients. (For an oil free version skip the olive oil.) Mix well. Preheat the oven to 200C/400F. Line your baking tray with a baking paper, and place the fritters on it. (You can use a tablespoon or form small falafel-size balls with your hands and flatten them.) NO FLOUR VEGAN VEGETABLE LENTIL FRITTERS 🤤The perfect combination of healthy and indulgent, these vegetable lentil fritters are guaranteed to be devoured by whoever you give them to! The outsides are deliciously golden brown and crispy, while the insides are loaded with good-for-you vegetables. They make an amazing snack when served hot with vegan mayonnaise😋 . Ingredients: 2 cups dried red lentils 2 cups water 1 tbsp vegetable oil 1 onion chopped 1 medium carrot finely diced 3 cups leek sliced, about 1 leek ½ cup celery chopped 1 cup broccoli chopped 2 small jalapeños diced Salt and pepper to taste 3 tsp garlic minced 1 tsp ground turmeric 2 tsp smoked paprika 1 tsp garlic powder ½ tsp ground coriander ½ tsp ground cumin ¼ tsp chili powder . Instructions: Place the lentils into a fine mesh colander and rinse them in water. Place the drained lentils into a large bowl, cover with water and leave to soak overnight. . The next day, bring the oil to a medium heat in a large pan. Add the onion, carrot, leek and celery. Cook for 5 minutes until the vegetables are soft and beginning to turn golden brown. . Stir in the broccoli and jalapeño and cook for 3-4 minutes. Taste and season with salt and pepper. Remove the pan from the heat and set to one side. . Drain and rinse the soaked lentils. Use an immersion or stand blender to puree the lentils with 2 cups of water. Add in all the spices and lemon juice and blend again. Use a spatula to mix the vegetables with the lentil mixture. . Drizzle some oil into a large pan and bring to a medium heat. Add 2-3 tablespoon of mixture per fritter and cook for 2-3 minutes per side. Repeat until all the fritter batter has been used. . I made courgette and sweetcorn fritters yesterday and I was shocked at how well they came out! They held their shape and they were perfectly fried. They were dangerous to cook though as the corn started popping 😆 We dipped them in Sacla agave and mustard salad dressing and they were delicious. I ate the leftovers cold today and they were just as good. Will definitely be making these again! 😍

potato & zucchini fritters by @thezestylime . makes 8-10 fritters 1 zucchini 2 smallish potatoes (approx. 150-175g total) 1 small onion 1/4 cup diced red bell pepper 1/4 cup shredded kale 1/2 cup gluten-free flour (or regular) 1/2 tsp salt 1/2 tsp garlic powder 1/2 tsp mixed herb blend pepper to taste 1. rinse zucchini and grate into a mixing bowl. peel and grate potatoes and onion into the same bowl, then drain as much excess liquid as possible by pressing mixture into a fine sieve or straining through a cheesecloth or clean tea towel. 2. finely dice red bell pepper, chop or shred kale, and add both to the mixture. 3. I kid you not, this was the best plate of food I've had in a long time! Potatoe fritters with mushroom, garlic, spinach, & red pepper. Seasoned with salt, pepper, chilli spices, cumin, parsley & chives and served with a bed of tomato salad avocado covered in hemp & pumpkin seeds. With a drizzle of olive oil and salt and pepper to taste! Amazing 🌱 This is my own variation of potatoe fritters.. there is so many things you can add! Make sure to squeeze all the juice out of your veg before frying them and add 2 tbsp of cornflour & 2 tbsp of all purpose flour! RECIPE - Potato Fritters- Thinly sliced potato - 2 medium Chickpeas flour / Besan - 2 cup Salt to taste Red chilli powder - 2 tsp Carom seeds - 1 tsp Turmeric - a pinch Baking soda- 1/4 tsp Oil - to fry Water - to make the batter Recipe - 1. Peel and Slice the potatoes 2. Make the batter - Chickpeas flour, salt, red chilli powder, carom seeds, turmeric , baking soda. Mix and add water to make a smooth batter 3. Heat the oil on medium flame 4. Coat the potatoes and fry it till the fritters are fully cooked Spinach Fritters - Spinach - 250gm Chickpeas Flour - 1/2 cup Salt to taste Red chilli powder - 1tsp Mango powder - 1tsp Coriander powder - 2 tsp Coriander whole - 1tsp Turmeric powder - pinch Garam masala - 1 tsp Green chillies - 1 Baking soda - 1/4 tsp Water to make the batter Oil to fry Recipe - 1. Chop the spinach add chickpeas flour to it. 2. Add chickpeas flour with all the ingredients and mix well 3. Add water to make a smooth batter 4. Add spinach to the batter 5. Gemüsepuffer inspired by @alnatura . Immer gut um Gemüsereste zu verarbeiten und schmecken auch ohne viel Öl geil 😎 . Wir brauchen: Gemüse was ihr da habt (Ich hab Kartoffeln, Radieschen + das Grüne davon, Möhren und Frühlingszwiebel genommen) 2 EL Mehl 1-2 EL Joghurt Ordentlich Salz & Pfeffer Knoblauch . Nun dann: 1. Alles waschen und schälen wenn notwendig. Dann grob raspeln. Radieschengrün und Zwiebeln schneiden. 2. In ein Küchentuch geben und gut ausdrücken. 3. Dann in einer Schüssel mit den restlichen Zutaten vermischen. 4. Pfanne erhitzen, leicht einölen und kleine Puffer rein geben. 2-3 min goldbraun braten von jeder Seite. Wenn nötig mit einem Küchentuch abtupfen. Zum warm halten in den Ofen geben bei 80 grad. Und fertig! . Hatte dazu knackigen Rucola, Radieschen und Gurke. Frühlingszwiebeln on Top. So just yesterday we decided that once a week, every week, we're going to make something from another culture! Learning about the foods that are eaten all over the world not only nourishes your brain, but also your tummy! Plus I want to know more about traditional foods from other countries. It won't be just meals, but also desserts, sides, sauces. Something new every time! Last night we made tamales and pozole (I know we just can't get enough), but today I wanted to learn how to make something new and different. 🌎👩‍🍳🌍👨‍🍳🌏 So we made some veggie fritters, some bread, and this beautiful sauce called Toum! 🇱🇧 Toum or toumya is a garlic sauce common in Lebanon! I've had it with many Mediterranean dishes before, but never really knew anything about it! Traditionally you would use a motor and pestle to grind up the garlic, but the food processor was calling me. So we scratched that. 🌱 Green Pea, Spring Onion, and Tarragon Fritters 🍽 @natalie.naturally⁠ ⁠ These fluffy green pea fritters are easy to make and taste gourmet! This recipe is naturally gluten-free thanks to the use of gram flour, and the peas can be swapped out for your vegetables of choice. Serve with a plant-based cucumber yogurt and some fresh radishes to add even more vibrant colors. 🌿⁠ ⁠ * INGREDIENTS *⁠ 1.5 cups Green Peas (blanched)⁠ 1 cup Gram Flour⁠ 1 cup Water⁠ 6 Spring Onions (finely diced)⁠ 1 small bunch of Tarragon Leaves (roughly chopped)⁠ 2 tbsp High-heat Light Oil (Sunflower, Safflower, etc.)⁠ Chives (optional - finely chopped)⁠ Salt and Pepper (to your taste)⁠ ⁠ * DIRECTIONS *⁠ 1. Divide the peas into two bowls. Place 1 bowl of the peas in a food processor and blend into a rough mash (or you can use a fork!).⁠ 2. Chickpeas, Courgette & Carrot Patties (VG & GF) 🌱 . * 1 cup chickpea flour (130g) (If you have a food processor you can use dried chickpeas and ground them into flour) * 1 big courgette * 1 carrot * 1 tsp salt * Chopped fresh coriander or parsley * Salt to taste * Spices of choice (I used ground Cumin, paprika and coriander) *1 or 2 tbsp water if necessary . Optional You can add 1 crushed garlic clove if you like or chopped spring onions . . 1. Grate the (peeled) carrot and courgette finely. You can use a fine cheese grater or you can place the courgette and carrot into a food processor and blitz for a few seconds until they turn into very small pieces (don't blend it too much - we don't want a puree consistency) . 2. Add the chickpea flour, salt, pepper, chopped parsley and spices of choice. If the veggies have been cut finley enough, they will release their juice that will combine with the flour. If this is not the case, add a few tbsp of milk or water until the ingredients are well combined. . 3. Heat up a non stick pan with some vegetables or seed oil. Form small thin disks and cook 5minutes per side until golden. . 4. Serve warm with veggies, a fresh salad or dip of choice like tzatziki, tomato salsa or hummus. . . #vegan Amaranth Fritters This is a super nutritious ancient grain, that cooks into a sticky mushy consistency that actually works great for #eggless fritters!! I seasoned these with Indian flavours but you can definitely season with Italian that’s maybe easier to have in hand =) - 1 cup of Amaranth - 3 garlic cloves, minced - 1 spring onion, finely chopped - 1 big shallot or small onion, finely chopped - 1/2 cup of chopped zucchini - 1/2 cup of chopped bell pepper - 1/2 cup of tomato sauce - 2/3 cup Rice crumbs or breadcrumbs - Spices: 1 Tbsp Garam Masala, 1 tsp salt, Pepper to taste, 1/2 tsp ground coriander, 1/2 tsp lemon zest 1. For the amaranth: I boiled 2 cups of water, and once boiling I added 1 Cup of amaranth. I lowered heat to simmer for 20 min and then turned off the heat. Let sit 5 min & mix with a spoon while you add some salt & pepper 2. Sauté the garlic & onions, season with salt & pepper to taste. Add the bell pepper & the zucchini, cook a few minutes and add the spices. Then add tomato sauce & cook to reduce for about 3 min 3. Mix the sautéed veggies with the cooked amaranth. Add 2/3 cup of rice crumbs or breadcrumbs. Shape them into little patties & pan fry them till golden and crispy on both sides!

Grattuggiatele, salate e lasciate a riposo 10 minuti per espellere l'acqua in eccesso. Passati 10 minuti, strizzate tutta l'acqua in eccesso e unitici un cucchiaino di cumino, uno di curcuma (per ottenere il colorito giallastro), pepe, basilico e 2 cucchiai di farina (la mia era di farro), ma quella 0 o anche di caci vanno benissimo! Friggete 2 minutini per lato in olio bollente.
