VEGAN CHICKEN NUGGETS By: @n.vegan.h INGREDIENTS (20 nuggets): * Vegan chicken nuggets ingredients: - 400g firm tofu - 80g chickpea flour - 5 tbsp nutritional yeast - 3 tbsp American mustard - Juice of 1/2 lemon - 2 tbsp olive oil - 1 1/2 tsp salt - 1 tsp garlic powder - 1 tsp onion powder - Cracked black pepper * Other ingredients: - Breadcrumbs . * On the side: - salad - Ketchup METHOD: 1. Start squeezing all the water out of 400g of firm tofu. The best thing would be to use a tofu press like the one here. This takes about 20 minutes. The more you squeeze the water out of tofu the more it will absorb flavours. 2. Then roughly crumble the tofu into a food processor and all all other ingredients. Blend well until you get a smooth mixture. You may need to add a TINY bit of water as well. And don't taste the mixture, the uncooked chickpea flour tastes bitter and needs to be cooked first before it is consumed. 3. Then spoon out the mixture with a table spoon. And press into a bowl with breadcrumbs. Bread evenly on al sides and then fry in hot oil until golden brown (make sure the oil is hot). Place on a kitchen towel as it will absorb some of the excess oil. 4. Serve on it's own with ketchup or other dips or with a delicious salad . Enjoy!

Follow us @vegan.mealpreps for Daily vegan recipes Veggies slice 1.5 bell peppers, 1 cup sliced red cabbage, 1/2 medium onion. Add onions to large skillet with 1 teaspoon each chili powder, kosher salt, garlic powder, oregano, cumin, 1/4 teaspoon black pepper and a couple teaspoons oil. After 5 min cooking, add red cabbage and bell peppers. Cook another 5 min w/lid on, stirring occasionally. Add in 1/4 cup corn, cook just until peppers are crisp-tender🌱🌿 . Make guacamole. Mash 1 avocado, juice of 1/2 lemon or lime, generous dash of salt, garlic powder and pepper, 2 T finely chopped onion, 1/4 cup chopped tomato, 1 T chopped cilantro (or sub parsley) 👍 . Spicy tahini sauce 2 T tahini (or sub 3 T hummus), 1/4 teaspoon each kosher salt and chili powder, juice of 1 lemon, 1 teaspoon hot sauce (optional), and about 2 T water (add another T water to thin if desired). . Roast chickpeas while veggies cook. Place 1/2 can drained, rinsed and dry chickpeas on a baking sheet and drizzle with oil of your choice. Season as desired For Ramen: Spring onions: 2 Lemon grass: ½ T Ginger: ½ T Bird eye chilli: 2 Soya sauce: 1/4th C Xylitol or sugar: 1 T Carrot: 1 Sesame oil: 2 T Toasted sesame seeds : 1 T Ramen noodles: 2 packets Method: -Heat oil in a pan and add spring onions, lemon grass, ginger, chilli and carrots. 👉Vegan food company Good Planet Foods announced that they had raised $12 million in a Series A funding led by capital firm Cleveland Avenue. Good Planet Foods produce plant-based cheese in shred and slice form from typical cheddar to hot pepper. Their products are also non-GMO, free from allergens including soy, peanuts and shellfish, gluten and free from dairy and eggs. They are also certified non-GMO, vegan, kosher, and halal. David Israel, founder and CEO of Good Planet Foods said: ‘We are gaining significant momentum and will continue to play a significant role in increasing awareness of the plant-based foods category. By partnering with these strategic investors, we’ll be able to move forward more aggressively with additional focus on product development, sales and marketing.’ According to SPINS statistics analysed by the Plant Based Foods Association, the plant-based cheese sales were up 95% compared to last year and have been rising ever since. This rise has allowed Good Planet to expand their range with a Plant-Based Frozen Pizza that is topped with their vegan cheese and vegan sausage made by Beyond Meat. 🧡 Pumpkin Crumble Bars 🧡 that are vegan , take no time and are also glutenfree and oilfree 😍✨ This will be my last pumpkin recipe for the year and it’s a keeper! Full recipe below ⇣ —•—Ingredients—•— Crumble: 90g oat flour 90g almond flour 100ml maple syrup 100g almond butter 1/2 tsp baking powder Filling: 400g pumpkin 150g dates 2 Tbsp cornstarch 1 tsp cinnamon —•—Method—•— 1. Place the dry ingredients for the crumble in a bowl and mix. Add in the maple and almond butter and use your hand to form a dough. 2. Line a 20x20cm brownie tin with parchment paper and preheat the oven to 180°C/350°F. 3. Take 3/4 of the dough and press it evenly into the bottom of the tin. Use the bottom of a glass or spatula to even out. Place in the oven and bake for 5 minutes, then set aside. 4. In the meantime, add the filling ingredients to your high-speed blender and blend until smooth. Spread the filling over the bottom and even out. Take the remaining batter and crumble on top of the filling. 5. Place back in the oven and bake for another 30 minutes until golden brown. Pre heat your oven at 200C with your oven dish inside⠀⠀ 2. To a pestle and mortar add the fresh thyme (pull the leaves away from the stalks) crushed garlic clove, 3 tbsp olive oil, pinch of salt and pepper and mix⠀⠀ 3. Slice downwards on the potatoes, I use chopsticks or wooden spoons laid down this helps create and even depth and stops you slicing all the way through the potato⠀⠀ 4. Place the potatoes in the oven dish, then evenly spread the thyme oil over, making sure it gets deep inside the potatoes. Season with a pinch of salt and pepper and place in the oven for 45 minutes at 200C⠀⠀ 5. Get the recipe: Recipe: 4 russet potatoes 1 tbsp coconut oil 2 cloves garlic , finely chopped 4 cups (250g) cremini mushrooms pinch salt 1 tbsp almond butter 1 tbsp balsamic vinaigrette 1 tbsp lemon juice 4 cups baby spinach (approx. 2 handfuls) . . 1. Preheat oven to 425F/215C. Poke holes around each potato using a fork (this will help the heat to escape while baking). Wrap each in tin foil and bake in the oven for 40-50, or until you can easily poke through the cooked potatoes with a toothpick. 2. In a skillet add coconut oil, garlic, sliced mushrooms and pinch salt. Cook on medium heat for 5-10 minutes. 3. Whisk together almond butter, balsamic and lemon juice and pour over mushrooms. Continue cooking until mushrooms are browned and ready to eat, then toss in baby spinach and cook until wilted (2-3 minutes). Slice open baked potatoes and fill with mushroom and spinach medley. Marinara sauce 1 x can/box strained tomatoes 2 Tbsp tomato sauce/paste 2 tsp olive oil 4 cloves garlic, crushed 1/2 tsp finely ground sea salt Pepper 4 sprigs fresh thyme, leaves only 1 sprig finely chopped oregano, leaves only Method 1. Heat olive oil in medium sized saucepan. Add garlic and sauté for 1-2 mins on until browned 2. Add remaining ingredients. Bring to a gentle boil, then reduce and simmer for 15 mins, stirring occasionally. Meanwhile, prepare the spinach filling 100g vegan feta, crumbled- or vegan Parmesan, grated 200-300g spinach (frozen, then defrosted OR fresh and wilted) or silverbeet (chopped + blanched) 1 onion, finely diced 3 cloves garlic, crushed 2 tsp olive oil Pinch sea salt 1/2 cup vegan fermented cashew cheese (see blog post) Method 1. Heat a frypan over medium flame, then add olive oil. Add onion and salt and cook for 2-4 mins, or until translucent. Add garlic and sauté for a further 30 seconds. Turn off heat. 2. In a bowl, mix remaining ingredients. Add cooled onion and garlic, and mix together until uniform. Assemble 1. Heat oven to 180 degrees C. 2. Pour a layer of marinara sauce in the bottom of a deep tray. 3. Spoon filling into pasta shells, placing onto the marinara base. You can layer the shells a little if you need to. Once you have finished filling, top with extra marinara sauce, sprinkle with vegan cheese (optional) and bake (covered) for approx 30 mins. Delicious enjoyed as is, or with a nice green side salad!

Follow @vegansfoodhub Credit @thecuriouschickpea 🚨🚨Recipe: 1 lb extra firm or super firm tofu 6 tbsp cornstarch, arrowroot, or tapioca starch 1/4 cup plant milk BREAD CRUMB MIXTURE 1 cup panko style bread crumbs 2 tbsp olive oil 1/2 tsp paprika 1/2 tsp salt freshly ground black pepper 1 tbsp fresh minced parsley BUFFALO SAUCE 6 tbsp (90g) red cayenne pepper hot sauce, 3 tbsp (35g) vegan butter 1/8 tsp granulated garlic 1/8 tsp salt TO SERVE Vegan bleu cheese or ranch style dressing romaine, sweet peppers, croutons, avocado for salad INSTRUCTIONS Preheat the oven to 425 ºF and lightly grease a large rimmed baking sheet. If using extra-firm tofu press out the extra water: Slice your tofu into 6 width-wise slabs and wrap in a lint-free towel or paper towel. Place some weights over the wrapped tofu, like a heavy cast iron skillet or books atop a baking sheet. Let drain for about 20-30 minutes before continuing. Cut your tofu into 18 'wings' or ~1/2" sticks. Cut the block of tofu into 6 slices width-wise if you haven't already for pressing, then slice each of those slabs into 3 slices lengthwise. Put the cornstarch (/arrowroot or tapioca starch) in one bowl, the plant milk in a second bowl, and mix together the bread crumb mixture in a third bowl. Pour some of the bread crumb mixture onto a plate. Dip each tofu 'wing' into the starch, followed by the milk, then roll in the breadcrumbs on the plate. Place the wing onto the prepared baking sheet and repeat with the remaining 'wings.' Use one hand for the starch and bread crumbs and your other for the milk to keep breading from clumping on your fingers. Add more of the breadcrumb mixture to the plate as needed. Bake the prepared tofu at 425 ºF for 25 minutes, flip, then bake an additional 10-15 minutes until the tofu wings are nice and crispy. While they're baking, make the buffalo sauce. Melt the vegan butter and stir in the hot sauce, granulated garlic, and salt. Put the tofu wings in a large mixing bowl and toss with the buffalo sauce to coat. Serve immediately. Leftover buffalo tofu wings can be re-crisped in the oven.

Vegan Beetroot Pancakes by: @n.vegan.h 🌱INGREDIENTS (2 pancakes): *Step 1: 1/2 cup water 1/2 cup plain flour or gram flour (gluten-free) 1/4 cup pickled beetroot 1/3 tsp salt 1/3 tsp garlic powder *Step 2: Chargrilled artichokes in oil Rocket Hummus (optional) *Step 3 tahini dressing: 5 tbsp water 2 tbsp tahini sauce 1 1/2 tbsp lemon juice 1/3 tsp garlic powder Salt to taste alternatively order our tahini dressings here 🌱METHOD: Step 1: - To make the pancake batter dd all ingredients from step 1 into a blender and blend until completely smooth. If you want to make them gluten-free then use gram flour (also called chickpea or besam flour) Best to let the batter rest for around 10 minutes, it will hold together better. - Then grease a pan by adding some oil and then distribute it evenly with a kitchen towel. Admittedly in my video I added too much oil (I was concentrating on filming the video rather than cooking, oops). Switch to high to medium heat. - When the pan is hot pour in the batter and distribute evenly. - Cook evenly on both sides. If you are confident you can flip the pancakes, or just turn them with a large turner. Step 2: Place the pancakes on a plate and then add chargrilled artichokes and rocked. You can also add a bit of hummus for extra flavour. Then roll them in. Step 3: Add all tahini dressing ingredients into a bowl and mix together until you get a smooth dressing. To make it more liquid add a tad more water. Alternatively you can be the first to get our amazing tahini dressings on Kickstarter (we have 4 more days left!). Enjoy!

Cauliflower Grilled Cheese Servings: 2-3 INGREDIENTS 1 cauliflower Pinch of salt 2 eggs ½ cup vegetarian Parmesan, grated ¼ cup basil, chopped 1 teaspoon garlic powder 1 teaspoon oregano ½ teaspoon red pepper flakes For the middle Cheese of your choice Any additional toppings PREPARATION Grate a cauliflower over a large bowl. Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes. Pour the cauliflower into a clean kitchen towel and wring the water out. In a large bowl, combine the cauliflower, and remaining ingredients, stir until well mixed. Using a spoon transfer two hearty scoops (roughly ¼ cup) of mixture to form each “bread slice” onto a skillet on medium-low heat for about 10 minutes, each side. Add your cheese and any other toppings, allow a couple minutes for cheese to melt. I don’t have instant coffee but there’s always matcha in my house! I saw someone use aquafaba (chickpea water) as the base to make the whip!! SUPER EASY~SUPER YUMMY ••• dEATs👇(makes 3-4 servings) Using a high powdered mixer (or a hand whisk) add in the liquid from 1 can of chickpeas. Mix in high for a few minutes until stiff peaks form! Next, add in 3-4 tbsp of matcha powder (depending on taste preference) and mix again until well combined. Lastly, add in 1/2 C coconut sugar and mix well. This was honestly a little too much sugar for me so I suggest using about 1/3 C. CREAMY RED CURRY W/ VEGGIE GYOZA 🥟 Follow us @veganplantsrecipes for Daily vegan recipes Photo and recipe by @alexafuelednaturally I can’t name a combo that I love more🤭 Tag friends and grab recipe below ✨ Ingredients: 1 yellow onion, diced 3 garlic cloves, minced 1 inch fresh ginger, minced 1 tbsp coconut oil 1/2 tsp salt 1/4 tsp pepper 1 cup broccolini, chopped 1 container tofu, cubed (I really like use high protein firm tofu) 1 red bell pepper, chopped small 6 cups filtered water + 1 tbsp bouillon paste (or 6 cups vegetable broth) 2 cans coconut milk 1 tbsp soy sauce 4 tbsp red curry paste 1 tbsp 100% pure maple syrup 1 tbsp Sriracha (optional) 1 bunch cilantro, for garnish Store bought vegetable gyoza or homemade (I have gyoza recipe on the blog, It will be linked in my bio!) Method: 1. In a large pot over medium to high heat melt coconut oil then add diced onion, minced garlic and minced ginger. Sauté all together for 5 minutes. Season with salt and pepper for 5-6 minutes then add chopped bell peppers, tofu, broccolini & sauté for 7 minutes, stirring as it cooks. Add vegetable broth, coconut milk, soy sauce, curry paste, maple syrup and stir. Bring to a simmer and cook for 10 minutes or until vegetable are tender. 2. In a blender carefully spoon 4-5 cups of broth and the red bell pepper to the blender. Blend on high for 1 minute then pour back into pot. Stir and let simmer for an additional 5 minutes. 3. Make gyoza according to the directions on package or if you’re following my recipe for homemade gyoza follow the directions accordingly. 4. Hope you enjoy🌱⠀ ⠀ 🌱__ Don't forget to follow @playitisvegan ____⠀ 🎥__ Repost:@earthrose_ ⠀ Ingredients * Churros: * 1 cup water * 2 tablespoons plant based butter * 1 tablespoon sugar * 1 cup plain flour * 1 teaspoon vanilla extract (optional) * Coating: * ¼ cup sugar * ½ teaspoon ground cinnamon * 2 tbsp vegan butter Method 1. Preheat oven to 375 degrees. 2. In a pan add water, butter , sugar and salt. Mix together until butter melts and water boils. 3. After turn off heat when the water boiling, add the flour. Mix until a forms dough. Then set aside to cool for 10 minutes.  4. Add the cooled dough to a pastry bag. Create 5inch long churros. Cut the ends off with a knife. (Please not this dough maybe challenging to pipe, if this is the case for you, make sure your hands are warm.) Bake for 20-30 minutes turning midway for an even bake. 5. Combine the cinnamon and sugar in a loaf pan. 6. Once baked allow to cool, brush with melted vegan butter and dip into the pant with the cinnamon and sugar to coat.  7. Dip in your favourite sauces, I had chocolate sauce and biscoff spread 8. 5 minute Garlic Tahini Sauce! Actually, I bet you can make this sauce in less than 5 minutes. Get your noodles cooking & you should be able to prep your veggies & make the sauce in the time it takes your pasta to cook! The sauce is creamy, garlicky, & has a little pucker. If you like a lot of garlic - add more! If you like vinegar - add more! This sauce is adaptable. As the sauce sits it will thicken. So, if you make it in advance you may want to add some more water. I like to serve this with buckwheat noodles and baby kale. When the noodles are about halfway cooked I throw chopped kale into the boiling water for the last few minutes of cooking. Fewer dishes, less work, and the kale cooks perfectly. Sauce your noodles well and drizzle some more on top of each serving. Toasted sesame seeds add some nutty flavor and crunch. I highly recommend topping with fresh vegetables, whatever you have around will likely be delicious. I like using cucumber & radish matchsticks. Serve with hot sauce or red pepper flakes or both! Save this recipe & shoot me a message when you make it. I would love to know what you think! 🌱 Ingredients: • 5 tablespoons tahini • 3 tablespoons soy sauce • 3 tablespoons toasted sesame oil • 3 tablespoons apple cider vinegar or fresh lime juice (add more as desired) • 1 tablespoon agave • 1 tablespoon minced garlic • 1 teaspoon ginger powder • 2 - 5 tablespoons water (add water until desired consistency is achieved) 🌱 Directions: • Put all ingredients in a blender and blend until smooth (you can also use a whisk) • Pour sauce over noodles & stir. Such delicate buttercream flowers by @culinarydots. Beautiful to add to any garden/floral themed cake. • Repost @culinarydots ・・・ Happy Saturday 💚💜💙 Here comes my Hydrangea piping video 😊 I love these pastel colors so much they look like a beautiful rainbow to me 🦋! I used some blue magic spirulina powder for the blue, pretty pink powder mixed with blue for the purple and a hue of chlorella powder for the green part all powders are by @pureraw.de 🦋! As you can tell this flower is super-easy to pipe ! You only need a piping tip 103 and three different shades of your favorite Hydrangea blossom colors. The flowers are made with my Cashewbuttercream and the leaves are made with vegan and gluten-free wafer paper 🌿 As I’m writing this it just finished to rain after a really warm spring day and there’s nothing more beautiful then the fresh spring air filled with the scent of all blossoming trees and flowers mixed with a hue of fresh rain ☔️ This is pure magic!
