SAMOSA 8-10 servings Ingredients: Flour: 2 cup Ghee or oil: 2 tablespoon Water: to knead Salt: 1 teapoon for dough and as needed for filling Thyme: 1 teaspoon Boiled potatoes: 6 medium Black chickpeas: 1 cup Salt: as needed Turmeric: 1/2 teaspoon Coriander powder: 1 tablespoon Cumin powder: 1 tablespoon Garam masala: 1/2 teaspoon Oil: as needed to fry Instructions: ~Boil the potatoes and black chickpea together (soak the chickpea overnight) ~Mash the boiled potatoes and add black chickpeas, coriander, turmeric, salt, coriander powder, cumin powder and garam masala and mix well (let it cool down) ~Take a bowl combine flour, salt, thyme and ghee and mix well for 10 minutes. (If you don't eat ghee you can use oil) ~Slowly add water and knead well. Spring inspired soup @feelgoodfoodie 😋 Tag a friend who’d love this! ❤️⠀ Follow 👉@veganfitrecipes⠀ Recipe Down Below 👇⠀ ⠀ INGREDIENTS⠀ 1 tablespoon olive oil⠀ 1 onion, chopped⠀ 2 cloves garlic, minced⠀ 2 pounds asparagus⠀ 4 small potatoes⠀ Salt and pepper, to taste⠀ 4 cups vegetable broth⠀ 2 cups @califiafarms Unsweetened Better Half⠀ Lemon, for serving⠀ INSTRUCTIONS⠀ 1. Preheat oven to 400°F and place asparagus on a baking sheet. Drizzle with oil of choice and season with salt and pepper. Toss to coat and roast for 15 minutes until the asparagus softens.⠀ 2. Heat olive oil in a large stock pot over medium heat. Add the onions and garlic and cook until onions are translucent, about 5 minutes.⠀ 3. Add the potatoes, season with salt and pepper, then cook with the onions and garlic for a few minutes. Pour the vegetable broth and almond milk, bring mixture to a boil, then reduce heat to a simmer until the potatoes are tender, about 20 minutes.⠀ 4. Add the roasted asparagus into the pot. Uses an immersion blender to blend the soup until it’s smooth and creamy. You can also do this in batches in a blender.⠀ 5. TURMERIC, ORANGE AND ALMOND CAKE by: @n.vegan.h INGREDIENTS:  Dry ingredients: * 300g self-raising flour * 120g sugar * 100g ground almonds * 30g corn starch * 2 tsp turmeric * 1 tsp baking powder Wet ingredients: * 250ml orange juice * 200ml sunflower oil * 2 tsp vanilla extract * 1 tsp almond extract Chocolate frosting: * 200g dark cooking chocolate * 1 1/2 tsp sunflower oil Other ingredients (optional): * Kumquats * Crushed pistachios METHOD: 1. Preheat your oven to 180C (360F). 2. Start with combining the dry ingredients in a large bowl first. Combine them well with a spoon. 3. Then take a separate bowl and mix together all wet ingredients. Stir. 4. Pour the wet ingredients into the bowl with the dry ingredients. Mix together well with a spoon until you get a smooth dough. 5. Line a baking tin with baking paper. Grease the sides with vegan butter. 6. Pour the cake dough into the tin and pat down with a spatula so it's all even. (*Note: size of the tin about 20 cm) 7. Bake for 40 minutes. 8. Take out and let cool down. 9. When the cake has cooled down completely melt 200g dark cooking chocolate. You can do this by either using a bain marie or melt it in the microwave. Add a 1 1 /2 tsp sunflower oil and stir well. 10. Pour the chocolate over the cake and distribute evenly. 11. Add a few sliced kumquats or orange slices. 12. Throw some pistachios in a food blender for a few seconds or crush them using a and mortar and pestel. 13. Take a sheet of paper to cover parts of the cake and drizzle the pistachios on top. Decorate the cake to your own liking. Enjoy!

Then, let everything cook for another minute and add 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar. stir everything together and after ca. 5 minutes the filling is ready. This vegan, gluten-free main course is super delicious, super easy to prep, and makes for a great meal prep option for lunches for your week ahead. Serve with cooked quinoa, roasted veggies, or use it as your primary protein in a salad. I enjoyed it with steamed broccoli and maple glazed roasted carrots! Lentils are an excellent source of plant protein, fiber, and essential vitamins and minerals, like folate, iron, and manganese. They help regulate blood sugar, support weight loss, and can improve digestive health because of the insoluble fiber content. Plus, they are super versatile! AND, they are one of the FEW proteins that are alkaline-forming rather than acid-forming. Makes 4-5 servings Prep/cook time: 25-30 minutes 1 cup dry brown or green lentils (yields 2 ½ cups cooked) 3 cups water 1 ½ tsp coconut oil or extra-virgin olive oil 2 Tbsp organic pure maple syrup 1 Tbsp chili powder ¼ tsp sea salt 3 garlic cloves (minced) . PLACE lentils and water in a pot together, and bring to a boil. Then reduce heat, cover, and simmer for 20-25min. MEANWHILE, chop the garlic and set it aside. Now is also a good time to prepare any side dishes (e.g. cook some quinoa stovetop, roast some veggies, chop up your salad greens, etc). . ONCE the lentils are cooked, heat the coconut oil in a large skillet over medium heat. Add the cooked lentils and sauté for about 5 minutes. Add the maple syrup, chili powder, sea salt, and garlic; continue to sauté for another 1 to 2 minutes. I think it's been more than a month since I've had green lentils... Strange for a Vegan, isn't it? 😅 So today I really wanted to eat some but without cooking them in a classical way. I had the idea to make a gratin and... my god why didn't I ever think of that before?!! . Here is the recipe: ▪️Green lentils, ▪️1 onion , ▪️1 carrot, ▪️1 eggplant, ▪️Diced tomatoes, ▪️Small rehydrated textured soy protein, ▪️Spices: salt, pepper, garlic, cumin, herbs de Provences, paprika, cayenne pepper. . Cook your lentils. In a frying pan fry the onion and then the carrot cut into small cubes. Add the soy protein, diced tomatoes and spices. Let it cook for a few minutes. . Mix the lentils with the sauce and put this in a dish. Cut the eggplant into large slices and cover the lentils. Feel free to use vegan cheese on top and sprinkle some nutritional yeast after cooking. VEGAN “Egg” Nests by @twospoons.ca 🧡 . 2 zucchinis 1 small sweet potato olive oil, to spray . For the "egg whites" sauce 1/2 cup raw cashews, preferably soaked overnight but not necessary 2 tbsp nutritional yeast 3 cloves garlic 1 lemon, juiced (approx. 2 tbsp) 1/2 cup water, plus more if needed 1/2 tsp onion powder, optional pinch salt . . 1. Turn oven to 400F/200C. Using a fork, poke small holes in sweet potato going all the way round, about 1-inch apart. Bake sweet potato for 30 mins, or until cooked through. Place to the side. 2. Spiralize zucchinis into noodles and spread onto clean dish cloth. With another clean dish towel on top, gently press the water out of zucchini as best you can. 3. In a blender add "egg whites" ingredients: soaked cashews (strained), nutritional yeast, garlic, lemon juice, water, onion powder \and salt. Blend until creamy and smooth. 4. Line a baking tray with tin foil and lightly spray with olive oil. Build “egg nests” onto tray by bunching the noodles tightly together to look like a nest. (Should make about 5 nests). Pour 3 tbsp "egg whites" sauce into the centre of each egg nest. Bake nests in the oven for 10-12 minutes, or until zucchini is lightly browned. 5. Slice open sweet potato. Using a melon baller scoop the insides to form a ball. This will be your “egg yolk.” Place a ball of sweet potato into the centre of each cooked nest. 6. Crispy skinned salt & vinegar hasselback potatoes 🥔 My 3 favorite things about potatoes in 1 😍 Cooked these up with lots of garlic + rosemary + thyme and can confirm they are amazing 👌🏻 Ingredients: 3kg baby potatoes, skin on 1 tsp salt 1 cup white vinegar 50g butter (or vegan butter) ¼ cup @cobramestate rosemary & garlic flavoured olive oil 6 cloves of garlic, chopped (you can use more or less) 2 sprigs rosemary, chopped 2 sprigs fresh thyme 1-2 tsp stock powder (you can use salt if you wish, just use a bit less) Generous sprinkle of @mingleseasoning all purpose mix (optional) Pepper to taste Method: 1. Place the potatoes, salt, and vinegar in a pot and cover with water. Cook the potatoes in for 10 minutes until the potatoes have just started to soften and are cooked. Let the potatoes steep in the vinegary water for an hour or so. 2. After an hour drain the potatoes. Hasselback the potatoes but cutting halfway through the potato into thin fan-like slices. (I recommend watching a YouTube to get a better idea of what to do) 3. Preheat the oven to 200C and place the butter and oil onto a roasting pan. Place pan in the oven so butter melts. Once butter melts add the potatoes, garlic, herbs, spices, salt and pepper and give everything a good stir to coat everything well. 4. Place in the oven and bake for 50-60 mins. This is just a loose time frame as sometimes you may need to cook it more or less but if you think it needs more time to get crispy, leave it in for longer. 5. Enjoy!❤ . . Kunafa or Knefé or knaafeh or كنافة, however you like to call it, it is a delicious sweet dish that every arab knows and loves. Works for breakfast and dessert. Well, actually there are no rules to when you can or cannot eat Knefé! This is the Coarse Knefé or كنافة خشنة, it is not how we Lebanese usually eat it, but it is an -easier to prepare- version and yet very very delicious. My light Coarse Knefeh recipe is inspired by my Lebanese-English auntie's recipe a former head chef and a dear palestinian friend. I took the best of both worlds, added my dietitian touch to make it healthier and adaptable with diabetics and people who want to lose/maintain weight. INGREDIENTS: - KNEFE LAYER: 1 Kg knefe noodles (also called شعيرية الكنافة) 1 cup melted low fat unsalted butter 2 TBSP erythriol granulated sweetener 2 TBSP orange blossom water - CHEESE FILLING: 1/2 kg fresh mozzarella cheese 1/2 kg 0% or low fat akkawi cheese (Nabulsye cheese is the best but I did not find it in Lebanon) soaked over night to drain out salt - KETO SUGAR SYRUP: 1 cup water 1/2 cup Erythriol granulated sugar A packet of Xanthan Gum (NOTE: You can also use @equialebanon diet sugar syrup found in most supermarkets accross Lebanon as an ready, low calories & healthier alternative to regular sugar syrup) Directions: - Either shred the noodles in a food processor or keep them as is and mix them with the melted butter, 2 TBSP of erythriol, 1 TBSP orange blossom water - butter a round pan, layer the noodles. Press well to even out the level. - dry the soaked cheese very well, shred it and mix it with the shredded fresh mozarella. - spread the cheese evenly on the noodles layer Place in the oven for 15 to 20 minutes at 180-200°C, until the cheese melts and you hear a crunchy sound when inserting a knife in the crust. Purple sweet potato gnocchi and green pea avocado pesto 🍠🌱 📸: @cookingforpeanuts Recipe: Gnocchi: Peel and chop 2 medium/large purple sweet potatoes into about 1-inch pieces. Add to saucepan and cover with cold water. Bring to a boil and cook about 15-20 minutes until fork tender. Drain and transfer to mixing bowl with 1/2 cup almond (or preferred) milk. Use potato masher to mash until very smooth. Add 2 tbsp nutritional yeast, 1 tsp salt (or to taste), 1/2 tsp black pepper and mix well. Gradually add 1-1/2 cups all-purpose flour. Use hands to incorporate flour until dough forms. If too sticky, add a little more flour. Let dough rest about 10-15 minutes. Transfer dough to floured surface and cut into 4 equal parts using pastry cutter or sharp knife. Roll each part into strands about 1/2-inch thick. Cut strands into desired gnocchi-sized pieces. Cook in boiling water and remove with slotted spoon once gnocchi rises to surface. Brush gnocchi with a little olive oil and bake on lined sheet at 400F until crispy, about 15 minutes. Pesto: blend on high 1 minced garlic clove, 1 very ripe avocado, 2 tbsp fresh lemon juice, 1/4 cup pinenuts, handful basil leaves, 1 cup defrosted green peas, 1/3 cup vegan parmesan (or 3 tbsp nutritional yeast), 1/4 cup+2 tbsp water. Salt/black pepper to taste.

Sticky Sesame Cauliflower by @cookingforpeanuts 🧡 . Recipe: 1.) Cut 1 small-medium cauliflower into bite-size florets, about 3 cups. 2.) In a large bowl, whisk: 3/4 cup of flour (all-purpose is best), 2 tsp garlic powder, 1/2 tsp salt. Slowly add 3/4 cup unsweetened non-dairy milk while stirring. Add cauliflower florets to the bowl and mix them into the batter to coat. 3.) Transfer the cauliflower to a lined baking sheet. Bake at 450F for about 20 minutes, or until start to turn golden. Broil for an additional 2-3 minutes to get that extra crisp. 4.) Meanwhile, make sauce. Mix: 1 large minced garlic clove, 1/4 cup apricot (or similar flavor) 100% fruit jam, 2 tbsp soy sauce or tamari. Heat sauce in a small-medium skillet and add cauliflower. Continue heating while gently mixing cauliflower until coated in sauce and warmed through, 2-3 minutes. Serve immediately. Vegane Grillfackeln • • •Zutaten: -für die Spieße: Ca. 12 Holzspieße 150g Seitan fix (Findet man bei Edeka oder SBK) 50g Mehl 2TL Gemüsebrühe 2TL Hefeflocken 2 EL Tomatenmark 1 EL Sojasauce 1 EL Öl 200ml Wasser -für die Marinade: 1EL Agavendicksaft oder Ahornsirup 1TL Knoblauchpulver 100ml Wasser 1EL Tomatenmark 1 ½ TL Salz 1EL Paprikapulver 1TL Pfeffer 1TL italienische Kräuter 1EL Sojasauce 100ml Öl 2EL BBQ Sauce • • •Rezept: Die Holzspieße in Wasser einweichen (damit sie auf dem Grill nicht anbrennen). Seitan, Mehl, Gemüsebrühe und Hefeflocken in einer Schüssel mischen. Dann die flüssigeren Zutaten hinzugeben. Erst mit einem Löffel durchmischen und anschließend mit der Hand kneten und zu einer Kugel formen (die Konsistenz ist etwas gummi artig). Danach in ca. 12 Teile teilen, einzeln ausrollen und auf die Spieße wickeln und das Ende aufspießen. Die fertigen Spieße in eine Form oder auf ein Blech legen (hier werden die Spieße dann mariniert). Für die Marinade alle Zutaten gut vermischen, auf die Spieße geben und für ein paar Stunden einweichen lassen. Anschließend kann man die Spieße einzeln grillen.

Buenos días! . El desayuno de hoy lo iba a poner por stories, pero el otro día hice este queso de yogurt de @spiritualalexx y ahora que lo probé tenía que compartirlo si o si, porque es lo más fácil del mundo hacerlo , está buenísimo 🤤, y como lo hice diferente al original, pues para que tengan ambas versiones por aquí. . Ella lo hizo semi curado y lo sirvió con galletitas, yo no tenía ganas ni paciencia de estar pendiente de el, y como me gusta más lo salado, lo hice untable saltandome unos cuantos pasos 🙈. . En su feed está la receta completa , video incluido. . 🔹Yo lo empecé a hacer el viernes, y después del paso de quitarle todo el líquido , dejándolo de un día para otro en un colador con una gasa (en mi caso) , lo pase a un bowl pequeño y le agregué 1 chorrito de aove, sal, hierbas provenzales, pimienta recién molida y pizca de ajo en polvo...lo mezcle todo y lo deje en un tupper pequeño hasta hoy , no hace falta esperar, se puede comer al momento, pero así tiene más sabor. . Les prometo que sabe a queso Philadelphia, o al vago recuerdo que tengo 😂, así que si les gusta la idea pasar por su cuenta a echarle un vistazo 👌🏻. . . Se que está semana mi IG parece de desayunos jeje, pero es lo único que he tenido tiempo de compartirles con tranquilidad porque estos días he estado cocinando para la flia, ha sido en plan Canelones, pizzas, tarta etc 🙆🏻, pero no he parado a echarle fotos a todo prácticamente porque la gracia es estar con ellos no con el móvil obviamente 🙈. . . VEGAN RED LENTIL DAHL — . . The perfect healthy warming dish for this cold winter weather 🥶 I absolutely love making this Vegan Dahl, I make it in my Thermomix and it’s so simple and makes so much, I serve it with rice, papadams, Greek yoghurt, naan bread and coriander 🤤 . . VEGETABLE AATA MOMO (NO OIL WHEAT FLOUR VEGETABLE DUMPLINGS) 2-3 servings Ingredients: For wrap: Aata- 2 cup Water- as needed Salt: 1/2 teaspoon For filling: Carrot- 1/2 cup Cabbage- 1/2 cup Soya chunks- 1 cup Onion- 1 cup Capsicum- 1/2 cup Ginger garlic paste- 2 tablespoon Salt- as per taste Momo masala - 1 tablespoon Oil- to grease the pan Instruction ~In a bowl add aata, salt, water and knead properly ~Soak the soya chunk in water until soft, squeeze the water till dry, cut it into small pieces ~Cut carrot, cabbage, onion and capsicum finely ~Put all the vegetables except soya chunk in a colander and add little salt. Let it rest for two hours, stir occasionally. This will help to get rid of water from the vegetable. ~Take the vegetable in small portions and use your hand or a cloth to get rid of the remaining water. ~Add all vegetables including soya chunk in a bowl and mix well with momo masala, salt and butter. (Don't add too much salt without tasting) ~Take the dough, make small balls and roll it into a small circle about two to three inch diameter (it shouldn't be very thick or thin) ~Add one or two teaspoon filling and make any shape of your choice ~Heat water in a steamer and grease the steamer pan with oil ~Add the momo's keeping space between them and cover the lid for around 15 minutes. (Keep checking as the time varies as per the intensity of the flame. When done the dough won't be sticky) ~Serve hot (Differnt kinds of tomato pickle goes well with momo.
