🍜Sri Lankan Tofu Curry Noodle Bowl🍜💛Follow @vegandemocracy for daily vegan inspiration 🌱💚 👉@vegandemocracy 👉@vegandemocracy . . . 📷Credits: @cookingforpeanuts . . 📝Recipe: Press and dry 1-14oz packet extra-firm tofu to remove excess liquid. Cut tofu into about 1-inch cubes. Bake on parchment-lined baking sheet at 400F until golden and slightly crispy. Meanwhile, sauté 1 tsp cumin seeds and 1 tsp black mustard seeds until fragrant, about 30 seconds. Add 1 diced red onion, 3 minced garlic cloves, 2 green chilies (deseeded and finely diced), 1/2 tsp turmeric, 1/2 tsp cinnamon, 1/2 tsp chili powder and 1 tsp curry powder. Sauté about 5 minutes before adding 1-15oz can coconut milk, two heads baby bok choy (trimmed and washed) and the baked tofu until heated through and bok choy just wilted. Remove from heat and add chopped cashews and fresh lime juice and salt to taste. (Add touch of maple syrup if desired.) Served with millet brown rice noodles. chipotle style tofu- my family (meat eaters) loved this, they said the tofu was better than the meat, little steps to showing them how good vegan food can be, and education, really pays off. I had this with a little bit of guac added after, lots of salad and boiled veg! ☺️

Well it’s been nearly 4️⃣ weeks since I last posted!! . Life got real crazy whilst I was working on many university deadlines, including my final year dissertation 👉🏻 swipe to see me with my finished piece of work! I had the freedom to centre my dissertation around vegetarianism and veganism, which was extremely interesting and rewarding🥰 But now that I have nothing to keep me at my desk for 12 hours a day or have no appetite, I really want to focus on getting back to a healthier me. I’ve put on some pounds as I was eating purely to survive when I was in the writing stage of my dissertation, which included a lot of buttered toast, baked goods and mac and cheese😌 but the lack of movement and eating only beige foods has resulted in a small weight gain👍🏻 . Nonetheless, I want to get back to a healthier me and give a a lot of my focus to eating on plan and losing a good chunk of weight. I’m moving to the US in August and I want to feel more comfortable in my own skin🙌🏻 so I have about 8 weeks until I move to get some losses💘 That being said, I’ve found it extremely difficult to stick to plan before I got caught up with my dissertation because of the lockdown but hopefully I can make a change this time. Last night we made tofu saag 🤤 and tried to make it as authentic as possible🙌🏻 . We followed a recipe by @swadishmerchantcity but changed a couple of steps to make it more SW friendly. For example we didn’t use as much oil but there are 3 syns of oil in this portion (we feel that oil is necessary for cooking with spices and slow cooking the onions/garlic/ginger etc. so we are more than happy to syn what we use) and made the saag part of the dish without the mustard green leaves and just added more spinach🌱 This dish was actually really simple to make but it had such a huge pay off, we felt that it was v close to restaurant quality! Add onion, garlic, and ginger, curry leaves (if using), chilies, cinnamon, cloves, star anise, cardamom pods, salt, and cook, stirring often and scraping up browned bits, until onion is translucent, about 5 minutes Add the vegetables and sauté for 2-3 minutes Gently add about 3/4 cup of water, curry powder, ground turmeric. Cover and let simmer for 7-10 minutes, until the vegetables are tender Stir in the coconut milk and let simmer on medium-low for a minute. Check for seasoning and adjust accordingly at this point (salt, curry powder etc) Now add cubed tofu, gently stir and continue to simmer for 5 minutes Adjust consistency if you want it to be a bit thinner by adding 1/4 cup of hot water Turn off heat. Save this recipe! It’s a keeper! . Butter Cauliflower: Chop up cauliflower into small to medium sized pieces (bite size but not too tiny either). wash and pat dry and set aside. in a bowl put together dry spices: 1 tsp of cumin. 1 tsp of onion powder 1/2 tsp of salt 1 tsp of garlic powder. toss florets inside and toss within the bowl to coat. add 1 cup of coconut milk and set aside to set for 10 - 15 minutes. afterwards, turn your oven to bake and bake on 375 for 10 minutes and then broil for 2 minutes on low. . Meanwhile dice up 1 onion and throw into a deep pan coated with olive oil or avocado oil. Cook on medium - low. let it caramelize (until the onions are a soft brown) and throw in: 1/2 tsp of cumin, 1/2 tsp of turmeric, 1 tsp of coriander paste, 1 tsp of ginger and garlic paste, juice of half a lemon, 1/2 tsp of salt. Keep cooking until fragrant. Add 1.5 cans of coconut milk (full fat) and bring pan to a boil. add 1 can of tomato paste. Keep stirring and reduce heat to medium. Keep stirring until thickened. Add more salt, pepper or lemon juice if needed. Stir in your cooked cauliflower and gently coat them with the sauce, turning your spoon in the batter to allow the florets to absorb and coated. Great little curry last night. We picked up some fresh fenugreek walking past the local veg shop and decided to rustle up a simple potato aloo. Nothing complex a couple spuds, turmeric, garlic powder and of course fresh fenugreek leaves. We accompanied with an adlib curry. The sauce was a blended paste using spices, garlic, onion, pickled beets, ginger, spinach and vinegar. Just added the paste to some fried onion with a little water to get the right consistency and cooked for about 10mins. We roasted some peppers and leeks separately with a pinch of cumin and tossed them into the sauce with some chickpeas for 5 mins at the end to bulk it all out. CORN ON COB CURRY ( Carribean style) : We are currently facing a cyclone here so, only a warm curry would have made a good lunch . My attempt at a Carribean curry in Coconut milk . Onions sautéed in garlic and ginger paste , Potatoes ( with skin) and carrots along with . Add half a cup of coconut milk and cook them with Jerk seasoning ( Fortunately, I had some in my pantry cupboard ) . The corn is separately boiled and cut into pieces . Add vegetable stock and more coconut milk after adding the corn to the pot. Let it simmer for a good time so the corn can soak in the juices . I added a spoon of vinegar and dried rosemary to the mix. For spicing it up I used Cayenne pepper and some Indian red chilli powder 🥵. Served with a warm salad of Quinoa. Vegan Brownies attempt #2!! This batch looks like the cake from Matilda lol Before I give the recipe, I just want to say coconut flour is THE DEVIL!! It soaks up moisture like crazy but can also cause your creations to be TOO moist lol like wtf?! Anywho 🙄 This recipe still needs to be tweaked BUT WE ARE GETTING CLOSE. THE FLAVOR IS THEEEERE Y'ALL!!! Black Lives Matter. Recipe: MIX 5 Flax eggs and sit to the side for 10min to thicken (5tbsp flax meal and 15tbsp water) _ Whisk the following: 1/2 cup coconut flour 1/2 cocoa powder 1 tsp salt 1 tsp baking soda _ Add the following QUICKLY: 5 flaxeggs 2 tbsp almond milk 1 tsp vanilla 1 cup maple syrup 1/3 cup coconut oil 1/2 cup dark chocolate chunks _ MIX WELL _ Pour into an 8x8 pan and bake for 30min _ I used a 1.5quart loaf pan _ This mixture was waaaaaaay to wet and didn't set well. So I put it back in the oven at 300degrees for an additional 40min and hoped for the best. Still too moist. Impressed with @gardein veggie crumbles. Cheaper and healthier than a lot of the other's. Not as much sodium and they keep well in the fridge. Just as good reheated as they are out of the pan. They take sauces well and don't leave residue in the pan at relatively low temp like other brand's veggie crumbles. This dish is quinoa with red peppers, red onion, mushroom, and seasoned with crushed red peppers, sea salt, black pepper, and a tiny bit of onion powerder. Replace spaghetti, asian noodles, cheesy pastas, noodle soup, and anywhere else you’d use pasta with shiritaki (konjac root) for literally 15 calories for like 2 cups of food. . Talk about filling your belly and getting bang for your buck! . Tonight’s delicious dinner was an entire package of shiritaki noodles, rinsed and dry sautéed. I added air fried broccoli, chickpeas, and snap peas. Seasoned with a splash of tamari and vegetable broth, then topped with parsley, minced onion, and red pepper flakes, this totally hit the “takeout” spot and refueled my 15k step day!

If you can imagine it someone has made a Vegan version of it 😍Grab a copy of our FREE VEGAN-KETO cookbook, Link in bio! 👇 ⠀ FOLLOW @EthicallyEnhanced FOR MORE DAILY VEGAN RECIPES 😍 😍⠀ RECIPE BELOW 👇👇 ⠀ Ingredients:⠀ 1 Block firm tofu approx. 14oz Breadcrumb Mixture 1 cup panko breadcrumbs 2 tbsp neutral oil 1 tsp paprika 1/2 tsp sea salt 1/2 tsp ground black pepper 1 tbsp nutritional yeast flakes optional Coating 1/2 cup cornstarch 1 cup non-dairy milk 1 tsp apple cider vinegar optional BBQ sauce (optional) 1/3 tsp prepared BBQ sauce or another spicy sauce 2 tbsp neutral oil or melted vegan butter METHOD:⠀ 1. Cut tofu into 5-6 slices. Wrap in kitchen paper or a clean kitchen towel to press out the liquid. Place a heavy pan or another weight on top, and set aside for half an hour (or overnight) until the tofu is very dry and looks dense. Then, cut the tofu slices into fingers. 2. Preheat your oven to 395 ºF (200 ºC). Now take 3 bowls. In one bowl, combine all ingredients for the breadcrumb mixture. In another bowl, add the cornstarch. In the third bowl, stir together the non-dairy milk and apple cider vinegar. 3. Take one tofu finger at a time, toss into the cornstarch first, then dip into the non-dairy milk. Repeat this step (put back into the cornstarch, then into the non-dairy milk), and finally coat with the breadcrumb mixture. Repeat with all the tofu fingers, placing them on a lightly greased baking sheet in a single layer. 4. Spray with a little cooking oil for more crispness, if desired. Bake for about 30-40 minutes, flipping them halfway through baking. Optional step: Stir together BBQ sauce with oil. Remove tofu from the oven and brush with BBQ oil mixture. Place back in the oven, and continue baking for another 5 minutes, or until crispy! Tagliatelle with mushroom, tomato & broccoli sauce🥦🧄🍅🍽 YUM! Melt a bit of butter in the pan, add mushrooms, tomatoes & garlic, let it cook. Once done, add coconut milk and salt, pepper & basil. Meanwhile cook your broccoli in the other pan and tagliatelle pasta also in a separate pan. Once the tagliatelle pasta is cooked, add it to the sauce and mix altogether.
