Stamattina, parlando con amica Yel, che chiedeva come fare piadine al grano saraceno, mi sono ricordata che da tempo volevo perfezionare questo procedimento. E si sa, una cosa tira l'altra, si sa dove si comincia e non dove si va a finire. Così dalle mani sono usciti, oltre alle piadine, medaglioni e fiorette, conditi in stile China con zucchine, carote e porro alla salsa di soia e mandorle tostate. E siccome questa volta la ricetta è già pronta non ritardo di un momento ed eccola. 100 gr farina riso integrale 100 gr farina grano saraceno 200 gr acqua 1 pz sale marino integrale In un tegame antiaderente mettere a bollire l'acqua con il sale, quando inizia a fare le bollicine aggiungere, 1 cucchiaio alla volta, la farina di riso, mescolando con un cucchiaio di legno. Si formerà in poco tempo un composto denso. Trasferirlo sulla spianatoia, lasciare intiepidire un paio di minuti e inglobare poca alla volta la farina di grano saraceno, ora l'impasto di riso sará "accogliente". Stendere l'impasto con il mattarello dello spessore di circa 2-3mm, ritagliare della forma desiderata. Cuocere in acqua bollente per 3 minuti circa (anche dopo che saranno venuti a galla). Con lo stesso impasto, con acqua gasata, si possono fare croccanti e saporite piadine, cotte in tegame. SEITÁN CASERO INGREDIENTES: ●2 vasos de gluten de trigo ● agua ●salsa de soja ●Especias al gusto (yo he utilizado pimentón dulce,comino,pimienta ajo en polvo y perejil) ●Caldo vegetal ●Laurel •En un bowl grande ponemos dos vasos de gluten y lo mezclamos con las especias que más nos gusten. ( la cantidad dependerá del gusto del consumidor) •Añadimos un vaso y 3/4 de agua y 1/4 del vaso de salsa de soja. •Mezclamos bien y la masa resultante la envolvemos en papel film y la dejamos unos 50 minutos en la nevera. •Pasado el tiempo lo sacamos amasamos bien ( la consistencia será chiclosa) y le damos la forma de bola ( una grande o un par más pequeñas) •Hervimos la/las bola/s durante 1 hora aprox en un caldo vegetal al que añadiremos una hoja de laurel y un buen chorro de salsa de soja. ( hay quien lo hierve en agua con un poco de soja y ya está. Hay quien añade vino tinto. ¡Hay que ir probando!) •Una vez hervido lo dejamos enfriar y estará listo para utilizarlo de mil maneras ( como utilizariais la carne: a la plancha,en guiso,fajitas,boloñesa...) □Sale bastante cantidad así que lo ideal es congelar una parte. Yo fileteo una parte y la congelo en plan "filetes" y otra en bloque para hacer guisos.! □En el video veréis que esta primera ración nos la comimos a la plancha con un poco de salsa teriyaki. VEGAN MUSHROOM RISOTTO 🇮🇹🍚⁣ ⁣ Absolutely love this recipe for the creamy mushroom risotto with a lemon hint! ⁣ Reminds me of the old days in Italy when we could travel without caring about Covid situation. ⁣ See the recipe below and enjoy! ⁣ ⁣ INGRIDIENTS: ⁣ ✔️ Mushrooms- 500g (had a mix of white and brown)⁣ ✔️ 1 Lemon ⁣ ✔️ Italian risotto rice - 330 g⁣ ✔️ Vegan white wine - 200ml ⁣ ✔️ 1 vegetable stock ⁣ ✔️ 1 litre boiling water ⁣ ✔️ 4 table spoons of vegan butter ⁣ ✔️ Handful of fresh parsley ⁣ ✔️ Salt and pepper⁣ ✔️ 1 onion ⁣ ✔️ 2 cloves of garlic ⁣ ✔️ 2 tablespoons of olive oil ⁣ ⁣ METHOD: ⁣ 1) Cut onions and mash garlic - fry with olive oil until soft ⁣ 2) Add Mushrooms and fry until mushrooms are soft. Add salt and pepper. Also add parsley or other green at this stage. ⁣ 3) Add risotto rice and white wine and wait until all wine evaporated ⁣ 4) In a meanwhile mix vegetable stock, water and juice from 1 lemon together in one pot ⁣ 5) Add 1/4 of stock into the rice and wait until it evaporated ⁣ 6) Keep adding quarter of the stock each time it evaporates. by the time all stock is evaporated your rice should be nice and creamy. If not soft add as bit of water.⁣ 7) When rice is soft add butter and mix all together. Let sit covered for about 5-10 minutes. Serve with fresh parsley. ⁣ ⁣ You can also serve with vegan hard cheese. ⁣ I got my vegan wine in Aldi. Scalloped Potatoes by @elavegan ♥️ ​ ​Ingredients Cashew Sauce: 1 2/3 cups (400 ml) plant-based milk (*see notes) 1 2/3 cups (400 ml) vegetable broth 1 cup (150 g) cashews soaked (*see notes) 2 tbsp (15 g) tapioca flour or arrowroot flour 1/2 tsp paprika Ground black pepper to taste 1/2 cup (30 g) nutritional yeast 1 1/4 tsp sea salt or less/more to taste 1 tsp onion powder 3-4 garlic cloves Other Ingredients: 3 lb (1.4 kg) potatoes (about 7-8 medium) 1 medium onion Fresh herbs to garnish Instructions Check the video below for easy visual instructions. Soak cashews in boiling water for about 15 minutes, then drain. Meanwhile, peel potatoes and slice them thinly (about 1/8 inch thick). You will need 3 pounds (1.4 kg) of peeled potatoes for this recipe. Also, peel the onion and slice it thinly. Preheat oven to 400 degrees Fahrenheit (ca. 204 °C) and grease a 9×13 inch (23x33 cm) baking dish. Set aside. To make the cashew sauce, add all sauce ingredients to a blender. Blend on high for about one to two minutes or until completely smooth. The sauce will be very thin at first but don't worry as it will thicken up while baking. Taste the sauce and add more salt/pepper/spices if needed. Transfer half of the potatoes to the prepared baking dish and pour half of the sauce on top. Spread the sliced onion on top and layer the remaining potatoes over the onion. Pour the remaining sauce in the baking dish. Bake for about 60-70 minutes. Another wrap & veggies for lunch today - this time is tofu “egg” mayo & cress with salad 😍 For this I mashed tofu with salt, pepper, turmeric & black salt, then mixed in vegan mayo & a bit of vegan salad cream because I love a mix of both. Best vegan Alfredo sauce⠀ .⠀ By @elavegan .⠀ Recipe:⠀ Servings: 4⠀ ⠀ Ingredients:⠀ 1 pound cauliflower cooked (small to medium sized head)⠀ 250 g mushrooms⠀ 3 cloves of garlic⠀ 2 tsp vegetable oil (divided)⠀ 1 cup vegetable broth or water⠀ 1/4 cup hemp seeds shelled (*see notes)⠀ 1 tbsp nutritional yeast⠀ 1 tsp onion powder⠀ 1 tsp garlic powder (optional)⠀ Sea salt to taste⠀ 1/4 tsp pepper⠀ Pinch of smoked paprika⠀ Pinch of chili powder (optional)⠀ 8 oz pasta of choice (e.g. gluten-free pasta)⠀ Fresh herbs to garnish (e.g. parsley)⠀ Instructions⠀ Check the video below for easy visual ⠀ instructions:⠀ Cut the cauliflower into florets and cook it in salted water for about 10-15 minutes or until fork tender. Drain the water.⠀ In another pot cook pasta of choice as per the instructions on the package.⠀ While the cauliflower and pasta cooks, slice mushrooms and finely mince the garlic.⠀ Heat 1 tsp of oil in a skillet and add the garlic. Greek couscous salad with vegan kebab pieces! 🥗Who else is drooling right now...🤤 - Follow @kingofveggie Follow @kingofveggie - By @thezestylime - Greek couscous salad 🥗 160g dry couscous 200ml boiling water 3 vine tomatoes 1/2 large cucumber 1 small red onion 1/2 cup kalamata olives 1/2 cup cubed vegan feta (@violife_foods) 2 tbsp extra virgin olive oil 3 tbsp red wine vinegar 1 tbsp dried oregano salt & pepper to taste vegan kebab pieces (i’ve used @vivavivera) 1. fry kebab on medium until cooked and crispy. set aside. 2. measure out dry couscous into a bowl, a little less than 1 cup. the couscous will expand with water so make sure the bowl is big enough! add boiling water, mix well, and cover for about 5-7 minutes. 3. in the meantime, prep your vegetables. cut tomatoes into quarters, then halve each quarter again. slice cucumber lengthwise down the middle, then cut into half moon slices. thinly slice red onion, and cut vegan feta into small cubes. 4. mix all ingredients for dressing together in a small bowl- extra virgin olive oil, red wine vinegar, and dried oregano. 5. once the couscous is fully cooked, fluff it up with a fork and mix in dressing. season with salt and pepper to taste (keep in mind that both the olives and vegan feta will be salty!) 6. add plant kebab pieces, tomatoes, cucumber, red onion, olives, feta, and stir together well. dress with an extra drizzle of olive oil, splash of red wine vinegar, and sprinkle of oregano if you like, as well as some freshly ground black pepper. serve right away or chill for a few hours in the fridge to allow the flavours to mingle. Savory and comforting MISO SESAME NOODLE BOWL 🍜 Gluten-free, vegan, and whipped up in 25 minutes or less. Made with gluten-free noodles, miso sauce, mushrooms, chickpeas, and topped with sesame seeds by @itsallgoodvegan⠀ ⠀ Follow us @foodswithvalue for Daily vegan recipes⠀ .⠀ 3 Tbsp soy sauce or tamari, I used gluten-free⠀ 1 Tbsp red miso paste ⠀ 1 tsp sriracha add more a spicy sauce ⠀ 1 tsp garlic powder ⠀ 2-3 Tbsp vegetable stock, substitute for water ⠀ 1 tsp cornstarch⠀ .⠀ Miso Sesame Noodles⠀ 1 tsp sesame oil, substitute for water ⠀ 1 package (8 ounces) white mushroom, chopped ⠀ 1 cup of chickpeas, drained and rinsed⠀ 8 ounces of angel hair noodles, cooked according to the back of the package.⠀ .⠀ Garnishes⠀ Black or white sesame seeds⠀ Crushed red pepper⠀ green onion, chopped⠀ .⠀ In a medium bowl combine all of the sauce ingredients together and whisk.Heat a large pan or wok over medium heat. Once hot, add the oil and mushrooms. Saute for 3-5 minutes, or until the mushrooms let out their juices, stirring frequently. Add the chickpeas to the pan and cook for 2 minutes. Combine the cooked noodles and sauce and mix well ( for a couple of mins). Immediately take the pan off the heat and divide it into bowls. Garnish with sesame seeds, crushed red peppers, and chopped green onions. Leftovers will last 2-3 days in the fridge. STICKY SESAME CRISPY TOFU . #veganrecipe by @alexafuelednaturally .⠀ .⠀ Ingredients:⠀ Crispy tofu: ⠀ 1 package Extra firm tofu ⠀ 1/4 cup corn starch ⠀ Sesame sticky Sauce:⠀ 1 teaspoon avocado oil ⠀ 2 garlic cloves minced ⠀ 2 tbsp organic brown sugar or coconut sugar ⠀ 2 tsp rice vinegar ⠀ 1/4 cup + 2 tbsp Tamari or soy sauce⠀ 1/4 cup organic ketchup⠀ 1 tsp toasted sesame oil⠀ 2 tbsp sesame seeds⠀ Other ingredients:⠀ sliced green onions for garnish ⠀ White or brown rice to serve⠀ ⠀ Method:⠀ 1.Remove tofu from package and wrap in a couple paper towels gently pressing on tofu to release a bit of the moisture. Cut tofu into cubes then roll each tofu cube in corn starch making sure each side is coasted. ⠀ 2.Bring a hot skilled to medium heat and add enough avocado oil to cover the bottom of the pan. Once hot, add cubed tofu and cook on each side until golden & crispy. Season with salt and once removed from pan place on a plate lined with paper towel.⠀ 3. In a bowl combine all sauce ingredients (except garlic & avo oil) mix to combine. Heat 1 tbsp of oil in a large pan over medium heat. Add the minced garlic and cook for 30 seconds. Add the sauce mixture and bring to a simmer. Cook for 3-4 minutes or until just thickened.⠀ 4. Add the crispy tofu to the pan and toss to coat with the sauce. Pasta is just a constant mood for me. Not sure what to make? Pasta. Happy? Pasta. Moody? Pasta yet again. Creamy veggie pasta 3 cups pasta of choice 1 medium onion, chopped 2 cloves garlic, minced 1 medium carrot, peeled and chopped 1.5 cups mushrooms, chopped 1/2 cup coconut milk from a tin 2 tbsp tamari Juice of 1/2 lemon 2 tbsp nutritional yeast 1 tbsp tahini 1 tbsp cornflour Salt to taste Black pepper to taste Cook the pasta according to packaging instructions. Meanwhile, add the onion, garlic and carrot to a non-stick frying pan. Cook for 3-4 minutes, until they begin to soften before adding the mushrooms. Continue to cook for another 5 or so minutes, until the mushrooms shrink down. Add the coconut milk, tamari, lemon juice, nutritional yeast, tahini and cornflour. Stir until the sauce begins to thicken. Drain the pasta and transfer to the frying pan. Creamy Vegan Polenta with Mushrooms and Spinach by @biancazapatka Follow us @healthy.organic.food for daily vegan recipes Ingredients Polenta (Basic Recipe) 1 cup polenta (150 g) 3/4 cup full-fat coconut milk (200 ml) 1 1/4 cup vegetable broth (300 ml) 2-3 tbsp nutritional yeast flakes or vegan parmesan cheese (optional) ⠀ Mushroom Spinach Topping 1 tbsp olive oil or coconut oil 1 onion sliced 7 oz mushrooms (200 g) sliced 2 cloves garlic minced 1-2 tbsp soy sauce 2 cups spinach roughly chopped salt, black pepper to taste 2-3 tbsp pine nuts (options see above) ⠀ Instructions Polenta Bring coconut milk and vegetable broth to a boil in a pot. Stir in polenta by using a whisk.⠀ Reduce heat to a low simmer and continue to whisk for 1-2 minutes to avoid lumps.⠀ Then cover and let simmer for about 10 minutes (or according packaging instructions), stirring occasionally. (If the polenta thickens too much you can add additional milk and/or water and stir to thin.) Once the Polenta is creamy and smooth, remove from the stovetop. Add nutritional yeast or vegan parmesan and stir (optional). Mushroom Spinach Topping Heat oil in a skillet or pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown. Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste. Add a splash of fresh lime juice, if you like. Toast pine nuts in a small pan without oil until lightly browned. Serve polenta with mushrooms, spinach and pine nuts. Vegan Soup Dumplings By @thevegansara . Follow us @niceveganrecipes for Daily vegan recipes Sooo here’s the recipe . Broth 2 cup water, 1 tbl tamari, 1 tbl veggie broth, 1 1/2 tsp agar agar Wrapper 200 g flour (double zero flour recommended but you can use all purpose flour), 2 tsp neutral oil, 1/2-3/4 cup hot water. Filling 4 ounces store bought pre pressed extra firm tofu (1/2 cup when packed), 1/4 cup dried shitaki mushrooms (6-7 ct) hydrated in cold water then finely chopped, 3 green onions finely chopped (whites & light green parts), 1/4 cup each of cabbage & carrots shredded & finely chopped, 1/2 tbl sesame oil, 1 tsp dark soy sauce, 1/2 tsp salt, 1/2 tsp sugar, 1/4 tsp white pepper, 1/4 tsp garlic powder, 1/4 tsp ginger powder Makes 20-22 dumplings. Instructions 1️⃣ On stovetop bring broth ingredients to a boil for about a minute while stirring. Pour in a shallow pan. Put in fridge at least one half hour till agar sets & is firm. 2️⃣In a food processor add flour, process on high, slowly add hot water & oil. It will soon form a smooth ball. Then knead with hands a couple of minutes. Wrap with kitchen towel & rest 1 hr 3️⃣ For the filling mash tofu in the a bowl till crumbly. Add the rest of filling ingredients. 4️⃣Once agar has set use a knife to finely dice into tiny cubes. Add half of the agar to the filling. 5️⃣ Cut dough into three equal pieces. Take one piece, wrap remaining pieces. On a well floured surface, roll into a log about 3/4 in thick, cut into 1 1/2 in pieces. Roll each piece into a 4 in disk leaving the center thicker than the edges. It honestly feels strange posting plates of food when there are so many deeper issues many are walking for and peacefully protesting for - related to justice and injustice in America. . . . . . I am reminded that there are inequalities in health as well: there are disproportionately higher death rates of black mothers in the US than of other races, there are higher rates of numerous preventative diseases. So in the midst of everything going on right now my part to play is to help lower health inequalities and injustices in health outcomes, to break cycles of generational diabetes, premature death related to preventative diseases by showing there is another way to live, to eat and to prosper.
