Filling (makes 2 servings) 1 medium sized sweet potato 1 yellow bell pepper (or sub any veggies you like) 230g black beans (already boiled) 100g spinach 1/2 tbsp olive oil (or avocado oil) salt black pepper 1 tsp paprika powder . . For serving GF or corn tortillas Vegan sriracha mayo (check it to be gf or make your based on cashews, tofu or avocado + mustard + sriracha) . Do this Preheat the oven to 200 C (392 F). After it was done cooking, I added yellow peppers, onion, tomato, red beans and sprouts @brotosuae . I mashed some avocado with lemon and salt. When I started rapping the tortilla wraps, I added avocado first, vegan cheese and quinoa mixture. You can cook these in the oven for giving them some color. Your eyes are not deceiving you.....this is absolutely stir- fry on the go!😌 This peanut stir-fry burrito was inspired by my favorite thai burrito from Loving Hut in Sandy springs! I simply stir fried my favorite veggies in sesame oil, added marinated tofu and brown rice and coated everything in a peanut sauce that I would seriously put on everything!🤤 I wrapped all this vegan goodness in @missionfoodsus sundried tomato wrap! It was so good......I may or may not have had two 💁🏾‍♀️! Lol I still want to work on perfecting this recipe (although I'm pretty close) before I'm ready to share....so be patient! 𝗩𝗘𝗚𝗔𝗡 𝗕𝗨𝗥𝗥𝗜𝗧𝗢𝗦🌯💚✨⁣ ⁣ ⁣ ⁣ so ive decided to change my "𝐰𝐡𝐚𝐭 𝐢 𝐞𝐚𝐭 𝐢𝐧 𝐚 𝐝𝐚𝐲" vids a little bit as people are asking for methods, recipes ect. also i only have 1 sometimes 2 meals a day so i thought i would go into more depth of what i eat for those meals. also. 𝗵𝗶. long time no see i know, im soz but yano L I F E.⁣ ⁣ anyway... obviously i start my day with a soya/oat latte🥰☕⁣ ⁣ and then for lunch i used @feedmevegan.uk chilli to make a burrito. i have an OBSESSION with burritos at the moment. i am just loving a spicy mexican floury FAT burrito filled with rice, beans, avo, peppers, onions, sweetcorn and salsa😍 just hello.⁣ ⁣ and for a sweet dish afterwards i indulge into my girls @jodiandersonuk @feedmevegan.uk 𝗖𝗛𝗢𝗖𝗢𝗟𝗔𝗧𝗘 𝗣𝗜𝗘. yo, fuck me uppppp. its the best vegan chocolate dessert sold in retail shops out there. its so creamy, doesnt over power with coconut, doesnt taste artificial what so ever. its absolutely unreal and worth the £3.80 and I'm not even being biased its ridiculously good🥧💕✨⁣ ⁣ (also i popped it in the microwave for a few secs and it was like the inside of a chocolate fondant. would highly recommend😍)⁣ ⁣ Hope you enjoyed this one. please let me know what you think and comment is you have any requests!💚

MY FAVORUITE VEGAN MEAL 🥑🌯⁣ ⁣ I have somehow only recently discovered how much I LOVE burritos!⁣ ⁣ So, I wanted to share my favourite vegan burrito recipe that is just 200 calories!⁣ ⁣ Inside of a Tumaro's Ancient Grain wrap (60 cals, 2f, 13c, 5p) put...⁣ ⁣ 1/2 Avocado 🥑⁣ 1 cup of Spinach 🥬⁣ ~ 1/2 cup of black bean/red onion/corn mix***⁣ 1/4 Baked sweet potato⁣ 2 tbsp Green Goddess dressing (Trader Joe's - but any salad dressing really will do)⁣ ⁣ *** One my fav meal prep tricks is to saute a cannof black beans, a bout⁣ 1 1/2 to 2 cups of corn and roughly 1/4 cups of chopped red onion⁣ ⁣ ->Put it all in a saucepan and saute with olive oil! Cook until warm!⁣ ⁣ I made this for a friend and they said "I had no idea vegan food could taste so good!" 👍🏻⁣ ⁣ Let me know if you try this recipe and tag me!⁣ ⁣ What's your favourite meal? 🌱

For lunch I made a delicious vegan burrito that was so fast and easy. This is how I made it: 1. First I sautéed chopped mushrooms, and then added a fajita vegetable mix that has chopped peppers and onions. 2. Next I added half a jar of chickpeas and seasoned it all with paprika and curry spice. 3. Then I spread a microwaved sweet potato on a flaxseed wrap and topped it with spinach. 4. Butternut squash and black bean burritos 🌯 1 butternut squash 1 white onion 200g cooked brown rice 175g tomatoes 1 tin black beans 2 tsp smoked paprika 2 tsp garlic granules 1 tsp onion granules Sprinkle chilli flakes to taste Salt and pepper to taste 2 tbsp nutritional yeast A couple of handfuls of grated vegan cheese of choice Couple of handfuls of spinach Large Tortilla wraps Guacamole and salsa to serve Cook the rice as per instructions and set aside. Peel and chop the butternut squash and roast in a little oil, salt pepper and garlic granules. I did mine in the air fryer but works equally as well on a baking sheet in the oven for around 25-30 minutes at 180C. Peel and dice the onion, and chop the tomatoes into small pieces. Fry off the onions in a large frying pan or wok with either a splash of oil or water if you're trying to reduce fat. Add the tomatoes and stir cooking until softened. Drain and rinse the black beans and add to the pan along with the roasted squash, cooked rice and all the seasoning and nutritional yeast. Add around 150-200ml water and let it simmer off until quite stodgy. Grate your cheese and add and melt into the mixture at the end. Serve on a bed of spinach in a wrap and fold and serve with guac and salsa.

Vegan Mac n Cheese Burrito! 🤓❤️ made from scratch even the burrito wrap- our homemade recipe below! So my husband had a vegan mac n cheese burrito and he absolutely loved it.. I really love seeing my husband happy with the food he’s eating but it was kinda pricey so I was determined to make my own version of it for him. 🤓❤️ see our recipe below! (I also made crispy cauliflower and mushroom). 🌱Vegan Mac n Cheese burrito recipe: What’s inside: Mac n cheese, Cajun cauliflower bites, and Cajun crispy mushroom. 🌱The burrito wrap: this is homemade. I just mixed all purpose flour, with yeast (mixed with water and set aside for 5 mins), warm water, and salt. Knead and let it rise. I waited overnight. Then roll it out to make flat burrito wraps! Cook them in a hot non stick pan and set aside. 🌱Mac n Cheese: use a blender to mix boiled potatoes, boiled carrots, raw garlic, corn starch, warm soy milk, salt, garlic powder, Spanish paprika and a little bit of vegetable oil (coconut or canola) . That’s it for the vegan cheese! Then mix this with cooked macaroni. 🌱Cajun cauliflower and Cajun mushroom: cut cauliflower and mushroom (any mushroom of choice.. please don’t use mushrooms in cans for this). Prep 2 bowls for the batter - bowl 1 is just soy milk and corn starch, then bowl 2 is flour, salt, pepper, bread crumbs and garlic powder. Dip mushroom/cauliflower in bowl1, then bowl2, then do it again (basically do it twice for every piece of mushroom or cauliflower). Then pan fry, drain and set aside. Once oil is drained, season mushroom and cauliflower with Cajun seasoning. 👌🏾 Make your burritos! 🥳🥳🥳 *i added red chili pepper on mine just to have some extra kick on it 😉😋 *also my husband doesn’t like cauliflower so I was a bit nervous about the Cajun cauliflower bites, but once he had a bite of it, he thought they were cheese balls 🤪 lol and he loved it so I’m glad he loved this cauliflower dish. SOYRIZO BURRITO 🌯⠀ ⠀ Lately I’ve been craving all things Mexican - tacos, enchiladas, quesadillas, burritos... I’m aware that these are not authentic Mexican foods, but you know what I mean. I’ve been whipping up these soyrizo burritos when I work from home, and they’re super easy and absolutely delicious! The @traderjoes soyrizo has been one of their best sellers for a long time, and is such a good meat substitute for any of the Mexican dishes I listed above. Pick it up next time you’re out! ⠀ ⠀ RECIPE (makes 1 burrito):⠀ • Sauté 1/4 white onion in a little bit of oil over medium heat until browned. Add 1/4 of the soyrizo and sauté until browned. ⠀ • heat up black beans and rice (I microwaved mine for 30 seconds) ⠀ • heat burrito sized tortilla on a pan to just slight warm, about a minute each side. Fill with your soyrizo mix, rice, beans, avocado, and some cheese if you’d like. Do your best burrito roll (I’m not good at this) and press on a hot pan to crisp up the outside of the burrito⠀ ⠀ Voila! This is quick and easy and ideal if you have some extra rice and beans already cooked that you need to use. For day 5 of the Dutch Soygirls' Wrap Week I have some classic burritos for you. I made these so often and gave them my own twist by now so I forgot who posted the original version, I'm sorry. It's super simple and easy to make though! Also pardon my English, haha. . I will put the ingredients for my own version below: • kidney beans • A red & a yellow bell pepper • corn • An onion • Some garlic • Herbs and spices of choice • Iceberg lettuce • Wraps • Garlic sauce Cut the onion, garlic, bell peppers and rinse the beans and corn. Sauté the onion in a pan with olive oil. Add the garlic and bell pepper and let it cook for a few mins. Then add the beans and corn and let it cook for a short while again. Warm up the wraps (30 seconds in the microwave will do). Add the filling, iceberg lettuce, garlic sauce and ROLL! Bon appetit! This burrito bowl had elements that were super easy to make up and tasted very fresh, give it a try next time you’re craving chipotle ☺️ Recipe below • • Cooked white rice and red quinoa seasoned with lime and cilantro Homemade guacamole Homemade picodegallo Drain a can of black beans, add 1 tbsp cumin, 1/2 tsp cayenne pepper, 1/2 tsp onion powder and simmer over medium heat for 15 minutes Lastly the veggies, cut up purple onion, red and green peppers and season with onion powder, cumin, cayenne, salt, pepper, and chili flakes I used about 1 tsp of each except for salt, which I added just a dash of.
