Vegan blueberry pancakes. When you throw caution out of the wind and dont care about a little carb loading. A filling breakfast enjoyed with frozen berries and drizzled with loads of honey and sliced bananas. How to make pancakes 1. In a blender add 2 bananas and 200ml almond milk and blend 2. In a bowl sift 100g all purpose flour, 1tbsp powdered white sugar, 2tbsp powdered brown sugar, 1tsp baking powder, 1tsp salt and mix the dry ingredients together 3. Add banana milk shake to the bowl and mix well. Fold in some blueberries 4. 🌱Lentil potato & carrot patties (swipe for ingredients) Oil-free🌱Protein and veggie loaded! Quarantine friendly seems an odd thing to say at this point. I’m in quarantine so they pretty much have to be!!! And they’re delicious 😋. ✅Recipe (makes about 14): Simmer 1 cup rinsed red lentils in 3-1/2 to 4 cups water (or according to packet directions) until just cooked (10-15 minutes). Drain well to remove excess water. ✅Meanwhile, peel and grate 2 medium potatoes. Use hands to squeeze out as much water as possible from grated potatoes. ✅Grate 2 medium carrots. Use hands to squeeze out as much water as possible from grated carrots. ✅In a large bowl, combine cooked drained red lentils, grated potatoes, grated carrots, 1 small diced yellow or red onion, 3 minced garlic cloves, 1/2 tsp turmeric, 1-1/2 tsp garlic powder, 1-3/4 tsp ground coriander, 2 tsp ground cumin, salt to taste. ✅Mix with hands to incorporate. ✅Add 3/4 cup whole-wheat or all-purpose or gluten-free flour and use hands to mix. If mixture is still very moist, add more flour, but no more than 1 cup flour total. ✅Use hands to form patties. ✅Either pan fry in a non-stick skillet with a little olive oil or bake on non-stick baking sheet at 375F until golden brown (about 20-25 minutes), flipping half way. Good with spicy sauce! A bowl to brighten up this miserable weather 🌧 This was a standard @awesomesupps choc caramel mug cake on the bottom and then nice cream made of frozen mango 🥭 frozen peaches 🍑 and frozen apricot 😍 I didn’t think this was going to come out thicccc as I didn’t have much mango left but was shook it as came out thicker than a snicker 🤭 I topped it with 15g granola, desiccated coconut 🥥 half a @realhandful sea salt caramellow bar and 3 @nudiesnacks salted caramel brownie protein balls (both kindly gifted!!!) 🙌🏼 Definitely a fab combo and with 31g protein 💪🏽 - - I have the worlds worst headache this morning but probably down to a lack of sleep 💤 I started reading Why I’m No Longer Talking To White People About Race by Reno Eddo-Lodge 📖 last night and although I’ve only read the first chapter “Histories” so far it’s proving an interesting read. I think the paperback copy is sold out on amazon but I got mine on Kindle 📚 And then instead of going to sleep I went on Tik tok (bad decision - no one only scrolls for 5min) and then ended up scrolling through the “black lives matter” hashtag and watching all the protests going on right now for hours - it was just so captivating. I’m not gonna lie I don’t think I’ve ever cried before while on Tik tok but watching those videos was so emotional. I’d 100% recommend having a look.

(and it probably has never been easier as lots & lots of useful informational resources are being shared). -not everything the media says is true nor is it the full picture. -listening to people who experience racism is needed. -donating to organisations which dismantle oppression is helpful. -taking action beyond social media is vital. (eg recognizing racism in our daily lives & having conversations about it). -not having experienced racism ourselves is a privilege, not an excuse.

Nothing quite like starting your morning on a sweet and creamy guilt-free note. I love chocolate but its always been something that’s a treat for me because it can be so unhealthy. But with this smoothie bowl inspired by @pickuplimes I can indulge my chocolate cravings while still being healthy. Packed with the goodness of fruits and veggies this smoothie bowl is simply delicious! It’s also perfect for dessert or an afternoon snack. Dosi per 8 pancakes circa: ~170 gr di farina 00 ~ 30 gr. zucchero ~ 5 gr di lievito vanigliato ~ 130 ml del latte vegetale che preferite ~ potete farcirli con ciò che preferite (marmellata, Nutella, sciroppo d'acero, frutta) io ho utilizzato sciroppo d'acero, banana e fragole. ℙ𝕣𝕠𝕔𝕖𝕕𝕚𝕞𝕖𝕟𝕥𝕠: In una ciotola mettiamo tutti gli ingredienti secchi (quindi zucchero, farina e lievito) mescoliamo un po', poi aggiungiamo il latte a poco a poco, mescolando con una frusta fino a quando la pastella sarà liscia e senza grumi. Mettiamo una padella antiaderente sul fuoco a scaldare. Una volta calda, abbassiamo la fiamma e preleviamo una cucchiata di pastella di pastella e la posiamo sulla padella, cercando di allargarla per ottenere un disco di circa 7 cm di diametro. Appena si formeranno le bolle in superficie, facendo molta attenzione giriamo il pancake (deve cuocere circa 2 min. per lato). Dosi per 8 pancakes circa: ~170 gr di farina 00 ~ 30 gr. zucchero ~ 5 gr di lievito vanigliato ~ 130 ml del latte vegetale che preferite ~ potete farcirli con ciò che preferite (marmellata, Nutella, sciroppo d'acero, frutta) io ho utilizzato sciroppo d'acero, banana e fragole. ℙ𝕣𝕠𝕔𝕖𝕕𝕚𝕞𝕖𝕟𝕥𝕠: In una ciotola mettiamo tutti gli ingredienti secchi (quindi zucchero, farina e lievito) mescoliamo un po', poi aggiungiamo il latte a poco a poco, mescolando con una frusta fino a quando la pastella sarà liscia e senza grumi. Mettiamo una padella antiaderente sul fuoco a scaldare. Una volta calda, abbassiamo la fiamma e preleviamo una cucchiata di pastella di pastella e la posiamo sulla padella, cercando di allargarla per ottenere un disco di circa 7 cm di diametro. Appena si formeranno le bolle in superficie, facendo molta attenzione giriamo il pancake (deve cuocere circa 2 min. per lato). ONE POT VEGAN MUSHROOM STROGANOFF 🍄 Creamy, delicious and ready in 30 minutes 😍 by @sweetsimplevegan Follow us @vegansnacksrecipes for Daily vegan recipes ⁣⁣ Ingredients⁣⁣ * 1/2 medium yellow onion, finely⁣⁣ * 6 garlic cloves, finely minced⁣⁣ * 10 oz. mushrooms sliced⁣⁣ * 3 tbsp all-purpose flour⁣⁣ * 1/2 cup vegan dry white wine (we used a Sauvignon Blanc)⁣⁣ * 2 tsp fresh thyme (stems removed)⁣⁣ * 2 tsp tamari (or soy sauce)⁣⁣ * 2 bay leaves⁣⁣ * 2 tbsp nutritional yeast⁣⁣ * 1/2 tsp dijon mustard⁣⁣ * 4 cups vegan beef broth⁣ (or vegetable broth) ⁣ * 8 oz. rotini pasta⁣⁣ * 1/2 cup vegan sour cream * Salt and pepper, to taste⁣⁣ * Fresh parsley, finely chopped (for garnish)⁣⁣ ⁣⁣ Instructions ⁣⁣ 1. In a medium pot or pan over medium heat, add in 2 tablespoons of vegetable broth . Once warmed, add in the onions and garlic, and sauté for about 3 minutes, stirring often, or until fragrant and translucent. 🍌This porridge was UNREAL 🍫 I followed the chocolate and banana oatmeal recipe from @AvantGardeVegan’s new cookbook ‘Plants Only Kitchen’ 🌱 I’ll do a full review of the book up on my blog soon but just to say the couple of things I’ve tried from it so far have been great 👍 Gaz’ books are a little more ‘chefy’ but this book has lots of pretty accessible recipes in that I’m looking forward to trying 😍 This recipe had hazelnuts in which I swapped for @Pipandnut almond butter, because it’s what I had to hand, and also I have a minor allergy to hazelnuts as they make my mouth and throat get really itchy. Same with skin-on almonds, and some soft fruits (so sad I can’t eat nectarines, peaches etc 😭). Never miss a meal. . . . So as it’s the end of the week all my fresh green smoothie foods are gone. . So luckily as every day I freeze one half of the smoothie I make, I can simply just pop to my freezer stash. . All I do is bung it on defrost in the microwave for 3 minutes then using my pick axe aka a spoon ha...I scoope if out and plop it in my @nutrininjauk smoothie cup with a banana. . Then I blend and go. . Alternatively I sometimes just pop a frozen one in the fridge overnight so it’s more or less defrosted by the morning but then again I am not massively functional in the evening so most of the time I rely on my friendly yet efficient microwave. . SNICKERS OVERNIGHT OATS You’re not you when you’re hungry so why not try this snickers breakfast in the morning! This is a super simple recipe that you can make the night before and takes no time to prepare. 1️⃣ Soak your date in hot water for 15 minutes (just enough to cover the date). 2️⃣ In a bowl mash your banana 🍌 with a fork and then stir in all the other ingredients apart from the chocolate chips (leave a few nuts for decoration). 3️⃣ When the date is done ✅ soaking mash with a fork in the water to create a paste and combine with the remaining ingredients. 4️⃣ Cover and place in the fridge overnight or for at least 3 hours. 5️⃣ Top with peanuts and chocolate and dig in! ____________________________________________ Make sure you hit SAVE and leave me a comment letting me know what other recipes you’d like to see.

A yellow watermelon! Apparently these are the natural fruit in their native countries - we were expecting red! The yellow is much more delicious though! In my stories/highlights I’m keeping a weight loss journey if anybody is interested in following - it’s a record of how I healthily lose my pregnancy weight. At the moment I’m trying to figure out the perfect breakfast - as I realised yesterday, oats and fruit is too hard on my digestion now after a long period of detoxing and healing. Let’s go with a mango, turmeric & Maca smoothie bowl .. smoothies are our go to quick breakfast when time is short but we want a nutritious and filling breakfast. Lentil Moussaka by @elavegan 🧡 . Ingredients For the base: 2 pounds potatoes, peeled (1 kg) 3 large eggplants Olive oil to brush Sea salt & pepper to sprinkle For the lentil mixture: 3 cups of cooked lentils (600 g) 2 cups tomato purée (450 g) 1 cup chopped tomatoes (150 g) 1 tbsp olive oil 1 large onion, chopped 2 cloves of garlic, minced 2 bay leaves 1-2 tsp dried thyme 1 tsp oregano 1 tsp paprika 1 tsp coconut sugar or brown sugar pinch of cinnamon Sea salt & pepper to taste For the béchamel sauce (or use mashed potatoes): 2 tbsp vegan butter (28 g) 2 cups plant-based milk (480 ml) 3 1/2 tbsp cornstarch (28 g) 2 tbsp nutritional yeast flakes Sea salt & pepper to taste Pinch of nutmeg Vegan cheese to taste (optional) . Instructions Preheat oven to 390F/200C and prepare two baking sheets with parchment paper. Slice each eggplant lengthwise into 4 pieces. Cut the potatoes into 1/2 inch (1 cm) thick slices. Arrange all slices in a single layer on the baking sheets and brush lightly with some olive oil, sprinkle with salt & pepper. Bake in the oven for about 20 min or until lightly brown. Meanwhile, heat 1 tbsp olive oil in a skillet over medium heat. Add the onion & garlic and sauté for about 4-5 min. Add the tomato purée, chopped tomatoes, all spices, and salt & pepper to taste. Finally, add the cooked lentils and let simmer on low heat for about 5 minutes. For the béchamel sauce, add the plant-based milk to a pan/skillet. Mix in the cornstarch, nutritional yeast, salt and pepper, and whisk. Add the vegan butter and bring the mixture to a boil. Let simmer on low heat for a few min until it thickens. Whisk continuously. Remove from heat. Grease a 13"x9" (33x23 cm) or larger baking dish and arrange half of the potato and eggplant slices on the bottom of the baking dish. Top with the lentil mixture, followed by the remaining potato/eggplant slices (see photo above in the blog post). Pour the béchamel sauce on top and spread evenly. Add vegan cheese to taste (optional). Bake in the oven for about 30 min or until golden brown. Garnish with fresh herbs. Enjoy!
