DIRECTIONS 🔹Season chicken breast as desired with your favourite seasoning/salt/spices. I use garlic salt, seasoning salt, and pepper. And I love a little bit of steak seasoning on my chicken! 🔹In large pan/skillet, add a few splashes of olive oil and fry/sear chicken breast cooking well on both sides until completely ready and cooked throughout 🔹Remove chicken breast from pan/skillet 🔹In same skillet, on low to medium heat melt better and add garlic. Mix well for approximately 1 minute 🔹Turn up heat to medium and immediately add white wine. Bring to a boil and simmer for approximately 8-10 minutes until wine begins to evaporate and thicken into a glaze, and reduces to approximately 3-4 tablespoons 🔹Add chicken stock and bring to a simmer for 5-7 minutes stirring frequently 🔹Return chicken breast to pan for approximately 3 minutes and with a spoon pour jus over the top of each chicken breast coating well 🔹Remove from burner and set aside for 3 minutes. Healthy Recipe: "Snickers" bar from @midlifekitchen⁣ We were drooling when we saw this healthy twist on our favorite chocolate/salty/peanut treat. 😋 ⁣ These treats are delicious, good for you (in small quantities) and easy to make. Would you make them?⁣ ⁣ 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 ⁣ ⭐75g roasted, salted peanuts⁣ ⭐50g raw cashews, unsalted⁣ ⭐100g oats⁣ ⭐8 Medjool dates, pitted⁣ ⭐10g sunflower seeds⁣ ⭐10g chia seeds⁣ ⭐ 2 tbsp coconut oil⁣ ⭐2 tbsp date syrup (or substitute honey/maple syrup)⁣ ⭐75g good quality chocolate chips⁣ ⁣ 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀⁣ 1. Roughly chop half the nuts and set aside.⁣ 2. Put the rest of the nuts and the oats into a blender or food processor and blitz to a breadcrumb texture. Add the dates and blend until fairly uniform in appearance (no big lumps).⁣ 3. Place the mixture in a large bowl, add the chopped nuts and seeds and combine well.⁣ 4. In a small saucepan gently heat the oil and date syrup until runny and then pour into the nut mixture. Combine well and leave to cool (can pop in the fridge to speed this up).⁣ 5. Now add the chocolate chips and stir through to distribute evenly.⁣ 6. Press into a tin (15x20cm approx) lined with a strip of baking parchment, leave the ends poking out so it’s easier to lift out of the tin later. Place the tray in the freezer for an hour or so to firm up, remove from the tin and cut into bite sized squares. Place the squares in an airtight container, with baking parchment between the layers to stop them sticking together. These are best eaten straight from the freezer.

My first memory of having fried bananas goes way back in time and the taste has since evolved. I know only the kannada term for it ‘balen kajjaya’, it was mashed bananas mixed with flour and sugar and then deep fried. It was the post school healthy (not healthy) snack that my mom kept us on. I was later introduced to pazhampori and boy, are they amazing or are they amazing. I love the nendran variety of bananas. The chips and the fritters made from them are the best! And finally, caramelized bananas are now my new favourite. Traditionally, I have had freshly cut bananas and mangoes in the custard, never cooked fruits. So this is a first and they taste great. Interesting take on a warm salad. I cooked up some quinoa and baked sweet potato as part of the meal prep I did Sunday. I had a bottom layer of quinoa on top of that like the Buddah bowl idea, placed a portion of baked sweet potato, a medley of black lentils that I sauteed in taco seasoning with zucchini and tomato, a couple dollops of salsa and a little bit of black olives to complete the circle.. I topped it with sweet baby lettuce and combined it all together and this is what it looked like. It was delicious I will eat it again tomorrow!!!! LITTI CHOKHA on the barbecue for dinner last night🔥 I love having burgers, kebabs and vegetables on the bbq but this time I fancied something different. Now "litti chokha" is a popular vegetarian meal from the northern parts of the states of UP and Bihar in India. I grew up with this dish at home as my parents hail from those parts, so this one is close to my heart. My mum would bake them in the oven, but I went traditional this time cooking everything over charcoal. Trust me, makes a lot of difference 👍 Consider this meal like Indian Tapas with "litti" which are stuffed mini dough balls baked on hot charcoal then dipped in tremendous amount of 'ghee' or clarified butter. These are served with "chokha" or a variety of smoky relishes made from vegetables charred and baked alongside 😍 For my mini "litti chokha" dinner I served the "sattu" (roasted gram flour) stuffed 'litti' with "baingan chokha" (aubergine relish), "aloo tamatar chokha" (potato tomato relish) and mixed daal. 🌟 Smoky Sausage Casserole 🌟 Chop 6 sausages into chunks and brown in a pan with a little olive oil. Add a chopped red onion and 1 tsp lazy garlic and fry gently for a few minutes. Peel 1 carrot, 1 potato and 1/2 a swede and cut into small chunks. (FYI any root veg would work and I think I would swap out the swede with butternut squash next time as it cooks faster!). Add the root veg to the pan along with 2 tsp smoked paprika, 2 tsp runny honey, 1 tsp ketchup, 1 tsp American mustard, 1 tsp Worcestershire sauce, 1 tsp cumin and some black pepper. Stir well and add a can of chopped tomatoes, 300ml pork stock and 1/2 tin of mixed beans in water (drained). Simmer for 1 - 1.5 hours until the sauce has reduced and thickened and the veg chunks are soft. Add a little extra water if it becomes too dry. I served ours with some rice, asparagus and courgette but it would be delicious in a bowl with some crusty bread, or leave out the potato chunks and serve on top of a jacket potato. This made 2 adult portions, 2 toddler portions and a next day mum lunch! Whilst Oxford dictionary definitions are not entirely relevant to one’s nutritional understanding, the use of ‘small’ may hold relevance . . For example, for a fat loss seeking, lightly active 190cm male, weighing 95kg with a 15% deficit target of 2200 calories per day, some portions of the snacks on the left can equate to a quarter of his required daily intake before additional snacks and main meals . . For a fat loss seeking, lightly active 165cm female, weighing 80kg with a 15% deficit target of 1700 calories per day, some portions of the snacks on the left equate to a third of her required daily intake before additional snacks and main meals . . In both examples, such portion sizes may hinder adherence to a calorie deficit. What’s more, are they necessary? . . The salient variable in both these examples may well be one’s recognition of a calorie deficit target. This being a means to measure and align behaviour (consuming calories) with the fat loss principle (a calorie deficit). It could be argued that if there was awareness of the required deficit target, along with caloric volume consumed, that one would be more likely to manage portion sizes accordingly . . Perhaps main meals would be structured in a way in which large caloric volume of snacks was no longer necessary or caloric volume of main meals reduced. Perhaps there may be realization that satiety could still be achieved with smaller portions of the same enjoyed foods. KOREAN BEEF WITH COURGETTI ⁣ ⁣This one is always a winner in our house! I love anything that packs a punch with flavour and this certainly does that... plus it's quick and easy too! ⁣ ⁣Swapping out our usual sides for courgetti noodles kept the dish a little lighter but it's equally as good with some sticky rice or some rice noodles (our usual go-to). Before-after stuffed zucchini flowers! Breakfast was so delicious! YUM. Breaking the pattern of always having savoury. Feels good. Also feels good as this was made using gut friendly goodness! I want to SHARE the #recipe as I want your belly to be happy too today! RECIPE: 1 large frozen overripe banana 1 cup frozen cooked zucchini 2 scoops @greatlakesgelatin collagen 1/4 homemade coconut yogurt 1/2 tsp salt Camu camu, about 2 tsp METHOD: place all ingredients into #vitamix blender except the camu camu.Blend for 1 to 2 minutes. You will need a high powered blender as its thick like icecream. Yum. Once smooth, take about 1/4 out and blend some camu camu in. Then place both in a jar. I have on it's own but you can add granola. I also love replacing @loving_earth camu camu with @greennutritionals spiruluna about 1 tsp. . Have a beautiful day...oh and if you want me to do a video on making your own coconut yogurt please give me a yes 🙋‍♀️
