Creamy Vegan Polenta with Mushrooms and Spinach by @biancazapatka Follow us @healthy.organic.food for daily vegan recipes Ingredients Polenta (Basic Recipe) 1 cup polenta (150 g) 3/4 cup full-fat coconut milk (200 ml) 1 1/4 cup vegetable broth (300 ml) 2-3 tbsp nutritional yeast flakes or vegan parmesan cheese (optional) ⠀ Mushroom Spinach Topping 1 tbsp olive oil or coconut oil 1 onion sliced 7 oz mushrooms (200 g) sliced 2 cloves garlic minced 1-2 tbsp soy sauce 2 cups spinach roughly chopped salt, black pepper to taste 2-3 tbsp pine nuts (options see above) ⠀ Instructions Polenta Bring coconut milk and vegetable broth to a boil in a pot. Stir in polenta by using a whisk.⠀ Reduce heat to a low simmer and continue to whisk for 1-2 minutes to avoid lumps.⠀ Then cover and let simmer for about 10 minutes (or according packaging instructions), stirring occasionally. (If the polenta thickens too much you can add additional milk and/or water and stir to thin.) Once the Polenta is creamy and smooth, remove from the stovetop. Add nutritional yeast or vegan parmesan and stir (optional). Mushroom Spinach Topping Heat oil in a skillet or pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown. Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste. Add a splash of fresh lime juice, if you like. Toast pine nuts in a small pan without oil until lightly browned. Serve polenta with mushrooms, spinach and pine nuts. Vegan Soup Dumplings By @thevegansara . Follow us @niceveganrecipes for Daily vegan recipes Sooo here’s the recipe . Broth 2 cup water, 1 tbl tamari, 1 tbl veggie broth, 1 1/2 tsp agar agar Wrapper 200 g flour (double zero flour recommended but you can use all purpose flour), 2 tsp neutral oil, 1/2-3/4 cup hot water. Filling 4 ounces store bought pre pressed extra firm tofu (1/2 cup when packed), 1/4 cup dried shitaki mushrooms (6-7 ct) hydrated in cold water then finely chopped, 3 green onions finely chopped (whites & light green parts), 1/4 cup each of cabbage & carrots shredded & finely chopped, 1/2 tbl sesame oil, 1 tsp dark soy sauce, 1/2 tsp salt, 1/2 tsp sugar, 1/4 tsp white pepper, 1/4 tsp garlic powder, 1/4 tsp ginger powder Makes 20-22 dumplings. Instructions 1️⃣ On stovetop bring broth ingredients to a boil for about a minute while stirring. Pour in a shallow pan. Put in fridge at least one half hour till agar sets & is firm. 2️⃣In a food processor add flour, process on high, slowly add hot water & oil. It will soon form a smooth ball. Then knead with hands a couple of minutes. Wrap with kitchen towel & rest 1 hr 3️⃣ For the filling mash tofu in the a bowl till crumbly. Add the rest of filling ingredients. 4️⃣Once agar has set use a knife to finely dice into tiny cubes. Add half of the agar to the filling. 5️⃣ Cut dough into three equal pieces. Take one piece, wrap remaining pieces. On a well floured surface, roll into a log about 3/4 in thick, cut into 1 1/2 in pieces. Roll each piece into a 4 in disk leaving the center thicker than the edges. Lunch Time 😉🌱 Posted by @vegspirationfeed PEANUT SESAME NOODLES by @vegspirationfeed for Daily vegan recipes Good for 2-3 servings 180g dry rice noodles or other noodles ½ medium red onion, sliced into strips ½ cup sliced bell peppers, sliced into strips* 1/2 medium carrot, sliced into strips* 2 tbsp sesame oil (highly recommend, but feel free to use other oil) Chopped spring onions, for topping Sesame seeds, for topping note *veggies are really up to you! You can use what you have available! SAUCE ¾ cup warm water 2.5 tbsp peanut butter (I used slightly salted and sweetened peanut butter) 3 cloves garlic, minced 2 tbsp sesame oil (highly recommend, but feel free to use other oil) 2 tbsp maple syrup or other liquid sweetener, can be subbed with sugar 4 tbsp soy sauce, or to taste 1 tsp sriracha (optional), adjust according to desired spice CORNSTARCH SLURRY 1/2 tbsp cornstarch + 1 tbsp room temperature water, mixed into a slurry STEPS Pour boiling hot water over the noodles. Carefully break apart. Leave to sit for a few minutes until pliable and half-cooked. Drain the water afterwards. Mix all sauce ingredients EXCEPT the cornstarch slurry in a bowl until smooth. Adjust flavours based on desired taste. Set aside. In a large pan, heat the 2 tbsp sesame oil or other oil. Sauté the onions, bell peppers, and other veggies. Add in the tofu and other veggies you're using. Sauté until tender. Add in the noodles. Pour in the sauce while mixing the noodles. Cook for another 3-5 minutes on medium to high heat. Pour in the cornstarch slurry and mix well until sauce has thickened and is absorbed by the noodles. Turn off heat. Top with sesame seeds and spring onions, if using. ♥️EASY LASAGNA VEGAN RICOTTA ROLL UPS ♥️⬇️⬇️ Click on bio for our vegan book😋 ---- 10 ounce bag frozen spinach (optional) Lasagna noodles (I used GF ones) 2 tbsp olive oil 32 ounces marinara sauce 1 (14 ounces) container firm tofu Juice of 1 lemon 1/2 tsp salt 4 tbsp nutritional yeast 1/2 tsp garlic powder Fresh basil to garnish Instructions: 1. Preheat oven to 350F. Then cook your lasagna noodles! Undercook by 2 minutes. 2. Remove tofu from package and wrap tofu block in 2 paper towels. Squeeze for 10 seconds then break apart tofu into your food processor. To the food processor add salt, 2 tbsp olive oil, lemon juice, nutritional yeast and garlic powder. Pulse 6-10 times until you reach the consistency of ricotta cheese. Taste and adjust salt and seasonings as needed. 3. In a pan add frozen spinach (or MICROWAVE frozen spinach for 2ish minutes) and season with a small pinch of salt and pepper. Cook for 2-3 minutes m. Remove from pan and add to ricotta. I pulsed 3-4 times into the ricotta. 4. Spread marinara sauce sauce onto the bottom of a oven-proof skillet; set aside. (I use a cast iron) 5,Once lasagna noodles are cooked, drain then immediately drizzle with olive oil so they don’t stick together. Grab a lasagna noodles and Spread a couple spoonfuls ricotta mixture evenly along leaving the last inch bare. Roll up and place in the prepared skillet; repeat with remaining pasta noodles and filling. 5. Place into oven and bake for 10 minutes. 6. Serve immediately. FUSILLI WITH BUTTER BEAN & SWISS CHARD SOUP! . Food & 📸 by: @plantbased_matters Recipe link in bio above👆 Today's post is a bit different. What do you do with leftover soups? This is an arrangement of the Butrer Bean & Swiss Chard Soup I made. It's made with the same exact soup. The only difference is that this time the soup turns into pasta sauce for fusilli. Leftover Soups Peter (my husband and the photographer of Plant-Based Matters) and I wouldn't mind eating the same thing repeatedly. Especially, when it comes to soups, they always taste better the next day. So, I purposely make them in a large batch, enough to last for a couple of days. But I must admit, even the tastiest soup can be overwhelming to keep eating over and over, knowing that I'm actually craving for something else but must finish because you don't want to waste it. Well, you can also freeze it which I rarely do...not sure why :lol: Anyways, that's when I use a little trick (twist) with the leftover soup to give a complete makeover! Often times, Peter doesn't even realize that he's actually eating the same exact food! The Twist Here are some examples of what I actually do with leftover soups. Adding more liquid to simply change the consistency (when it's a thick soup) Using as pasta sauce without changing the flavor Using "as-is" Adding more liquid (water, veggie stock) Adding different seasonings, ingredients, or herbs to make pasta sauce Curry powder (yes, I use curry powder for making pasta sauce) Harissa Tomatoes Oregano Thyme Cumin powder Soy sauce Miso Tahini Adding the following ingredient(s) to make curry-style sauce then serve over a bed of grains Curry powder Garam masala Thai curry paste Coconut milk Obviously, some combinations may not work too well and others, not so much. It's all depending on what the original flavor is and what you're adding to it. For example, you wouldn't want to think of combining black bean soup with soy sauce or miso. But if it was minestrone, adding or miso would work (did you know the combination of tomatoes and miso is fantastic?) It's fun to use your imagination and go with your gut!

Creamy tahini pasta 🔥🍜🔥 . 2 cups pasta of choice 1 medium onion, chopped 1 clove garlic, minced 1 cup mushrooms, chopped 1/2 tin coconut milk 2 tbsp nutritional yeast 1 tbsp tahini 1/2 tsp salt 1/2 tsp cumin Juice of 1/2 lemon 3/4 cup green peas 1/4 cup vegan cheese (optional) Cook the pasta according to packaging instructions. Meanwhile, sauté the onion and the garlic with water or oil in a non-stick frying pan for 2-3 minutes, until translucent. Then, add the mushrooms, and cook for a further 5 or so minutes to allow them to soften. Add the coconut milk, nutritional yeast, tahini, salt, cumin and lemon juice. Stir everything together really well and allow to thicken slightly before. Adding the green peas and the pasta. If the sauce isn’t thick enough, add cornstarch or gluten-free flour. Crispy potatoes & mushrooms with avocado by @miss_gruenkern Follow us @veganplantsrecipes for daily vegan recipes Recipe 1½ lb yellow or red baby potatoes olive oil (just enough to coat) large pinch of ground black pepper ¼ tsp salt ½ tsp dried oregano ½ tsp lemon juice 1 tsp dried thyme 2 cloves garlic, minced ⠀ Instructions⠀ Preheat oven to 425°F. Wash potatoes and cut into halves. Place in a bowl, toss with salt, thyme, garlic, lemon juice, oregano and pepper. Bake for 25 minutes on a baking sheet lined with parchment paper. Remove from oven, rearrange potatoes and bake for another 5-10 minutes, until they're golden brown and crisp. ⠀ Roasted Mushrooms 2 pounds (900g) button or cremini mushrooms, washed, trimmed, and quartered 1/4 cup (60ml) extra-virgin olive oil Kosher salt and freshly ground black pepper 8 to 12 sprigs thyme or rosemary 2 tablespoons chopped parsley, chives, tarragon, or other fresh herbs ⠀ Directions 1.Adjust oven rack to center position and preheat oven to 375°F. Toss mushrooms with olive oil and season with salt and pepper. Transfer to a foil-lined rimmed baking sheet and spread into an even layer. Spread thyme or rosemary sprigs on top of mushrooms. Mee Siam (Stir-fried vermicelli)😋 - a spicy & tangy noodle dish made from thin rice vermicelli/bihon by @woon.heng Follow us @niceveganrecipes for Daily vegan recipes⁣ Recipe (yields 4-5 servings)⁣ 🌱Ingredients⁣ - 250g dried vermicelli/rice stick (or dried noodles)⁣ - 2-3 cups [250g] chopped cabbage⁣ - 1 medium carrot, sliced⁣ - 4oz firm tofu (optional) - pressed, pan-fried & seasoned with salt ⁣ - 2 cloves garlic, minced⁣ - 1 small shallot, sliced⁣ - a handful of chopped green onions - fried shallots for toppings⁣ - oil for cooking⁣ 🌱Sauce⁣ - 2 cups [472g] veggie broth⁣ (adjust for other noodles) - 1 tablespoon ketchup for a hint of red⁣ - 1/2 tablespoon sugar (omit if your ketchup is sweet)⁣ - 3 teaspoons tamarind juice or 1 teaspoon lime juice⁣ - 3 teaspoons sambal or red chili paste⁣ - 1 1/2 teaspoons hot bean paste (or sub with Doenjang or Miso)⁣ - 1/2 teaspoon salt (adjust to taste)⁣ ⁣ ✅To prepare the vermicelli, soak them in cold water until soft to handle (used WaiWai brand), then drain until ready to use. Pane e colazione. In questi mesi di colazioni lente, la mia preferita in assoluto è stata: fette di pane semiintegrale alle noci con burro di nocciole e confettura di sola frutta o rondelle di banana, accompagnate da cappuccino di soia. È una colazione completa perché abbiamo i carboidrati del pane, le proteine del latte di soia e della crema di frutta secca, gli zuccheri semplici della frutta e infine (last but not least) le fibre, contenute nel pane, nella frutta secca e nella frutta. Vi garantisce la giusta carica di energia per affrontare la mattinata e un senso di sazietà prolungato. Il pane è da preferire alle fette biscottate perché solitamente queste contengono troppi zuccheri aggiunti, grassi vegetali idrogenati e additivi. Sceglietelo integrale o di grano duro, meglio se a lievitazione naturale, e controllate sempre la lista degli ingredienti (spesso viene aggiunto strutto per una maggior morbidezza e durata nel tempo). Oppure preparatelo voi in casa, con farine integrali e semintegrali biologiche, acqua e lievito naturale. Tagliatelo poi a fette e congelatelo, in modo da poterlo scongelare in pochi minuti (nel microonde o direttamente nel tostapane) e averlo sempre a disposizione per le vostre colazioni, anche quando siete di fretta. E voi? Vi va di raccontarmi le vostre colazioni? In foto: Pane semintegrale quotidiano 260 g farina tipo 1 290 g farina tipo 2 120 g licoli 300 ml acqua 40 g melassa (aiuta la lievitazione e dona un colore più scuro al pane) 10 g sale Impastate le farine con il lievito, la melassa e poca acqua, quanto basta per inumidire tutta la farina. Lasciate riposare per 20 minuti. Riprendete ad impastare aggiungendo il sale e poca acqua alla volta, aspettando che venga assorbita completamente prima di versarne dell'altra. Lasciate riposare l'impasto, coperto, fino al raddoppio. Crispy bottom Veggie Buns😍 Follow us @vegans_hub By @woon.heng .⠀ ⠀ Recipe (makes 10 buns)⁣⠀ 🌱Dough ⁣⠀ - 300g [~2 1/2 cups] all-purpose flour (see notes below if using cups)⁣⠀ -175ml [3/4 cup] hot boiling water⁣⠀ - pinch of salt⁣⠀ 🌱Filling:⁣⠀ - 1/2lb (250g) green beans, chopped⁣⠀ - 16oz firm tofu, pressed & mashed⁣⠀ - 1 small carrot, finely chopped⁣⠀ - a handful of chopped cilantro⁣⠀ - 2 teaspoons toasted sesame oil, 1 teaspoon salt, a few shakes of white pepper⁣⠀ 🌱Other ingredients: oil for cooking, sesame seeds, chopped green onion⁣⠀ ⁣⠀ ✅To make the dough, mix flour & salt in a large bowl until well combined. Make a well in the middle & pour in hot water. Using a spatula, fold in all flour until a shaggy dough forms with no dry spots of flour in the bowl (if it does, add cold water, 1 tablespoon at a time). Transfer flour to a cleaned surface & knead until a smooth dough forms, about 10mins. Cover with a damp towel & rest for 30 mins.⁣⠀ ✅Meanwhile, place tofu in a cheesecloth bag & wring out all the liquid. Saute chopped green beans with 1 teaspoon oil in a pan for about 1-2 mins. Add green beans into a bowl along with tofu, carrot & seasoning ingredients. Mix well & divide the mixture into 10 portions & form it into a patty-like shape.⁣⠀ ✅When ready, dust flour on the surface, roll dough into a log & divide into 10 equal balls.⁣⠀ ✅To assemble, take one dough, flatten it with your palm & roll into a wrapper, about 4.5 inches diameter by keeping the middle part thicker Place one filling patty in the middle & pleat to seal. By: @vegspirationfeed Serves 1-2 people Ingredients: 400g of baby or new potatoes - cut in half 1 1/2 cup of frozen peas a handful of watercress, rocket or baby spinach For the pesto: 1 cup of carrot top greens 1/4 cup of pine nuts or cashews or walnuts the juice of 1/2 lemon 1 garlic clove a generous glug of extra virgin olive oil salt to taste Add the potatoes to a large pan filled with salted water and cook for 25 minutes until soft. In the meantime make the pesto. Add all the ingredients into a food processor and blitz until smooth and creamy. Add the frozen peas to the pan with the potatoes and cook for 1 minute. Drain and transfer it to a mixing bowl. Pour over the pesto and mix all together. Wagamama Style, Caramelized Sweet Potato Wedges. (Close up) ⠀ Cooking instructions. ⠀ 1. Peel 1 sweet potato and dice into wedges. 2. Soak in water for 5 mins and strain off afterwards and pat dry with paper towel. 3. Place in air fryer with a tbsp of olive oil and cook on 200c/392f for 20 - 30 mins. (Alternatively you can deep fry) 4. In a pan add the juice of half a lemon and a tbsp of maple syrup in a pan and heat up. 5. Sou cliente da @brazzerohamburgueria desde muito antes de começar minha transição, antes deles abrirem um espaço físico e quando só tinha 4 burgers no cardápio. Além de achar o melhor hambúrguer de Belém, sempre admirei o cuidado que eles têm com o cliente, a gentileza, brindes, tempo de entrega, etc . Agora que virei Veg, estava há muito tempo sem pedir nada deles e descobri que botaram opções vegana e vegetariana no cardápio. Resolvi pedir em dias diferentes e compartilhar aqui com vocês minha opinião sobre cada um na mesma postagem. __________________________________ Sobre o Vegano (1° foto) : Gente, sem palavras. O hambúrguer é maravilhoso!!! Se chama Vegan, feito com falafel, molho Pesto de castanhas que é tudooo, tomate seco, alface americana no pão brioche. O molho que acompanha é o guacamole defumado, que casa perfeitamente com o resto do hamburguer, dando a suculência que faltaria sem o molho. Incrível. O sanduíche é grande e passa qualquer fome! Nota 1000! Obs: Costumo pedir no pão australiano pq amo esse pão, mas o burguer original é no brioche, vegano. _______________________________ Sobre o Vegetariano(2° Foto): Também com o Faláfel, mas com queijo cheddar, picles de pepino, maionese artesanal, cebola roxa tomate e alface americana, no pão brioche (que tbm pedi pra trocar pro australiano) e acompanha molho tártaro. O hambúrguer é maravilhoso!!! Muito mais suculento que o vegano e diferentes legumes, o sabor tem grandes diferenças, vale a pena experimentar, principalmente pra quem ainda valoriza muito o queijo. Como eu atualmente só como queijo muito esporadicamente, comecei a achar enjoativo o sabor do cheddar no final do burguer, mas é só porque eu realmente perdi o encanto por queijos em geral. _____________________________ Em suma, pra mim, o tomate seco do vegano, que não tem no vegetariano faz muita diferença e falta, bem como o molho pesto inesquecível. Já o queijo do vegetariano não me trás vantagem no paladar, apesar de garantir mais suculencia de forma geral. Então o vegano é meu preferidíssimo. Infelizmente não peço mais vezes pq pra mim sai um pouco caro com a taxa de entrega, mas sempre vale muito a pena! Recomendo demais!!
