Pesto has always been a favourite of mine, mixed in to pasta, dolloped on pizza or stirred through baby tomatoes to give extra flavour to salads. Shop bought pesto sauces are typically high in salt, which should be avoided for weaning babies, so here’s a fresh and easy home made version which can be whipped up in less than ten minutes. As an added bonus it is high in plant protein and fat for your growing infant. Swipe left for the ingredients and method. ℕ𝕦𝕥𝕣𝕚𝕥𝕚𝕠𝕟 ℙ𝕣𝕠𝕥𝕖𝕚𝕟 – Almonds are a rich protein source, it’s important to ensure they are chopped very small, ground or served as a nut butter for your infant. They are also a good source of fibre, fat and vitamin E. Green peas contain some protein which will contribute to your baby’s overall nutritional intake for the day, they also contain a wide variety of vitamins, minerals and fibre. 𝔽𝕒𝕥 – Almonds and olive oil both provide monounsaturated fat. Fat is required for your baby’s healthy brain, nerve and eye development. Fat also provides a higher density of calories to ensure your baby gets sufficient energy intake through small portions of food. This meal is energy dense, a little bit will go a long way! As a former international athlete, with twice daily greuling training sessions I know the importance of a balanced diet that gives me the right amount of protein so my muscles are recovering, building and not depleting. A shake recipe like this was a go to for me when I needed to supplement my food intake or as a meal replacement when I was travelling. A lean diet can be boring and sometimes bland if you aren’t a great cook, so a simple recipe like this can feel like a real treat. Teig für 2 Böden in 26er Speingformen gebacken: 325g Mehl 220g Zucker 45g Kakaopulver 1 Päckchen Backpulver 1,5 TL Natron 420ml Soja Milch 2 EL Apfelessig 120ml Rapsöl 1 TL lösliches Kaffeepulver angerührt mit 1 EL heißem Wasser (für einen intensivierte Schokogeschmack) Für die Creme: 80g Margarine 190g Puderzucker 4 EL Kakaopulver 1 Prise Salz 2 EL Soja Milch Zunächst Apfelessig in die Soja Milch geben, sodass diese gerinnt. Alle Zutaten für den Teig vermischen. Die geronnene Milch beifügen und alles zu einem Teig verrühren. Auf zwei 26er Springformen verteilen und bei 180C Unluft 40min backen. Die Zutaten für die Creme mit einem Mixer aufschlagen. This pudding is creamy, chocolatey, flavourful and suuuuper easy to make! try it out, you’ll love it! Here you have the recipe: . INGREDIENTS • 5 dl coconut milk • 2 dl water • 70 g unrefined sugar • a pinch of salt • 45 g cacao powder • 120 g dark chocolate • 1 tsp agar agar METHOD 1. Place milk, water, sugar and salt in a saucepan and heat over medium heat. 2. In a bowl, whisk cacao powder with 4 tbsp of water until lumps free then pour into the milk mixture and stir. 3. Add in the chocolate and stir until dissolved. 4. Place agar agar in a glas, add in 1 tbsp of water, stir and pour into the chocolate mixture. 5. Bring the mixture to a boil and boil for 1-2 minutes. 6. Pour the mixture into a mold, let it cool completely and let it rest in the fridge for 3-4 hours. 7. ENJOY ❤️ . . . .

VEGAN BROCCOLI CHEDDAR SOUP! By @alexafuelednaturally Follow us @healthy.organic.food for Daily vegan recipes RECIPE Ingredients 4 cups broccoli florets 1 onion, chopped 2 cups almond milk or any unsweetened plain plant milk 3 cups filtered water 1 1/2 tbsp “Not chicken” bouillon 1 cup celery,chopped 1 cup carrot, chopped 1-2 golden potatoes, chopped 1/2 tsp black pepper CHEDDAR CHEESE SAUCE Juice of 1 lemon 1/2 cup raw cashews (soaked for 20 minutes in hot water) 1 cup carrot, chopped 1 cup potato, chopped 1 cup unsweetened almond milk 1/2 cup water 1 tsp salt 1/2 tsp pepper 1/2 tbsp garlic powder 1/4 cup nutritional yeast Instructions 1. Soak raw cashews in hot water for 20 minutes. (Discard water and add into cheese sauce later 2.In a skillet over medium-high heat add 1 tbsp oil then saute onion for a few minutes. 3.Pour almond milk, two cups of filtered water and 1 1/2 tbsp “not chicken” bouillon. Whisk together until bouillon is dissolved. Bring to a simmer for about 5 minutes. Add potatoes and carrots cook for 10 minutes then add broccoli and celery; simmer until all the vegetables are tender, about 15 minutes. 6. Meanwhile make “cheddar sauce”. In a large pot bring 4 cups of water to a boil. Add copped potatoes and carrots to the pot and let cook for 15 minutes or until tender. 7. Once potatoes and carrots are cooked, Drain the potatoes and carrots (discard the water) and place all your cheddar sauce ingredients into a high-speed blender or food processor and blend until smooth. Pour the sauce into the pot and stir to combine. Simmer for 5 minutes and then serve hot! Stuffed rice rolls😋 (Fan Tuan '飯糰') By @woon.heng Follow us @niceveganrecipes for Daily vegan recipes Recipe (makes 4 rolls)⁣ - 3-4 cups cooked sushi rice (or use sticky/short grain/black rice)⁣ - 7oz (200g) firm tofu - drained, pressed & mashed⁣ - 1 cup (140g) chopped Gailan stems (or use kale/broccoli/sautéed vegetables)⁣ - 1 piece YouTiao (or use fried wonton skins, croutons, saltine crackers)⁣ - 1/2 cup (80g) salted preserved dried radish (or use pickles/relish)⁣ - 1/2 cup finely shredded purple cabbage (or use vegetables of choice)⁣ - 1 tablespoon soy sauce/tamari⁣ - a drizzle of dark soy sauce for color (optional)⁣ - toasted sesame seeds⁣ - oil for cooking, salt to taste⁣ ⁣ ✅To prepare the salted preserved radish, soak them in cold water for 30 mins, then rinse. Sauté them in a pan with some oil for 1 min, season with 1/2 teaspoon sugar (omit if using sweetened dried radish/skip this step if using pickles)⁣ ✅To make the tofu, heat a non-stick pan with 3 teaspoons oil, sauté mashed tofu until golden brown & season with soy sauce. Set aside.⁣ Using the same pan, sauté Gailan stems until fully cooked through & season with salt. Well, this vegan spice mix is a blend of five ingredients you probably already have in your pantry:  nutritional yeast (heeey cheesy flavor!), onion + garlic powder, black pepper, and sea salt. 🥥Chakka ( jackfruit ) mulakushyam🥥 is a super simple dish from Kerala and it’s delicious too! Instructions: 3 cups of jackfruit - Remove the fruit (before it ripens )and nut from within. Add a small handful of fresh basil and a gigantic handful of fresh spinach. Blend until smooth 😍⁣ ⁣ Because I know someone will ask... ⁣ 1. We don't use store bought orange juice. Feijão.❤ Como você costuma preparar e quais os temperos que não podem faltar?🤓📝 . As vezes vejo as pessoas falando que cansaram do feijão... de sempre ter o mesmo gosto, a mesma "cara". No feijão daqui de casa não pode faltar: folha de louro, cebola e alho. Normalmente faço essa "base" e depois, conforme vou consumindo, vou incrementando. . Você já experimentou refogar tomate e colocar no feijão? 🤤 Existem tantas formas de preparar algo diferente: mudar o tempero (cominho, páprica, cúrcuma, pimentas...), misturar tipos diferentes de feijão; colocar vegetais como cenoura, chuchu, abóbora, couve, pimentão...Tofu defumado também fica uma delícia, mas não é algo imprescindível. Enfim, basta usar a criatividade!😊 No prato temos: . ☘ Feijão temperado com cebola, alho, pimentão vermelho, cominho, folha de louro e tomate refogados. ☘ Arroz com alho ☘ Farofa de cebola e folhas de kohlrabi (parece com a couve) ☘ Berinjela grelhada temperada com tomilho, pimenta preta, sal e azeite ☘ Salada de alface, cenoura, pimenta biquinho e pepino em conserva . 🐾🐾🐾🐾🐾🐾🐾 . Cooked beans. ❤ How do you usually prepare and what spices cannot be missing? 🤓📝 . Sometimes I see people saying that they got tired of beans ... of always having the same taste, the same "face". The beans here at home cannot be missing: bay leaf, onion and garlic. I usually do this "base" and then, as I consume, I increase it. . Have you tried braising tomatoes and putting them on beans? 🤤 There are so many ways to prepare something different: change the seasoning (cumin, paprika, turmeric, peppers ...), mix different types of beans; adding vegetables like carrots, chayote, pumpkin, cabbage, peppers ... Smoked tofu is also delicious, but it is not essential. Shiitake a Feira . As part of our collaboration with @ego.galego we wanted to reproduce a vegan version of one of the most famous dishes of the Galician cuisine . This dish will surprise you for the texture and flavours, being almost like the original dish with octopus😳 . Ingredients for 1 portion: - 1.5 litter water - 2 medium potatoes - 150 gr fresh or rehydrated dry shiitake mushrooms - 1 handfull Kombu seaweed - 1 handfull Mix seaweed (nigiri, wakame, sea lettuce) - 1 bay leaf - some Maldon Salt - some extra virgin olive oil - some spicy paprika - some sweet/smokey paprika - 1 tsp Salt . In a pot, put the water with the seaweeds and 1 tsp salt and bring to boil. Once the water is boiling add the mushrooms, the potatoes (peeled) and the bay leaf. Once the potatoes are cooked (15-20 min) remove mushrooms and potatoes from the water. Cut the potatoes in slices and place them on a plate, add the shiitake on top (cut them if they are too big) and add some spicy and smoky paprika, olive oil and salt. Aaaaand enjoy it!! 🤩 . Don’t throw away the water with the seaweed because you can cook many things with it! Spicy Steamed Dumplings by @woon.heng⠀ .⠀ 2 lbs of bok choy, washed and julienned⠀ 1 package of wonton/dumpling wrapper⠀ 1 box of firm tofu, drained & mashed⠀ 1/4 cup of mushrooms⠀ 1 tablespoon black bean sauce⠀ 1 tablespoon corn starch⠀ salt to taste⠀ oil⠀ Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):⠀ 3 tablespoons soy sauce⠀ 2 tablespoon chili oil with chili crumbs⠀ 1 tablespoon sesame oil⠀ 1 teaspoon Chinese black vinegar⠀ 1 teaspoon grated ginger⠀ 1 teaspoon sugar⠀ .⠀ Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl. Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, starch, combine well & season if needed. Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. Sometimes it's fun to turn everything on its head and stop obeying rules that never really existed anyway, such as #hummus must be made with #beans ...oh really? Beans are great and #chickpea hummus is divine, 😋 but what if you have no beans in the house? And what if you actually don't appreciate beans so much or simply can't tolerate them? Why should you miss out because of a rule that was never written into legislation? And then when you've made your rebel hummus, why not serve it as if it were a hidden treasure that will be uncovered by the lucky eater? That's pretty much what's going on here. It's a light evening meal but it could easily be made larger. The vegetable choices relate to what's in the fridge at the time and seems likely to work, but a sprinkling of sweetness is recommended to extend the sense of discovering little pockets of hidden treasure. There are a few #cranberries in this one. 50 - 100g #courgette 2 tsp ground #flaxseed 2 tsp #tahini 4 sun-dried tomatoes (pre-soaked in a dish of water for at least 15 mins) 1 clove of #garlic ½ tbsp lime juice 1 tsp ground #cumin Soak water from the tomatoes - use as required for the desired consistency Blend it all together in a blender or food processor, adding the water a little at a time to get it just how you like it. The flaxseeds will soak up some of the fluid, especially if you add a little more than the suggested amount above. Have we mentioned that flaxseed has an exceptionally good omega 6 to 3 ratio? Wie ihr bereits wisst liebe ich indisches Essen. Heute möchte ich eins meiner Lieblingsrezepte mit euch teilen, und zwar "Aloo Palak". Es ist zwar nicht das ansehnlichste Gericht, aber dafür unfassbar lecker 🥘 DIESE ZUTATEN BENÖTIGST DU DAFÜR (für ca. 2-3 Personen): 250 g frischen Spinat 200 g gefrorene Erbsen (kommt eigentlich nicht rein, aber passt super finde ich) 450 g Kartoffeln 1 große Zwiebel, gehackt 6-8 Knoblauchzehen 1 Tomate, gehackt 3 grüne Chilis 100-150 ml passierte Tomaten 2 EL vegane creme fraiche (creme vega) 1/2 TL Kreuzkümmel Samen 1 Daumengroßes Stück Ingwer 1/2 EL Kurkuma 1 TL Chilipulver (je nachdem wie scharf du es möchtest) 1/2 TL Kreuzkümmel 1/2 EL gemahlener Koriander 1/2 EL Garam Masala 1 EL salzreduzierte Sojasoße o. etwas Salz 5 EL vegane Butter oder Öl SO WIRD'S GEMACHT: 1. Schäle die Kartoffeln, schneide sie in kleine Stücke und lass sie in einem Topf mit Wasser kochen, bis sie bissfest sind. 2. Koche die Erbsen in einem Topf, bis sie fertig sind. 3. Bringe 2 L Wasser in einem Topf zum kochen. Anschließend gibst du den Spinat in den Topf und kochst ihn für 2 Min. Danach holst du den Spinat aus dem Topf, gibst ihn in ein Sieb und lässt kaltes Wasser drüber laufen. Dann stellst du den Spinat beiseite. 4. Erhitze eine Pfanne mit 2 EL Öl/Butter. Dann gibst du die Kreuzkümmel Samen, grünen Chili, Knoblauch, Ingwer & Zwiebeln hinzu. Brate das Ganze für 2-3 Minuten auf mittlerer Stufe an. 5. Füge nun die Tomate und passierte Tomaten hinzu und lass alles für 2-3 Min köcheln. Lass alles etwas abkühlen. 6. Mixe nun den Spinat, die Erbsrn und das Gemüse aus der Pfanne in einem High Speed Blender, bis eine cremige Paste entsteht. 7. Erhitze die Pfanne nochmals mit 3 EL Öl/Butter. Füge Kurkuma, Chilipulver, gemahlener Koriander, gemahlener Kreuzkümmel hinzu und vermenge alles. Wichtig, dass du es nur kurz anbratest, sonst verbrennen die Gewürze. (Unter 1 Min). 8. Füge direkt die Paste hinzu & vermenge alles miteinander. Anschließend lässt du es abgedeckt für ca. 2-3 Min auf mittlerer Hitze köcheln. 9. Erst jetzt kommt das Garam Masala Pulver & Salz sowie 2 EL Creme Vega & die Kartoffeln hinzu. Lass alles nochmal 2-3 Min köcheln.

Once hot, add the oil and mushrooms. Saute for 3-5 minutes, or until the mushrooms let out their juices, stirring frequently. Add the chickpeas to the pan and cook for 2 minutes. Combine the cooked noodles and sauce and mix well ( for a couple of mins). Immediately take the pan off the heat and divide it into bowls. Garnish with sesame seeds, crushed red peppers, and chopped green onions. Leftovers will last 2-3 days in the fridge. Creamy Vegan Polenta with Mushrooms and Spinach by @biancazapatka Follow us @healthy.organic.food for daily vegan recipes Ingredients Polenta (Basic Recipe) 1 cup polenta (150 g) 3/4 cup full-fat coconut milk (200 ml) 1 1/4 cup vegetable broth (300 ml) 2-3 tbsp nutritional yeast flakes or vegan parmesan cheese (optional) ⠀ Mushroom Spinach Topping 1 tbsp olive oil or coconut oil 1 onion sliced 7 oz mushrooms (200 g) sliced 2 cloves garlic minced 1-2 tbsp soy sauce 2 cups spinach roughly chopped salt, black pepper to taste 2-3 tbsp pine nuts (options see above) ⠀ Instructions Polenta Bring coconut milk and vegetable broth to a boil in a pot. Stir in polenta by using a whisk.⠀ Reduce heat to a low simmer and continue to whisk for 1-2 minutes to avoid lumps.⠀ Then cover and let simmer for about 10 minutes (or according packaging instructions), stirring occasionally. (If the polenta thickens too much you can add additional milk and/or water and stir to thin.) Once the Polenta is creamy and smooth, remove from the stovetop. Add nutritional yeast or vegan parmesan and stir (optional). Mushroom Spinach Topping Heat oil in a skillet or pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown. Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste. Add a splash of fresh lime juice, if you like. Toast pine nuts in a small pan without oil until lightly browned. Serve polenta with mushrooms, spinach and pine nuts. Vegan Soup Dumplings By @thevegansara . Follow us @niceveganrecipes for Daily vegan recipes Sooo here’s the recipe . Broth 2 cup water, 1 tbl tamari, 1 tbl veggie broth, 1 1/2 tsp agar agar Wrapper 200 g flour (double zero flour recommended but you can use all purpose flour), 2 tsp neutral oil, 1/2-3/4 cup hot water. Filling 4 ounces store bought pre pressed extra firm tofu (1/2 cup when packed), 1/4 cup dried shitaki mushrooms (6-7 ct) hydrated in cold water then finely chopped, 3 green onions finely chopped (whites & light green parts), 1/4 cup each of cabbage & carrots shredded & finely chopped, 1/2 tbl sesame oil, 1 tsp dark soy sauce, 1/2 tsp salt, 1/2 tsp sugar, 1/4 tsp white pepper, 1/4 tsp garlic powder, 1/4 tsp ginger powder Makes 20-22 dumplings. Instructions 1️⃣ On stovetop bring broth ingredients to a boil for about a minute while stirring. Pour in a shallow pan. Put in fridge at least one half hour till agar sets & is firm. 2️⃣In a food processor add flour, process on high, slowly add hot water & oil. It will soon form a smooth ball. Then knead with hands a couple of minutes. Wrap with kitchen towel & rest 1 hr 3️⃣ For the filling mash tofu in the a bowl till crumbly. Add the rest of filling ingredients. 4️⃣Once agar has set use a knife to finely dice into tiny cubes. Add half of the agar to the filling. 5️⃣ Cut dough into three equal pieces. Take one piece, wrap remaining pieces. On a well floured surface, roll into a log about 3/4 in thick, cut into 1 1/2 in pieces. Roll each piece into a 4 in disk leaving the center thicker than the edges. Lunch Time 😉🌱 Posted by @vegspirationfeed PEANUT SESAME NOODLES by @vegspirationfeed for Daily vegan recipes Good for 2-3 servings 180g dry rice noodles or other noodles ½ medium red onion, sliced into strips ½ cup sliced bell peppers, sliced into strips* 1/2 medium carrot, sliced into strips* 2 tbsp sesame oil (highly recommend, but feel free to use other oil) Chopped spring onions, for topping Sesame seeds, for topping note *veggies are really up to you! You can use what you have available! SAUCE ¾ cup warm water 2.5 tbsp peanut butter (I used slightly salted and sweetened peanut butter) 3 cloves garlic, minced 2 tbsp sesame oil (highly recommend, but feel free to use other oil) 2 tbsp maple syrup or other liquid sweetener, can be subbed with sugar 4 tbsp soy sauce, or to taste 1 tsp sriracha (optional), adjust according to desired spice CORNSTARCH SLURRY 1/2 tbsp cornstarch + 1 tbsp room temperature water, mixed into a slurry STEPS Pour boiling hot water over the noodles. Carefully break apart. Leave to sit for a few minutes until pliable and half-cooked. Drain the water afterwards. Mix all sauce ingredients EXCEPT the cornstarch slurry in a bowl until smooth. Adjust flavours based on desired taste. Set aside. In a large pan, heat the 2 tbsp sesame oil or other oil. Sauté the onions, bell peppers, and other veggies. Add in the tofu and other veggies you're using. Sauté until tender. Add in the noodles. Pour in the sauce while mixing the noodles. Cook for another 3-5 minutes on medium to high heat. Pour in the cornstarch slurry and mix well until sauce has thickened and is absorbed by the noodles. Turn off heat. Top with sesame seeds and spring onions, if using. ♥️EASY LASAGNA VEGAN RICOTTA ROLL UPS ♥️⬇️⬇️ Click on bio for our vegan book😋 ---- 10 ounce bag frozen spinach (optional) Lasagna noodles (I used GF ones) 2 tbsp olive oil 32 ounces marinara sauce 1 (14 ounces) container firm tofu Juice of 1 lemon 1/2 tsp salt 4 tbsp nutritional yeast 1/2 tsp garlic powder Fresh basil to garnish Instructions: 1. Preheat oven to 350F. Then cook your lasagna noodles! Undercook by 2 minutes. 2. Remove tofu from package and wrap tofu block in 2 paper towels. Squeeze for 10 seconds then break apart tofu into your food processor. To the food processor add salt, 2 tbsp olive oil, lemon juice, nutritional yeast and garlic powder. Pulse 6-10 times until you reach the consistency of ricotta cheese. Taste and adjust salt and seasonings as needed. 3. In a pan add frozen spinach (or MICROWAVE frozen spinach for 2ish minutes) and season with a small pinch of salt and pepper. Cook for 2-3 minutes m. Remove from pan and add to ricotta. I pulsed 3-4 times into the ricotta. 4. Spread marinara sauce sauce onto the bottom of a oven-proof skillet; set aside. (I use a cast iron) 5,Once lasagna noodles are cooked, drain then immediately drizzle with olive oil so they don’t stick together. Grab a lasagna noodles and Spread a couple spoonfuls ricotta mixture evenly along leaving the last inch bare. Roll up and place in the prepared skillet; repeat with remaining pasta noodles and filling. 5. Place into oven and bake for 10 minutes. 6. Serve immediately.
