10 month - 80lbs down!!!! I couldn't be happier with my progress. This is has been the best "diet" decision I have ever made. The best part about it is that it's not a diet at all. Oven Baked Crispy Fries and Guacamole by @veganbyeden 💛 Recipe: Fries⠀ 4 large baking potatoes⠀ 11/2 tablespoons olive oil⠀ salt & pepper⠀ a sprinkle of paprika⠀ . Follow us @veganbowlsrecipes for Daily vegan recipes 🌱 . Instructions⠀ Preheat oven to 400. Wash potatoes leaving skin on (you can peel them if you prefer).⠀ Fill a bowl with cold water. Slice potatoes into 3-4 slices length wise and then into strips.⠀ Let potatoes soak in cold water for at least 30 minutes (this removes starch from the potato resulting in crispier french fries). Remove from water and pat dry.⠀ Toss with oil and seasoning.⠀ Bake for 30 minutes. Turn fries and bake for an additional 10-15 minutes .⠀ ⠀ Guacamole⠀ 3 avocados⠀ 1 firm tomato, finely diced⠀ 1/2 white onion⠀ 1/2 cup chopped cilantro⠀ 2 tbsp fresh lemon or lime juice⠀ Optional salt and pepper to taste.⠀ ⠀ Instructions:⠀ Open the avocados and scoop out the flesh. An easy way is to cut it length-wise around the pit and than using a chefs knife strike the pit and then twist the knife so you can easily remove the pit and scoop out the flesh.⠀ Mash the flesh with a fork, it can still have hard parts, follow your preference.⠀ Stir the other ingredients. Enjoy!

Here is the recipe: Rinse 1 1/2 lb small potatoes and cut into small cubes. Cook potatoes in hot water for about 10 minutes. Drain. Dice 1 ripe avocado and 1/2 red onion. Slice 1/2 cucumber. Chop dills (we need about 2 tbsp). In a large serving bowl, mix the veggies (except for the cooked potatoes). Add 2 tbsp Dijon mustard, 1 tsp lemon juice, and some salt and pepper to taste. Toss in the potatoes and serve with some extra virgin olive oil. What is your favorite chia pudding flavor? Matcha chia pudding was such a lovely way to start the day. Super refreshing, and super easy to make 😋! • 2 cups soy milk 1/2 cup of chia pudding 1 1/2 tbs agave nectar 1 1/2 tsp vanilla Tiny pinch of salt 1 tbs of matcha powder — (you can add as much or as little of this as possible for desired flavor) Mix it all up and refrigerate over night. In the morning mix out all the chia clumps before serving. You can layer it or make a nice bowl with it. 🤤🤤 I'm not a big fan of bread (I'm a rice girl), but I'm happy to have some when it's topped like this! Don't forget to save the recipe 👉👉👉 Toasted bread topped with mashed beans, arugula, tomatoes, and a garlicky mushroom medley 😍😍. SO yummy and easy to make! Heat up minced garlic and serrano pepper in olive oil in a pan and add a can of mixed bean medley (rinsed and drained). Heat it all up together and mash the beans to get a consistency you like. Season with S&P Sautee mushrooms in garlic in a separate pan and season as you like. I kept it simple with salt, pepper, and garlic powder. Mushrooms local from @oysterandking. They never let me down ♥️ Top your favourite piece of bread (this is the Vancouver Island Harvest Loaf from @portofinobakery that I picked up from @meridianfarmmarket ) with the beans, some greens (I used delicious peppery arugula from @forstbauerfarm ), some fresh tomatoes, and the sauteed mushrooms. Homemade Gnocchi & Mushroom Stroganoff and chickpeas by elavegan Follow us @healthy.organic.food for daily vegan recipes Ingredients -2 1/4 lbs potatoes (e.g. Yukon Gold), peeled and chopped (1 kg) -1 1/2 to 2 cups chickpea flour (180-240 g) -1 cup tapioca flour + more for dusting (120 g) (*see recipe notes) -1/2 tsp sea salt Instructions Peel and chop potatoes, transfer them to a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot and mash with a potato masher (don't use a food processor or blender). Add 1 1/2 cups of chickpea flour and the tapioca flour and knead with your hands until a dough forms. The dough might still be a bit sticky but it should be fine to handle. However, if the dough is too sticky then add more chickpea flour and knead again. It depends on the type of potato whether you will need 1 1/2 cups or 1 2/3 cups or up to 2 cups of chickpea flour. Cut the dough into equally sized pieces and dust with a little bit tapioca flour. With your fingers, roll each piece to strands. Use a knife to cut the dough into 1-inch pieces and form them to small balls with your hands. You can roll every ball over the back of a fork if you want ridges on your gnocchi (this step is optional). Watch the video above to see how easy it is. Add the gnocchi to a pot of salted boiling water. Once the gnocchi rise to the surface (after only 2-4 minutes), remove them with a slotted spoon. You can now serve them with a sauce of choice OR fry them for a few minutes in a pan with a little bit of vegan butter or vegetable oil. They will turn crispy and even more delicious. 🌱Day 5 lunch. I made a Thai Basil salad with a spicy mango and ginger dressing. I love the addition of the sliced mangoes on the salad and having fresh herbs from our garden is always welcome in any meal that I create! Oranges, pink grapefruit and blood oranges. What I could mustard up during this time. My mood has not been on eating so therefore preparing vegan meals to inspire has taken a back sit to what’s happening within our country and globally. Change is upon us... this feels different... this feels right. There has been a shift. If you’re spiritually grounded you’ll feel and know. If not you’ll go about life as usual and miss the boat as the majority of us stand in the trenches of much needed change of systemic racism globally. Pandora’s box is wide open and we can no longer live in a society of inequality and mistreatment of black and brown people in the United Stated and globally. An apology is not enough... atonement, change behavior, knowledge of all things hidden and erased from history books given to all people straight no chase to understand why many Black and Brown people sit in a perpetual state of anger, frustration, depression, sadness, self hate, not knowing who they are and where they come from... which country or tribe? and/or hopelessness because on a spiritual level we know who we are but oppression keeps us from living that truth. The connection is lost from slavery to present day. Imagine not being able to draw a line of linage... like lost souls we don’t know. Why and how some rise above but carry all mentioned with a smile on their faces yet the feelings and ongoing experiences never go away. It keeps happening! It’s ongoing everyday... nonstop as to how people see you or not. How many white people mistreat you via conditioning they never see because it’s so deeply embedded... it’s normal and life is good; for them. All of this past and present sits on the shoulders of GREED slavery and it’s deep seeded hatred then and the same in some nations still happens today. God gave us this world to cultivate and thrive together. No one should ever be mistreated and made to feel less than another. No one should ever be hungry or not have decent place to live with running water with modern amenities if they choose. Healing is needed. Atonement is needed. Pesto Stuffed Gnocchi 💚💚💚 Some people bake cookies on a rainy day, I make gnocchi. 💁🏻‍♀️What you need: 2-3 large russet potatoes (about 1 1/2 lbs, 1 cup flour, 1 tsp olive oil, 1 tsp kosher salt, pepper, 1/2 cup vegan pesto. ⠀ By @thevegansara ⠀ 1️⃣In a large pot cover potatoes with cold water, bring to a boil, then simmer 30 min till fork tender, drain, peal skin off with fork while still warm ⠀ 2️⃣On work surface put potato through a ricer (preferred method) or mash, spread riced potato out, wait 5 min till less hot, then sprinkle with salt/pepper gently combine using hands or bench scraper. Give a taste, adjust till it taste good to you⠀ 3️⃣Next add flour a bit at a time ,drizzle in oil, gently working it into a dough. Fold the dough in overlapping layers to help combine 2-3 min.The dough should be soft. Let rest 15 min⠀ 4️⃣Cut ball into 4 equal pieces. On a floured surface, gently roll into a long rope about 1 in thick, then gently flatten till about 2in wide⠀ 4️⃣ Using piping bag with 1/4 in opening, or a plastic bag with bottom corner cut, pipe pesto across the length of rope in the middle leaving a boarder at top and bottom of dough⠀ 5️⃣ Seal the gnocchi by bringing the top of the dough to the bottom of dough, & pinch dough together the length of the rope, give it a nice roll back and forth to ensure seal ⠀ 6️⃣Then cut into 1 inch pieces. Place on parchment lined tray, repeat with remaining dough ⠀ 7️⃣ On stovetop, bring well salted pot of water & cook gnocchi in batches over a slow boil. The gnocchi will rise to the top in 2-3 min. Using a slotted spoon to drain water. ⠀ 8️⃣Next, using a nonstick pan cook gnocchi in batches using a pat of butter on medium. Cook 4-5 min on each side or until crisp. Season as desired. The trick is to just start! Recipe below: Serves: 2 1️⃣ Cut 1 sweet potato into bite sized chunks. Drizzle it in olive oil and season with paprika, mixed herbs, salt and pepper. Bake in a 180°C preheated oven until golden and cooked through. 2️⃣ In the meantime, slice up 1 packet of colessupermarkets’ new ‘Southern Smoke Infused Tofu’ and pan fry on each side until golden and set aside. Let me tell you, this stuff is SO GOOD. It’s a mix of smokey, sweet, salty and the texture is also on point! 3️⃣ Optional, but highly recommended: Pan fry 1 cup of corn kernels until slightly charred then seasoned with salt + pepper. 4️⃣ To assemble your burrito bowls together, put a generous layer of leafy greens as your base. Breakfast Day 73 Mango-Raspberry Donut Kiwi . Happy National Donut Day! We had to do something fun to celebrate. These donuts were super easy and have no added sugar or salt. The “frosting” is coconut yogurt mixed with smashed raspberries and I used shredded coconut as sprinkles. I did mango because I had a little bit that needed to be used up but you could do any fruit. Finn ate the whole thing but was definitely searching out the baked-in raspberries. I’m so glad I loaded these up. . Can’t have peanut butter? No problem, just opt for sunflower butter ! This unsweetened sun butter from Trader Joe’s only has 1 gram of sugar per serving and the same amount of protein as peanut butter (which is 7g). Sunflower butter is delicious on toast, oatmeal, smoothies and so much more !

Benditas sean las #legumbres 🙌  En este caso, los #garbanzos . Que aparte de ser riquísimos son un alimento sin gluten ideal para un dieta celíaca!💪 . Por eso, (y porque está muy bueno😋) te dejamos esta receta de potaje de garbanzos con dedalitos súper fácil!👌. Lista en 30' ⏲️ . Con estas cantidades comen 4️⃣ personas 👇 INGREDIENTES ▪️500gr de garbanzos cocidos ▪️100gr de Dedalitos @mascalzonepastas ▪️1 cebolla ▪️1 diente de ajo ▪️1 ramita de romero ▪️800ml de caldo de verduras #sintacc ▪️4cs de aceite de oliva ▪️Sal y pimienta . PREPARACIÓN🔪 1️⃣Escurrí y echá los garbanzos en una olla con el caldo y cocinalo durante 10 minutos a fuego bajo. 2️⃣Reservá algunos garbanzos, 2 pocillos de café, triturá el resto y volvé a echarlos a la olla. 3️⃣Agregá los garbanzos reservados y la pasta y cociná unos 8 minutos. 4️⃣Procesá la cebolla picada, el ajo pelado y las hojas de romero y llévalo a una sartén con un poquito de aceite. 5️⃣Sofríe 5 minutos y echa el sofrito a la olla. 6️⃣Salpimentá a gusto .
