Brownie cookies or cookie dough — you decide! 🍪 I went for cookies, because it was raining yesterday and nothing screams “cozy” more than a warm cookie and peppermint tea, but if you decide on the cookie dough, just skip the baking powder. Decided not to eat them ALL in one go, so I froze all but 3 of them to have on hand when I want something sweet. This is a hack to: 1️⃣ Not waste food (not that they would’ve gone to waste, trust me) but more so to 2️⃣ Not eat them all in one shot and 3️⃣ Have a healthier alternative around when I just gotta lean into that salty/sweet craving…without further ado: gf/keto/vegan SALTED BROWNIE COOKIES! 🍪 * 2 tbsp chia (or ground flax) seeds * 6 tbsp water * 1/4 cup creamy almond butter * 1/2 cup melted coconut oil * 3/4 cup cacao powder * 1/4 cup coconut flour (or 1/2 cup almond flour) * 2/3 cup @lakanto monk fruit (or coconut sugar) * 1/2 tsp baking powder * 1/4 tsp flaky sea salt + some for sprinkling on top * 1 tsp pure vanilla extract * 1/3 cup dark chocolate chips (I used @paschachocolate unsweetened 🍫 chips). DIRECTIONS: Preheat the oven to 350 degrees F and lay a silicon baking mat or parchment paper on a cookie sheet. Meanwhile, prepare the chia eggs by stirring the chia (flax would work as well) with water and allow to sit for 15 minutes. Once the chia eggs are set, mix them well with the almond butter and coconut oil. Add the rest of the ingredients until well-combined. Chill the dough for 15-20 minutes and then roll the dough into whatever size you want! (I also flattened them with my hand before baking so they’d spread out). Bake for 10 minutes and sprinkle with sea salt flakes when finished baking. Enjoy every bite!

Now you don’t have to pick between a sweet or savory breakfast. Or if you are like us, for supper 😆 Top this egg and sausage biscuit with some pure maple syrup for the best muffin you’ll ever try! Egg and sausage biscuits (makes 12) Biscuits: 9 egg whites 1 cup + 2 TBsp almond flour 1/4 cup + 2 TBsp coconut flour 1/4 tsp + 1/8 tsp baking soda 3/4 tsp cream of tartar 1/4 tsp + 1/8 tsp sea salt 1/4 cup + 2 TBsp coconut milk 3 TBsp coconut oil, slightly solid Beat egg whites until solid. Mix dry ingredients together for the biscuits. Add in the coconut oil and mix together with a fork. Add in the milk. Fold in the egg whites with a spatula. 12 chicken sausage links, cut into 4 Egg mixture: 8 eggs 1 & 1/2 TBsp fresh green onion, diced 1 TBsp fresh parsley, diced Beat eggs with the seasonings. Preheat 400*. Grease a muffin tin with melted coconut oil. Add a spoonful of the biscuit mixture to the bottom. It will just cover the bottom of the muffin tins. Add a cut up sausage link (4 pieces- but one whole link) to each cup. Add a little egg mixture on top of the sausage. I used a 1/4 cup measuring cup to scoop out the egg and pour into the cup, but it wasn’t full. Use the rest of the biscuit mixture to put on top of the egg. I take a overflowing spoonful and form a little patty in my hand then lay it on top. What’s POPPIN’⁉️ Don’t mind me, just POPPIN’ in with these BERRY PALEO POPTARTS w/ an ALMOND BUTTER ICING!💥🤩🍓 . • The texture on these beauties was PERFECT thanks to @carringtonfarms cassava flour and ghee! 🤩👏🏻 . These poptarts are gluten free, dairy free, and paleo friendly!🥳 They were also so fun to make and had me making the in-love eyes with every single bite. 😍🙌🏻 . • SWIPE➡️ to see the BERRY good filling!🍓💥 • Happy FRIYAY, beautiful lovies! 🌟 . What’s something you’re grateful for today? ☺️ . ••• Deets👇🏻 . 1️⃣In blender or food processor mix: 1 cup @carringtonfarms cassava flour, 2/3 cup arrowroot starch, 2 scoops collagen(optional), 1/4 cup melted @carringtonfarms ghee, 2 eggs, 1/4 cup maple syrup, 1/2 tsp baking soda, 1 tsp vanilla, and pinch of salt. . 2️⃣After blended, use a rubber spatula to push contents to bottom. Add 2 tbsp of chilled unsweetened almond milk. Blend again. A dough should form! . 3️⃣Sprinkle some arrowroot starch on your counter and roll out your dough (about 1/4 inch thick) . 4️⃣Cut 3x4 inch rectangles. I was able to make 12 rectangles total (6 poptarts). You’ll need to re-roll out the excess dough. . 5️⃣Heat 1/4 cup raspberries, 1/4 cup blueberries, 2 tbsp pure maple syrup, and cinnamon in a microwave safe dish for about 1 min. Mash with fork once done. Let cool in freezer for 5-10 min. . 6️⃣Place 6 of your rectangles on a parchment lined baking sheet and spoon 1 tbsp of berry mix on eat rectangle. (Careful not to overfill!) . 7️⃣Melt 1 tbsp of ghee and brush on outer parts of rectangle with no filling. Carefully lay another rectangle on top. Pinch down the sides with your fingers, then use a fork to make a seal on all edges by lightly pressing down. Brush melted ghee on the edges and lightly brush on top. Repeat until you have 6 filled poptarts. . 8️⃣Bake for 20 min at 350°. . 👉🏻 ICING: Mix 1/4 cup almond butter and 1/4 cup maple syrup. Microwave for 10 sec, stir. Add 2 tbsp almond milk & stir again. Add more if too thick. Once poptarts are ready, heat for another 10-15 sec & mix in more milk (1tbsp at a time). . Ps- add sprinkles if you want!😋 . #carringtonfarms #cookwithcarrington

Iced hot chocolate anyone? Paleo style? It’s been getting awfully warm in the house and I don’t want to turn on the AC yet. Last night me & my five kiddos watched the cartoon Avatar series together while I gave myself a multiple brain freezes. Good family fun. EDIBLE HEALTHY COOKIE DOUGH 🍪✨trying to switch up my weekly snacks for the week and definitely wanted something sweet so I made this batch of healthy cookie dough! Preheat oven to 350°F. Spray an 8-inch square baking pan with EVOO⁣ ⁣ 2. In a large mixing bowl, mix together the Bob's Red Mill Old Fashioned Rolled Oats, baking powder, cinnamon, and salt.⁣ ⁣ 3. In a separate mixing bowl, mix together the mashed banana, milk, honey, egg, and vanilla extract until fully combined. Add the wet ingredients to the dry ingredients and mix. Adding some oil of choice (I prefer avocado oil) in a pan over med/low heat, pour in batter and let cook for roughly 3-4 minutes or until bubbles appear in the middle of batter. Flip and cook again. Most of us know the old “put the pit in the guacamole” trick to keep it from turning brown. But if you’ve tried it, then you know that it achieves mixed results at best.⁠ ⁠ The truth is that the pit only protects the portion of guacamole directly under it. That’s because avocado flesh browns by reacting with the oxygen in the air, the same as an apple or peach. You could achieve the same result with anything else that comes into contact with the top of your guac, like plastic wrap for example. ⁠ ⁠ The best way to keep guacamole from turning brown is to make sure there’s enough acid in the recipe to keep the avocado from oxidizing. NEW RECIPE: 6-Ingredient Paleo Orange Almond Cake 🍊🍊🍊⁣ ⁣ Ingredients: ⁣ • 1 1/3 cups coconut sugar (sifted)⁣ • 6 eggs ⁣ • 2 large oranges⁣ • 1 tsp vanilla or almond extract ⁣ • 2 2/3 Cup blanched almond flour (sifted) ⁣ • 1 tsp baking soda⁣ ⁣ Directions: ⁣ 1) Place 2 oranges in a saucepan and cover just above the tops of oranges. Boil for 2 hours. Remove from liquid and cool.⁣ 2) Once ready to prepare cake, set oven to 350. ⁣ 3) Cut stem and seeds from orange and then place the remainder of the fruit (peel, membranes and flesh) into a blender and puree⁣ 4) Meanwhile, whisk sifted coconut sugar (I just used a mesh strainer) and eggs until combined ⁣ 5) Add orange puree and vanilla extract and combine ⁣ 6) Add sifted almond flour and baking soda to the wet mixture and stir to combine⁣ 7) Pour batter into 10" pan (springform preferred) and bake for 1 hour. Make sure toothpick comes out clean before removing from the oven. ⁣ 8) Let the cake cool for 10 min before removing springform walls and then allow to cool completely.⁣ ⁣ This cake is amazing on it's own but would also work successfully as a layered cake or with an orange glaze.

Confections Recipe #33⁣ ⁣ Red Velvet Cupcakes⁣ ⁣ Cupcake Ingredients:⁣ -2 large eggs, room temperature and separated⁣ -1 and 1/3 cups (160g) all-purpose flour (spoon & leveled)⁣ -1/4 cup (32g) cornstarch⁣ -1/2 teaspoon baking soda⁣ -4 teaspoons (6g) natural unsweetened cocoa powder⁣ -1/4 teaspoon salt⁣ -1/4 cup (60g) unsalted butter, softened to room temperature⁣ -1 cup (200g) coconut sugar⁣ -1/2 cup (120ml) coconut oil⁣ -2 teaspoons pure vanilla extract⁣ -1/2 teaspoon organic apple cider vinegar⁣ -Liquid red food coloring⁣ -1/2 cup (120ml) buttermilk, room temperature⁣ -Cream cheese frosting for topping⁣ ⁣ Frosting Ingredients:⁣ -8oz fat-free block cream cheese, softened to room temperature⁣ -1/2 cup (115g) unsalted butter, softened to room temperature⁣ -3 cups organic powdered sugar (plus 1/4 cup if frosting isn’t thick enough)⁣ -1 teaspoons pure vanilla extract⁣ -Pinch of salt, to taste⁣ ⁣ Cupcake Instructions:⁣ 1. A few weeks ago I *attempted* to do a 7 day sugar reset. I could tell my digestion was off. (I felt bloated, and had a little less energy than I normally do.) By day three I was starting to feel stressed about not being able to have dessert. I ate a few pieces of chocolate.. and I immediately felt guilty. I couldn’t even last a week without sweets??⁣ ⁣ That is EXACTLY the reason why I love eating intuitively. I can choose to eat certain foods, and not eat certain foods without pressure. ⁣ ⁣ Here’s an example - a couple months ago I decided I was going to avoid dairy. I didn’t eat it frequently, but I enjoyed ice cream and cheese on occasion. I never set strict boundaries for myself, I just made a mental note that it didn’t make me feel good after I ate it. NOT ONCE in the last two months did I feel restricted or deprived. Why? Because I made a conscious decision without LABELS. NO labels = NO pressure. ⁣ ⁣ After I realized that the sugar reset wasn’t working for me, I just decided I would just be more conscious of my *added* sugar intake. Since then I have enjoyed eating more fruit, and less desserts. (And no guilt when I do choose to have dessert.) I haven’t had the urge to bake as much as I have been, and I’ve also noticed less sugar cravings!⁣ ⁣ There’s nothing wrong with resets or elimination diets when necessary, but if you feel pressure or stress, try listening to your body instead. Is it dehydration, allergies or lack of sleep?🤪 #loveineverymorsel • Paleo Berry Cobbler Heat oven to 350. Grease 8” pan or skillet w coconut oil. In small bowl toss together: 16 oz organic strawberries, sliced 1 tsp lemon juice 1/2 cup fresh blueberries 2 tbsp maple syrup 2 tbsp arrowroot flour . In small bowl mix together: 1.5 cup blanched almond flour @natureseats 4 tbsp arrowroot flour 1/4 tsp sea salt 1.5 tsp baking powder 1.5 tsp vanilla extract 2 tbsp real maple syrup 5 tbsp coconut sugar 1/4 cup coconut oil, softened 3 tbsp unsweet almond milk . Looking at these pics I think you can see why🤤 - They’ve got paleo, vegan, refined-sugar-free, chocolatey, cookie dough & brownie goodness... need I say more?🍪🍫 - Brownie Cookie Dough Crack Bars Ingredients: For the brownies: 2 flax eggs (2 tbsp ground flax, 5 tbsp water mixed and let sit for 10 min) or regular eggs 1/4 cup melted coconut oil 1/2 tsp vanilla (optional) 1/2 cup coconut sugar 1/3 cup maple syrup 1 1/4 cups almond flour 1/2 cup cacao powder 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt For the cookie dough: 1 cup almond flour 2 tbsp avocado/olive/melted coconut oil 1/4 cup maple syrup 1/2 tsp salt 1 tbsp coconut sugar (optional) 1/4 cup chocolate chips For the chocolate top: 1/2 cup chocolate chips 1 tbsp coconut oil 1. Preheat the oven to 350 and line an 8x8 baking sheet with parchment paper 2. In a bowl mix together the eggs, coconut oil, vanilla, coconut sugar, and maple syrup 3. Mix in the almond flour, cacao powder, baking soda, baking powder, and salt. Spread batter into the baking sheet and bake for 20 minutes, then place in the fridge to cool while you make the dough 4. For the cookie dough: mix together almond flour, oil, maple syrup, salt, and coconut sugar. Then add in chocolate chips. Take out the brownies and spread the cookie dough over the top and set aside 5. Melt the chocolate and coconut oil in the microwave in 30 second increments until smooth, pour over the brownies and spread until they are covered. #ad Is anyone else obsessed with coconut and chocolate together like I am? I made these coconut bars the other day using @BobsRedMill shredded coconut and drizzled them with chocolate. Let me tell you, these babies are PURE.COCONUT.HEAVEN 🥥 They remind me of Mounds candy bars, but are a much cleaner option! . Coconut bar ingredients: 3 cups @BobsRedMill shredded coconut 1 cup coconut oil, softened but not melted 3 tbsp maple syrup 2 tsp vanilla extract . Chocolate Drizzle Ingredients: 1 cup paleo friendly chocolate 1 tsp coconut oil . Directions: Combine all of the coconut bar ingredients in a food processor until fully combined. Place in a lined 8x8 inch baking dish and place in the fridge to set. While the bars are setting, melt 1 cup of chocolate with the coconut oil. Once fully melted, pour 2/3 of the chocolate over the top of the bars and place them back in the fridge for the chocolate to set. Once the chocolate is set, take the bars out, flip them upside down, and drizzle the rest of the chocolate over the top. Let it harden again, slice and enjoy. . I ordered the shredded coconut on Amazon, which I thought was super convenient considering local stores are in low stock of so many items right now. Make sure you hit the bookmark button so you have it on hand!⁠ .⁠ Here’s how to make them 👇🏻⁠ Mix the following ingredients in a bowl until a dough-like texture forms.⁠ ✨1/2 cup almond butter⁠ ✨1/4 cup almond flour⁠ ✨1 tablespoon chia seeds (not necessary but adds a nice crunch)⁠ ✨1 tablespoon carob or cocoa powder⁠ ✨1 tablespoon honey or other liquid sweetener like maple syrup⁠ A few notes…⁠ 👉🏻I used my hands to really get in there and mix.⁠ 👉🏻Depending on the almond butter you use, you may need to make some adjustments. If the texture is too thin to roll add more almond flour. The RESET 30 challenge focuses on eliminating added sweeteners/sugars such as refined sugars, maple syrup, honey, agave nectar, coconut sugar, Splenda, Equal, Nutrasweet, xylitol, and stevia. HOWEVER it does not eliminate fruits For the nights/days I feel like I need a little something extra and chocolatey I have been lucky enough to find @blissfitfoods paleo bars which contain no added sweeteners that were listed above in my NO GO list. They do however contain medjool dates which are a fruit Dates are a low GI source of sweetener compared to other sugars. The fiber in dates helps balance out the sugar preventing such a drastic blood sugar spike. Blood sugar spikes occur when your blood sugar rises and then falls suddenly after you eat. In the short term, it can cause lethargy and hunger. Chocolate Chunk Chia Pudding w/ Whipped Cream & Date Drizzle 🍫🍨 (Dairy & Sugar-Free)⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients:⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1/2 Cup Chia Seeds⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 2 Cans Full Fat Organic Coconut Milk ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 Teaspoon Organic Vanilla⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - @TheDateLady Date Syrup ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 1/2 cups filtered water⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 40z or 1 bar of 100% dark chocolate⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 100% cacao powder for sprinkling⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 32 ounce mason jar⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - Take a mason jar and add 1 can of coconut milk, water & vanilla. Using an immersion blender mix well.⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - Add chia seeds mixing well using a spoon trying to remove any potential clumps.⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - Once done mixing, place the lid on the jar and dance around shaking the ingredients together. Why not? Don't be shy!⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - Put the remaining can of coconut milk in the refrigerator & filled mason jar mixture for a minimum of 4 hours.⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - While you are waiting take a chocolate bar and place in Cuisinart chopping to medium consistency. Different sizes of bite-size pieces are the goal. Put aside when done.⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - Right before serving, take out a can of chilled coconut milk removing the hard top layer. Place a little of the coconut water from the can and to hardened coconut and use an immersion blender whip into a cream.⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀ - When serving, place chia pudding in a bowl, sprinkle with cacao powder, top with 1 tablespoon of chocolate chunks, whipped cream, and some date drizzle for a dessert you will have time & again.⁣

These PEANUT BUTTER OATMEAL CHOCOLATE CHIP COOKIES are the things of legends🤩🍫🥜 - They have a chewy inside, with melty chocolate bits, and a crisp lovely outside which are some of my fav aspects of a cookie!😛 - Ingredients: 1 flax egg 1/2 cup coconut sugar 1/2 cup peanut butter 1 tsp vanilla 2 tbsp maple syrup 3/4 cup almond flour 1 tsp baking soda 1/4 cup tapioca flour 1/2 tsp salt 1/2 cup oats 1/2 cup chocolate chips Instructions: 1. Preheat oven to 350, and line two baking sheets with reusable parchment paper/silicone mats 2. In a large bowl, mix together the flax egg, coconut sugar, peanut butter, vanilla, and maple syrup until combined 3. Add in the almond meal, baking soda, tapioca flour, salt, and oats and mix 4. Once combined fold in the chocolate chips!! 5. Seriously the best Paleo Chocolate Chip Cookies you will ever make! RECIPE Ingredients 1/2 cup butter, softened 1/4 cup coconut oil 3/4 cup brown sugar or coconut sugar 2 teaspoons vanilla extract 2 large eggs 1/2 teaspoon baking soda 1/2 teaspoon salt 3 cups blanched almond flour 1 1/4 cups chocolate chips of choice 2/3 cup toasted walnuts, optional Instructions Preheat oven to 350 degrees. Line a baking sheet with parchment paper. In the bowl of a stand mixer, cream together the butter, coconut oil, and brown sugar. Add the vanilla and eggs, mixing until incorporated. Mix in the baking soda and salt. Add the almond flour, 1 cup at a time, beating well after each addition. Fold in the chocolate chips and walnuts with a wooden spoon. Form the dough into tablespoon rounds and place on the lined baking sheet about 3 inches apart. Bake for 11-13 minutes, or until golden brown around edges. Cool and enjoy! These cookies are best enjoyed the day they are baked.
