Veggie Gyros 🥙 📸: @thevegansara - Recipe: What you need: For the Tzatziki Sauce: 1 cup non dairy plain yogurt, juice of 1/2 lemon, 1- 2 garlic cloves minced, 1 tbl of fresh dill (sub dried dill weed to taste), 1 mini cucumber grated with water squeezed out using kitchen towel, s/p to taste For the Gyro: 1 lb of fingerling potatoes chopped lengthwise & then quartered ( I used a crinkle cutter knife to get the ridges) , 1 can of chickpeas drained, rinsed, & dried, 1 tsp each of ground rosemary & oregano, 1/2 tsp each of cumin, coriander, smoked paprika, onion powder, sea salt, 1/4 tsp each of cinnamon, black pepper, garlic powder 1/8 tsp of cayenne (optional), 1/4 cup olive oil, juice of 1/2 lemon 1️⃣ First make tzatziki sauce, combine all ingredients, mix well. Place in fridge. 2️⃣ Combine cut potatoes & chickpeas in a large mixing bowl 3️⃣ In a small mixing bowl combine spices, oil, & lemon. Mix well. 4️⃣ Pour oil mix over potatoes & chickpeas making sure it is well coated 5️⃣Place potatoes & chickpeas on a parchment lined large baking sheet, roast at 425 F for 25-35 Rotating & flipping half way through till crispy. 6️⃣Wrap up in your favorite wrap style bread (I used pita) drizzle with tzatziki sauce. I also added chopped red onions, cucumbers, tomatoes, & store bought vegan feta.

Add in 2 ¼ cups of all purpose flour and salt into a mixing bowl. Mix well. Create a well in the center of the bowl and pour in the warm water. 2. Use a spatula or chopsticks to mix the flour and water. Once the dough starts to come together, you can use your hands to mix the bits of dough. Knead together for several minutes. If the dough is a bit dry, add a splash of warm water. 3. Shape the dough into a ball, then place it in a bowl. Cover it with a damp towel and let it rest for 15 minutes. 4. Knead the dough a few more times. Return it to the bowl then cover with a towel. Black Bean Quesadillas 🥙⁣ ⁣ Mashed up some black beans with lime, coriander, a bit of cumin, some liquid smoke for a smoky/BBQ flavour and some grated @violife_foods cheddar. ⁣ ⁣ Spread the mix over a tortilla wrap and added another wrap on top. Fried in a dry pan for about 3 mins each side and then cut it up into pieces. The cheese melts and sticks everything together 🤤 ⁣ ⁣ Served with a bit of guac on the side 🍃

Ingredients 1 tbsp olive oil 1 cup chopped onion (1 medium-sized) 3 big cloves of garlic, minced 1 head of cauliflower, chopped (medium-sized) (500 g) 1 cup chopped carrot (about 1/2 of a big one) 1 cup chopped celery 3 cups dried lentils, brown or green, rinsed and drained (600 g) 14 oz chopped tomatoes (400 g) 8 cups vegetable broth (2 liters) Spice mix: 1 1/2 tsp onion powder, 1 tsp ground cumin, 1/2 tsp red pepper flakes, 1/2 tsp ground coriander, 1/2 tsp ground caraway seeds, 1/2 tsp smoked paprika powder, 1/2 tsp turmeric powder, 1/2 tsp minced fresh ginger, 1/2 tsp sweetener, sea salt. 2 dried bay leaves 2 tbsp liquid aminos 1 tbsp lemon 1/8 cup coconut milk or coconut cream(optional) INSTRUCTIONS 1. Pre covid-19 you could find them at Exmouth Market, Broadway Market and Portobello Road but right now you can get their food delivered straight to your door if you're local. ⁣ ⁣ I enjoyed this delightful container filled with jollof rice, spinach & agushi, black-eyed beans and plantain whilst wandering around Broadway Market last year 😋

Salade de pommes de terre ⁠😍⁠ ⁠ Des pommes de terre à l'ail tièdes sont mélangées à de la roquette fraîche et à une sauce verte pleine de saveur. ⁠ ⁠ Ingrédients⁠ ✨ :⁠ ⁠ 1 Sauce à l’avocat (La même que celle des nouilles de courgette) ⁠ 500g de pommes de terre grelots jaunes⁠ 1 cuillère à soupe d'huile d'olive⁠ 1 cuillère à café de poudre d'ail⁠ 1/2 cuillère à café de poudre d'herbe d'orge⁠ sel et poivre⁠ 2-3 tasses de roquette ou de légumes verts au choix⁠ jus de citron au goût (facultatif) ⁠ ⁠ Instructions⁠ ✨ :⁠ ⁠ Préparez la sauce à l'avocat et placez-la au réfrigérateur jusqu'à utilisation.⁠ ⁠ Préchauffez le four à 425 degrés. Tapisser une plaque à pâtisserie de papier sulfurisé. ⁠ ⁠ Couper les pommes de terre en petits morceaux et les déposer sur la plaque à pâtisserie. Arroser d'huile d'olive, de poudre d'ail, de sel et de poivre sur les pommes de terre et mélanger pour bien enrober.⁠ ⁠ Placer au four et cuire 15 minutes. Mélanger les pommes de terre et cuire au four pendant 10 à 20 minutes supplémentaires (ou jusqu'à ce que les pommes de terre soient croustillantes et tendres à la fourchette) .⁠ ⁠ Ajouter la roquette dans un grand bol. The anti-racist energy cannot stop. ⁣ ⁣ Pictured is a healthy version of apple crisp - perfect to eat while watching one of the above movies🎥 The “crisp” on top is made from oats, agave, and pumpkin purée - traditionally apple crisp is made with a lot of flour, but I completely cut it out to lessen unnecessary calories. And it’s just as crispy and delicious! You can add nuts or granola for extra crunch, but these ingredients will keep you super satiated. This recipe makes4️⃣servings.⁣ ⁣ FILLING:⁣ 🍎1 honeycrisp apple diced into small cubes⁣ 🍎1 tsp pumpkin pie spice⁣ 🍎1 tsp cinnamon⁣ 🍎1 tbsp pb2 powder (peanut butter powder)⁣ ⁣ ⚡️set your oven to 350 degrees and grease a muffin tray with coconut oil⁣ ⚡️combine all ingredients in a bowl evenly coating the apple cubes⁣ ⚡️evenly divide your mixture into the muffin tray⁣ ⁣ CRISP:⁣ 🍎1 cup oats⁣ 🍎2 tbsp agave⁣ 🍎2 tbsp pumpkin puree⁣ ⁣ ⚡️wash your oats before adding into a bowl with the agave and pumpkin purée. evenly coat then sprinkle on top of the apple mix⁣ ⚡️bake for 25-30 min. you may have to bake longer depending on the size of your muffin tray⁣ ⚡️let cool and then separate into 3-4 portions⁣ ⁣ TOPPING:⁣ 🍎plant-based vanilla yogurt⁣ ⁣ ⚡️any plant-based yogurt works, I like ⁣ @foragerproject best - if you can’t find vanilla yogurt, mix 1/4 tsp vanilla extract into your yogurt or just leave it plain⁣ ⚡️add the yogurt on top and enjoy!

Ingredients For the base: 2 pounds potatoes, peeled (1 kg) 3 large eggplants Olive oil to brush Sea salt & pepper to sprinkle For the lentil mixture: 3 cups of cooked lentils (600 g) 2 cups tomato purée (450 g) 1 cup chopped tomatoes (150 g) 1 tbsp olive oil 1 large onion, chopped 2 cloves of garlic, minced 2 bay leaves 1-2 tsp dried thyme 1 tsp oregano 1 tsp paprika 1 tsp coconut sugar or brown sugar pinch of cinnamon Sea salt & pepper to taste For the béchamel sauce (or use mashed potatoes): 2 tbsp vegan butter (28 g) 2 cups plant-based milk (480 ml) 3 1/2 tbsp cornstarch (28 g) 2 tbsp nutritional yeast flakes Sea salt & pepper to taste Pinch of nutmeg Vegan cheese to taste (optional) . Instructions Preheat oven to 390F/200C and prepare two baking sheets with parchment paper. Slice each eggplant lengthwise into 4 pieces. Cut the potatoes into 1/2 inch (1 cm) thick slices. Arrange all slices in a single layer on the baking sheets and brush lightly with some olive oil, sprinkle with salt & pepper. Bake in the oven for about 20 min or until lightly brown. Meanwhile, heat 1 tbsp olive oil in a skillet over medium heat. Add the onion & garlic and sauté for about 4-5 min. Add the tomato purée, chopped tomatoes, all spices, and salt & pepper to taste. Finally, add the cooked lentils and let simmer on low heat for about 5 minutes. For the béchamel sauce, add the plant-based milk to a pan/skillet. Mix in the cornstarch, nutritional yeast, salt and pepper, and whisk. Add the vegan butter and bring the mixture to a boil. Let simmer on low heat for a few min until it thickens. Whisk continuously. Remove from heat. Grease a 13"x9" (33x23 cm) or larger baking dish and arrange half of the potato and eggplant slices on the bottom of the baking dish. Top with the lentil mixture, followed by the remaining potato/eggplant slices (see photo above in the blog post). Pour the béchamel sauce on top and spread evenly. Add vegan cheese to taste (optional). Bake in the oven for about 30 min or until golden brown. Garnish with fresh herbs. En

Follow @vegans_superfood 😋 for more 💞 . purely4vegans • • • • • • Chinese Chive Pies 🥧 😍 📸: @thefoodietakesflight Recipe: Makes 12 pies For the Dough ¾ cup + 1 tbsp warm water 2 cups all-purpose flour, plus more or dusting 1 tsp canola oil or other neutral oil ½ tsp salt For the Filling 100g dry vermicelli noodles, makes 2 cups rehydrated noodles 2 cups (100g) chopped chives 1 medium shredded carrot (makes 1 cup) 1 cup (150g) sliced shiitake mushrooms 1 tbsp canola oil or other neutral oil 1 ½ tsp salt, or more to taste 1-2 tbsp soy sauce, or more to taste 1 tbsp sesame seeds ½ tbsp sesame oil For Cooking 12 tbsp water, divided into 4 batches of 3 tbsp each 4 tbsp oil, divided into 4 batches of 1 tbsp each For the Dough Add in 2 cups of flour into a mixing bowl. Create a well in the center of the bowl and pour in the warm water. Use a wooden spoon or spatula to mix the flour and water. Once the dough starts to come together, add in 1 tsp of oil. Use your hands to mix the bits of dough. Knead together for several minutes. If the dough is a bit dry, add a splash of water. Shape the dough into a ball, then place it in a bowl. Cover it with a damp towel and let it rest for 30 minutes. For the Filling Chop the noodles into small ½ inch pieces. Drain excess water and set aside. Heat a pan. Add in 1 tbsp canola or other neutral oil. When the oil is hot, add in the chives, carrots, and mushrooms. Cook over medium high heat for 4-5 minutes until the carrots are tender. Add in noodles. Pour in the soy sauce, salt, sesame seeds and oil. Mix well with a wooden spoon or spatula and cook for another 2-3 minutes over medium heat. Transfer to a strainer to drain excess liquid from the vegetables then set aside to cool while you prepare the wrappers. Repeat for the rest of the wrappers. . . . . .

Follow 💞 @vegansoyummy Follow 💞 @vegansoyummy 🥰🥰🥰• • • • • • Pearville - The Happy Pear HQ & Production Here’s a lovely creamy broccoli mushroom pasta dish for dinner - full written recipe down below by @thehappypear , it makes a lovely healthy mid week dinner ⬇️😄 If you’re looking for more recipes like this check out our new book now available to preorder link in our bio @thehappypear Creamy Mushrooms Pasta - dinner 15 mins to make Serves 4 people INGREDIENTS 2 red onion 2 cloves garlic 200g mushrooms ideally a mixture including oyster, shiitake, chestnut, button 100g of broccoli 3 tbsp tamari/ soy sauce 100ml veg stock or water 250g wholemeal penne pasta CREAMY SAUCE 80g toasted cashew nuts (works out about 10 nuts per person- so still within guidelines)* 450ml soy milk or non dairy milk of choice juice of half lemon 1 tsp salt 1 tsp garlic powder TO SERVE some fresh thyme to serve 1 chilli to serve *To toast raw cashew nuts just heat a non stick pan on medium heat, add the cashew nuts and keep them moving till they start to brown. This should take between 5-8 mins, be careful not to burn the nuts. Peel and finely chop the onions and garlic, chop the mushrooms and broccoli into small pieces. Fill and boil the kettle. Cook the pasta as per the instructions on the back of the pack adding the broccoli to the pasta so it cooks at the same time. Drain and rinse in cold water once cooked to stop further cooking. Put a non stick frying pan on high heat and allow the pan to get super hot. Once super hot add the onions and garlic and fry until they start to brown. Once they start to brown and stick a little add some veg stock (approx 1 tsp) or water to clean the pan and incorporate the browned flavour to the dish. This should take about 3-5 mins. Add the mushrooms and fry for 2-3 mins again adding a little water or veg stock if they start to stick. You want to ensure you are frying rather than boiling (frying there is little or no liquid or water in the pan vrs boiling the veg is submerged under water.) Add 3 tbsp of tamari/ soy sauce and fry for a further 2 mins. Turn off the heat

FILLING: 1 cup cashews (soaked for 4 hours or overnight) ½ cup cacao butter ½ cup cacao powder ½ cup maple syrup Juice half a large orange 1 tsp vanilla extract 3 drops orange essential oil (optional) . Method Break down the walnuts in a food processor. Add the rest of the base ingredients and process until sticky. Press down evenly on to the base and sides of a standard tart tin and set aside. For the filling begin by melting down Cacao butter in a saucepan over low heat until all dissolved. Set aside. Add all the filling ingredients except melted cacao butter to a blender and blend until smooth as possible. Add the Cacao butter and blend again. Pour filling over tart base and smooth out with spatula. Place in freezer to set for about 3-4 hours. This one is moist and fluffy! 🍫 2 flax eggs 1 cup of coconut sugar 1 cup of plant based milk with 1 tsp of apple cider vinegar 1/2 of melted coconut oil. 1/2 cup of coconut yogurt. 1 cup of flour up to 1 and a quarter 1/2 cup of cocoa powder 1 tsp of baking powder 1/2 tsp of baking powder. 1 tsp of vanilla powder. 💞 Method: Prepare oven to 350 F and grease three small pans or one large one. Prepare your flax eggs and buttermilk (milk plus vinegar) Melt your coconut oil. Add all your wet ingredients incl flax eggs and buttermilk. Add dry ingredients and fold batter until mixed. Have you ever made your own potsticker wrappers? ​ ​Wrapper Recipe: ​Make around 35 wrappers: 2 ¼ cups (325g) all purpose flour ¾ cup + 1 tbsp warm water ¾ tsp salt ​Steps 1. Add in 2 ¼ cups of all purpose flour and salt into a mixing bowl. Mix well. Create a well in the center of the bowl and pour in the warm water. 2. Use a spatula or chopsticks to mix the flour and water. Once the dough starts to come together, you can use your hands to mix the bits of dough. Knead together for several minutes. Spinach and leek vegan wholemeal quiche Used a standard short cut pastry recepie. Swapped butter for vegan margarine and 2/3 of flour to whole mea flour. I did a add bit of olive oil as I pushed the dough into the dish as with wholemeal the dough tend to crumble.. Filling: -1/2 large leek - cut -2 bags of baby spinach -2 tbsp vegan cream Spices: salt, pepper, nutmeg, all purpose seasoning. -cut cherry tomatoes -vegan grated cheese Fry the leek and spinach in oil for 5 min intill spinach is reduced. Add the cream, the spices and fry until the liquid is condensed. Fill the pastry, add the cheese and tomatoes. Cook for 30 min in oven. Butter chicken er en klassisk indisk rett med kylling i en kremet currysaus. Og mye smør, antar jeg 😅 I denne varianten bytter jeg ut kylling med tofu, som bakes i ovnen. Der får den ganske sprø kanter, og når den etterpå røres inn i sausen beholder den en del struktur, samtidig som den trekker til seg smak. Kjempegodt 😍😋 Dette trenger du: 300 g tofu - olje - salt og pepper - ris - 1 kinesisk hvitløk - 2 cm fersk ingefær eller 2 ts tørket - 1,5 ts gurkemeie - 1,5 ts malt koriander - 1 ss garam masala - 2 dl knuste tomater - 2 dl kokosmelk -1 ss soyasaus - frisk koriander. Slik gjør du: 1️⃣ Forvarm stekeovnen til 200 grader. Kle et stekebrett med bakepapir. 2️⃣ Press forsiktig ut overføldig vann av tofuen. Det kan du f.eks gjøre ved å ha kjøkkenpapir over og under den, sette den på en tallerken, og legge noe tungt oppå. 3️⃣ Skjær tofuen i terninger med lengder på cirka én centimeter. Ha over på stekebrettet, hell på litt olje, og krydre med salt og pepper. Sett i stekeovnen, stek i cirka 10 minutter, ta ut brettet og snu bitene, før du steker dem i cirka 10 minutter til. De skal bli gylne og fine, men ikke brente. 4️⃣ Gjør klar resten mens tofuen står i ovnen. 5️⃣ Kok ris etter anvisning på pakken. Riv eller finhakk hvitløk og ingefær. Varm opp litt olje til medium temperatur i en gryte. Ha i hvitløk og ingefær, surr i et par minutter. Tilsett deretter gurkemeie, malt koriander og garam masala, la det surre i et par minutter til. Hell på tomater, kokosmelk og soyasaus, og la det hele koke opp. La det småkoke til tofuen er ferdig i ovnen. Rør innimellom. Når tofuen er ferdig rører du den inn i sausen. Sᴄʜɴᴇʟʟᴇʀ 5 Mɪɴᴜᴛᴇɴ Kɪʀsᴄʜᴋᴜᴄʜᴇɴ 🍒 ° ° Zum Start des Wochenendes habe ich heute ein super schnelles und wirklich einfaches Kuchenrezept für euch! Es ist ein lockerer Rührkuchen mit Kirschen. Alternativ kannst du aber z.B. auch Beeren nehmen. 😋🍒🍰 Die Zutaten sind in 5 Minuten zusammen gerührt. Der Kuchen backt anschließend etwa 45 Minuten. ° Für eine kleine 20 cm Form brauchst du: ✨ 200g Mehl ✨ 80g (Kokosblüten-) Zucker ✨ 2 TL Backpulver ✨ 1 Prise Salz ✨ 100g Sojayoghurt ✨ 200ml Pflanzenmilch (Hafer oder Soja) ✨ 5 EL Öl (40g) (z.B. Rapsöl) ✨ 1 EL Zitronensaft ✨ 150g entsteinte, halbierte Kirschen (Alternativ klappt es auch mit TK Kirschen) ° Und so geht's: 1️⃣ Alle trockenen und getrennt davon alle flüssigen Zutaten vermischen. 2️⃣ Die flüssigen nun zu den trockenen Zutaten geben und gut durchrühren bis alles vermengt ist. Nun etwa 3/4 Kirschen unterheben und den Kuchen in eine gefettete Form füllen. Damit man auf der Oberseite auch ein paar Kirschen sieht, habe ich den Rest der Kischen nicht in den Teig gerührt, sondern vorsichtig von oben etwas reingedrückt. 😉 3️⃣ Bei 180 Grad ca. 45 Minuten (Ober-/Unterhitze) backen. I made this creamy pasta today and wow I will certainly be making it again! Try it out for a comforting dinner that’s ready in around 15 minutes 😍 tofu is such a versatile ingredient and I’ve been loving using it in sauces recently! Sending lots of love 💚 Creamy tofu pasta 2 cups pasta of choice 1 medium onion, chopped 1 cup zucchini, chopped 8 oz extra firm tofu 2 cloves garlic 1/4 cup coconut milk from a tin 3/2 cup plant based milk from a carton 2 tbsp nutritional yeast 1 tbsp apple cider vinegar 1 tsp cumin 1 tsp salt Cook the pasta according to packaging instructions. Meanwhile, add the onion and the zucchini to a non-stick frying pan and sauté for 2-3 minutes, until they start to soften. Add the tofu, garlic, coconut milk, plant based milk, nutritional yeast, apple cider vinegar, cumin and salt to a blender or food processor. Blend until very smooth and pour into the frying pan. One pot creamy alfredo pasta with roast garlic veg 🤤 It’s taken many attempts but I think I’ve finally got the creamy pasta sauce right 🤗 . . . . . . . . . . Ingredients (4 people) ~ 300g pasta ~ 100g mushrooms ~ 50g broccoli Pasta sauce: ~ 75g cashew nuts (soaked) ~ Veg stock cube ~ 1 spring onion (chopped) ~ 1 tbsp nutritional yeast ~ 1 garlic clove (crushed) ~ 100ml boiled water ~ 300ml oat milk ~ 750ml water ~ 1 tbsp dried mixed herbs Roast veg ~ 1/2 courgette ~ 2 salad tomatoes ~ 1 bell pepper ~ 1 tbsp oil ~ 1 tbsp garlic granules Method 1. Preheat over to gas mark 6/ 225°C/ 440°F. Add veg to baking tray, drizzle oil & garlic granules over the veg. Mix until the covered evenly. Cook for 20 minutes. 2. As the veg is cooking, prepare the pasta sauce. Add soaked cashews, onion, nutritional yeast, garlic clove, 100ml of oat milk, 100ml of boiling water and crushed veg stock cube to blender or food processor. Blend until smooth. 3. Once the sauce is blended, the pasta can be cooked. Add 750ml of water to large frying pan with the pasta. Make sure the water level is higher than the pasta. Add the broccoli, mushrooms and cashew sauce to pan. Mix the dried herbs into sauce. 4. Heat for approx 15 minutes or until the pasta is cooked and the sauce has thickened. 5. These took me right back to my childhood 😍 I remember my dad buying me and my sisters crème caramels when we were growing up. They were in weirdly shaped cups which made it really difficult to get the caramel out from the bottom... I realise now we probably should have tipped them onto a plate? 🤔 These are my Salted Caramel Puddings which I upgraded to a crème (salted) caramel. 🍮 Completely Gluten, Dairy free and also Vegan 😋 . Heat 2 tbsp syrup, 1 tbsp coconut sugar and 1 tbsp water in a small saucepan. Stir until it thickens up and then seperate into 4 small ramekins. Pour in the Salted Caramel Pudding mixture (recipe is in my bio) 💃
