Smoked black bean burger + cashew crema + charred parsnip fries. This recipe idea has been brewing on mind for a while now, so this week I decided to put my hands and imagination to work and create this recipe. It's inspired by one of my clients who are devoted vegans and I have been designing plenty of vibrant, hearty plant-based menus for their weekly meals. I'm not personally vegan but if I had to eat a meatless burger, I thought, how would I want it to taste? I would want it to be hearty, packed with protein, fiber and nutrients, it has to be juicy and bursting with multi layers of rich flavors... with pretty much the same textures as a traditional burger. This recipe pairs perfectly with toast or pasta and requires very few ingredients. My kids and I were fighting over who gets the leftovers!!! Seriously!...and I won🤣 🌱Recipe: Add 2 tbsp olive oil and 4 sliced garlic cloves to a cast-iron Dutch oven (or other non-stick or cast-iron saucepan) and heat on low until garlic turns a pale gold. Add a generous sprinkle of red chili flakes and 1-lb carton cherry tomatoes (sliced into halves) and sauté another few minutes. Reduce heat to low and cover. Cook about 15 minutes, covered, until tomatoes soften. Remove lid and continue cooking on high about another 20 minutes until juice from tomatoes thickens a little, stirring regularly. Add 1 cup cooked chickpeas (rinsed and drained) and cook 5-7 minutes until chickpeas are heated through and tomatoes start to stick to pan. Remove from heat and mix in 1-2 tbsp balsamic vinegar, a few turns black pepper and salt to taste. I’ve been a bit quiet this week as I’ve been busy and not really had chance to make anything interesting. ⠀ Tonight I made the ‘Leek Crumble’ from the WW app. It was ok... Creamy Lemon and Mushroom Pasta 🍋 📸 @thefoodietakesflight Here’s what you’ll need: 1/2lb dry linguine pasta 1 tbsp olive oil 3 cloves garlic 1 onion, diced 200g mushroom of choice (I used a mix of button and shiitake mushrooms) 1 tsp soy sauce 250g silken tofu 3 tbsp lemon juice 2 tbsp nutritional yeast 1/4 cup water 2 tsp salt, or to taste pepper 1 tbsp olive oil Chopped basil, for garnishing Steps: Heat a pan. Add in 1 tbsp olive oil. Once hot, sauté the garlic and onions until tender. Set aside. Sauté the mushrooms of choice and then season with some soy sauce. Set aside as well. Drain excess liquid from the silken tofu. Place the tofu and remaining sauce ingredients including the sautéed garlic and onion into a blender and blend until smooth. Heat pot of water and add some salt and olive oil (just so pasta doesn’t stick together when cooking). While pasta is cooking, place the sauce in a pan. Add in the cooked pasta and mix well. I like to add the pasta directly from the pot right after it cooks while it’s still hot. This way the pasta continues to cook and will absorb the flavours of the sauce. Leave the pasta to cook in the sauce for 2-3 minutes until the sauce thickens and is absorbed by the pasta. Garnish pasta with some basil, if desired. Follow @veganrecipelab for daily vegan recipes! • Another day, another curry by @sculptedkitchen. Dishing up this curry with okra, potatoes and black beans. Have you tried okra before? This recipe is so versatile that you can swap a vegetable for another! .🌱 . . Okra Curry: 2 large potatoes approx 1 lb of okra or around 20 okra pieces. 1/2 can of black beans. 5-6 large tomatoes. 4 T of olive oil (to coat bottom of pan) plus more for potato slices and okra. 1 large yellow onion, diced. 1 vegetable cube. 2 tsp of garlic powder. 2 tsp of onion powder. 1 tsp of roasted garlic paste. 2 tsp of cumin powder. 1 tsp of coriander powder. 1 tsp of turmeric powder. 1 tsp of salt. Plus more for dusting potatoes and okra when baking. 1 tsp of coriander paste (you could also make your own from blending bunch of coriander, juice from1 lemon and 1 tsp of salt. Freeze after). Juice from 1 small lemon. 1 tablespoon of tomato paste. 2 bay leaves. 1/2 can of full fat coconut cream. Fresh Naan or fresh rice. . Directions: Prepare your vegetables. Cut your potatoes into bite sized pieces. Slice okra. On separate baking trays, arrange your potato, okra, and tomatoes. Splash some olive oil, 1 tsp of garlic and onion powder, salt and pepper and massage your vegetables. Cover your tomatoes with foil. Cook potatoes on 400F for 25-30 minutes or until tender but crispy on the outside. Remove. Cook your tomatoes at 400F for 1 hour. Remove and when cooled, remove the skins. Discard. Cook okra for 15 minutes at 400F or until tender but crispy on the outside. When done, leave them aside to cool. . Method for Curry: 1. Coat your pan with olive oil. 2. Fry your onions until golden brown. 3. Add in all your spices from above and mix until aromatic. 4. Blend your tomatoes with juice from a whole lemon. Pour into the pan and stir until your curry turns a nice brown. Add your coconut milk, bay leaves and let it come to a boil. Bring it back to a simmer and add your okra and potatoes and black beans. MUFFINS Banana & Coco . Ingredientes 🙌🏼 bagazo de leche de coco o coco rallado 160 gr 🙌🏼 harina de trigo 50 gr 🙌🏼 polvo de hornear 15 gr 🙌🏼 azúcar 50 gr 🙌🏼 aceite 50 gr 🙌🏼 banana 1 unidad 🙌🏼 canela, esencia de vainilla, ralladura de naranja a gusto 🙌🏼 leche de coco 80 gr aproximadamente . Mezclar azúcar, aceite, esencia de vainilla, ralladura y canela. Luego incorporarle la banana pisada, los secos y de a poco la leche. Colocar en moldes de muffins y llevarlo a un horno a 180 °C hasta introducir un palillo y que salga seco. . . Si ya se, hago muchas recetas con coco 😂 es que como digo siempre nada se desperdicia me lo enseño una amiga. Y como consumo mucha leche de coco va haber muchas recetas con el bagazo ☺️ . Admittedly this does not look “the most appetising meal on instagram” but my goodness was it good... Vegan pasta sauce with just 3 ingredients! - Cauliflower - Almond milk 🥛 - Garlic (I used 3 cloves) 🧄 “I’m intrigued” I hear you say.. “How did you create this awesomeness”? Heeeeeere goes: Firstly, boil Cauliflower in veg stock until soft enough with a fork poke. Also, lightly fry garlic but stop BEFORE it’s brown!! ✋ Then... with a slotted spoon, add cauliflower to blender along with garlic then BRING IN THE ALMOND MILK!!!.. add the almond milk and blend until smooth. Start with small amounts of almond milk and keep adding until desired consistency. 🍚Recipe alert!! 🍚 I am a big fan of rice pudding, but I don’t like the idea of eating something out of a can so I usually make my own pudding!! • 🌹Ingredients: -250g rice -500ml plant milk -5tbsp coconut sugar -2tbsp cinnamon • Method: Add the milk, sugar and the rice to a pot and stir constantly until it starts boiling to prevent sticking. After it starts boiling let it cook for about 45 minutes. Devide in 4 equal portions and sprinkle some cinnamon on top!! Stewed tomato chickpea curry with rice and avocado by @cookingforpeanuts 🍛 . . Recipe: ⠀ Sauté 1 small yellow onion (small dice) until soft and starts to brown, about 5 minutes. Add 2 minced garlic cloves, 1 tsp ground cumin, 1 tsp coriander, 1 tsp sweet paprika, 1/2 tsp red chili flakes. Sauté another 30 seconds before adding 1 tbsp tomato paste. Mix well while heating for another minute. Add 1-15oz can stewed tomatoes. Simmer about 10-15 minutes, adding broth or water if gets too dry. Blend sauce until mostly smooth with a few chunks remaining. Return to stove. Stir in 2 cups cooked chickpeas. Add coconut milk gradually from 1-15oz can until desired creaminess is reached. (don’t need to use all of it.) Cook until heated through. Pimentones rellenos 🌶 . . 🌱Ingredientes :  6 pimentones medianos (color que quieras) . . 🍚Para el relleno:  2 tomates 6 ají topito 2 dientes de ajo 10 tallos de cebollín 3 limones 1 lata maíz dulce 1 1/2 taza de arroz blanco 2 tazas de carve (medir previo a hidratar) Sal y pimienta . . 🍅Para el guiso:  5 tomates  1 cebolla roja  4 ají topito 10 tallos de cebollín 2 tbsp de aceite de oliva sal y pimienta . . 👩🏻‍🍳Procedimiento : 1. Pon en agua el arroz blanco y el carve en recipientes separados por aprox. 30 min.  2. Prepara tus pimentones : Quita la parte superior de los pimentones (guárdalo para taparlos al cocinar) y saca todo el interior retirando las semillas y las partes blancas (ojo se rompe) 3. Coloca en la trituradora los tomates, el ají topito , los dientes de ajo y el cebollín. Tritura hasta lograr una consistencia pastosa.  4. Pasa a un bowl donde vas a agregar el arroz y el carve (previamente hidratados) , el maíz dulce y exprime los 3 limones. Revuelve bien todos los ingredientes, agrega sal y pimienta al gusto y ya tienes listo tu relleno.  5. En este momento vas a colocar todos los ingredientes del guiso en la trituradora. Tritura y pasa a una olla grande (que tenga tapa) con las 2 tbsp de aceite de oliva donde vas a cocinarlo por unos 5- 10 min.  6. Mientras nuestro guiso se cocina un poco vamos a proceder a rellenar cada uno de nuestros pimentones. Cuando estén listos vamos a colocarle su tapa ( Ojo no llenar hasta arriba). 7. Pasa los pimentones rellenos a la olla con el guiso y colócalos de tal manera que no se vayan a caer mientras se cocinan.  8. Tápalos y deja cocinar por 30 min.
