Ingredients: 3 pounds ripe plum tomatoes, cut in half lengthwise 1/4 cup extra virgin olive oil + 2 tablespoons (optional, omit or sub water if needed) 2 teaspoons salt 1 teaspoon black pepper 1 large onion, chopped 6 garlic cloves, minced 1/4 teaspoon crushed red pepper flakes 1 (28-ounce) canned plum tomatoes, with their juice 1 ½ cups fresh basil leaves, packed 1 sprig rosemary 1 quart vegetable broth INSTRUCTIONS 1. Preheat the oven to 425°F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 35-40 minutes. 2. Heat 2 tablespoons of olive oil in a large stockpot over medium heat. Add onions and red pepper flakes, and cook, stirring occasionally until the onions are translucent, about 10 minutes. Add the garlic and saute for 1 more minute. Add the canned tomatoes, basil, rosemary and vegetable broth. 3. Transfer the oven-roasted tomatoes (and their liquid) into the stockpot. Bring the mixture to a boil and simmer uncovered for 40 minutes. Crust:⠀ 15 Medjool dates, pitted⠀ 1½ cup raw almonds⠀ 1/2 tsp salt⠀ ⠀ Filling:⠀ 350g soaked cashews⠀ 1 1/2 cup coconut cream (thickpart of the can)⠀ 1/2 tsp salt⠀ 1 tsp vanilla exatract⠀ 1/2 cup maple syrup⠀ ⠀ Coloring (optional):⠀ 1 tsp blue spirulina⠀ 1 tsp pink pitaya⠀ ⠀ 1. Soak the cashews in cold water for at least 6 hours. Or boil them for 20 minutes.⠀ 2. Blend together the crust in a food processor and press the dough into a 20cm round cake tin with parchment paper.⠀ 3. For the filling simply add all ingredients to a high speed blender. Blend on high for 60 seconds until completely smooth. Divide the filling equally into 3 different bowls. Add about 1 tsp of pink pitaya and ocean blend UnicornSuperfood blend to two of the bowls and mix.⠀ 4. Pour 1 tbsp of each mix onto the crust top (watch video for instructions).⠀ 5. Ingredients: 5 cups gluten-free rolled oats 1 cup chopped walnuts 1 1/2 teaspoon cinnamon 3 bananas 1/4 cup tahini (or nut butter of choice) 1/4 cup maple syrup Instructions: Preheat the oven to 325ºF. (160 C) Combine all the dry ingredients in a large mixing bowl and set aside. Mash the bananas in a separate bowl until smooth. Stir in the tahini and syrup and beat vigorously until everything is combined (you don't want large chunks of tahini!). Pour the wet ingredients to the dry and stir until well mixed and all the ingredients are coated. Separate the mixture onto two baking sheets, and bake for 30 - 35 minutes, until the granola is starting to brown. I recommend stirring and flipping it every 10 minutes to ensure even cooking. Let cool completely then transfer to an airtight container. Recipe:⁠⠀ 14 ounces of firm tofu⁠⠀ 2 teaspoons plus 3/4 cup of cornstarch, divided⁠⠀ 1/4 cup of water⁠⠀ 1/4 cup of rice vinegar⁠⠀ 3 tablespoons of sugar⁠⠀ 1 tablespoon of chili-garlic sauce⁠⠀ 1/4 cup of cornmeal (white or yellow is fine)⁠⠀ 1/4 teaspoon of salt⁠⠀ 1/4 teaspoon of pepper⁠⁠⠀ GF note: check all the condiments to be gluten-free To make:⁠⠀ 1️⃣Prep your tofu by cutting it into bite sized chunks. Place the tofu on a plate lined with paper towels and leave for roughly 15 minutes to drain a bit.⁠⠀ 2️⃣While waiting, make the sauce. In a medium saucepan over medium low heat, whisk together 2 teaspoons of the cornstarch as well as the water, vinegar, sugar, and chili-garlic sauce. Bring that mixture to a light simmer and, continuing to whisk constantly, cook for about 3-4 minutes until thickened. Remove from heat and let sit, covered, while you finish the tofu.⁠⠀ 3️⃣In a wide bowl, stir together the remaining cornstarch, salt, pepper, and the cornmeal. Pat the tofu dry and then toss in the cornmeal mixture to coat all of the sides. I did this in several batches.⁠ 4️⃣In 12 inch skillet, heat the oil over medium-high heat over hot. Fry the tofu, tossing occasionally, for about 8-10 minutes or until it is lightly browned on all sides. Once done, remove to a paper towel lined plate.⁠⠀ 5️⃣When ready to serve, toss the tofu in the chili-garlic sauce and ENJOY! I served mine with basmati rice and a little steamed broccoli!
