Haven’t shared an Olivia update in a while so here we go. Overall, our little #heartwarrior is doing awesome and bringing so much joy to our lives. I can’t even begin to explain it. 💗⁣ ⁣ Some recent highlights:⁣ ⁣ • Growing like a weed. 🌱 For a while she wasn’t even on the growth chart but now she is! She’s still small, but following her own growth curve and the doctors are happy with her growth. 🙌⁣ ⁣ • Sitting up on her own. (As seen in this photo.) It’s been so fun to see her start to be more independent, but I’m also over here like... where’s my little baby?! 😭⁣ ⁣ • Sleeping well and learning to self soothe. We have our bedtime routine down pat and do it nightly (it’s easy to stay consistent when you’re quarantined)! She goes down around 7:30PM and usually wakes around 6-7AM. Some nights she needs to be soothed in the middle of the night because she can’t find a paci or she’s rolled herself over or pushed herself up against the side of crib and is upset, but for the most part she’s a good sleeper. So thankful for this because mama was missing her sleep! ⁣ ⁣ • Nursing for almost all her feeds. This has been such a challenging journey for us both (lots of tears and persistence), but things are so much better now. Most days she nurses for all her feeds (5/day) and gets a bottle of expressed breast milk on top of the nursing session before bed. She likes to be nice and full before going down. ☺️ This has been amazing for me because I went from exclusively pumping (and not being able to use the milk) to only having to pump once a day before bed. 🙌 I’ve contemplated selling my @willowpump because I don’t have a need for it anymore. ⁣ ⁣ • Started eating solid food a couple weeks ago. So far she’s tried 🍠🥑🍌 and I think avocado is her fave so far! I’ve been making my own baby food and contemplating a @babybrezza food maker. 🤔 Also researching baby led weaning and planning to use some of those techniques. ⁣ ⁣ Anything else you’re curious about regarding motherhood or Olivia? I've been loving grain-based salads lately and this PEAR BARLEY SALAD might just be my new fave! It’s loaded with green Anjou @usapears, barley, chickpeas, walnuts, feta and arugula all tossed in an ACV maple dressing. 🍐🥗💯 #sponsored ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I love using #pears in salads because they’re available year-round. (Be sure to look for the USA Pears label to support US farmers.) They not only taste refreshing and sweet, but they also provide a variety of important nutrients like fiber. You guys, 1 pear has 6 grams of fiber!! That's 21% of the daily recommended fiber. 💁🏻‍♀️ That said, most of the fiber and antioxidants are found in the skin so make sure to leave the skin on your pears when possible.💃🏻🍐 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This salad is great because it can totally be customized based on the ingredients available to you. Don’t have chickpeas? I bet this would be delicious with white beans instead. Only have spinach on hand? Swap that in for the arugula! 🙌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Here's the recipe: • 1/3 cup walnuts • 1 cup uncooked barley • 1 cup cooked chickpeas • 2 green Anjou pears, divided • 1/3 cup chopped sun dried tomatoes • 3/4 cup crumbled feta • 1/4 cup chopped fresh parsley • 1 handful baby arugula ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dressing • 3 Tbsp red onion • 1/4 cup apple cider vinegar • 1/3 cup olive oil • 2 tsp maple syrup • 1 tsp dijon mustard • 1 tsp dried oregano • 1/2 tsp sea salt • 1/4 tsp pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INSTRUCTIONS 1️⃣ Cook barley according to package instructions. Drain. 2️⃣ Toast walnuts in a small skillet. Let cool. 3️⃣ Add minced onion in a small bowl with the vinegar and let marinate while you prep the salad. 4️⃣ Chop 1 1/2 pears and save remaining half for fanning and decorating the salad. 5️⃣ Add cooked barley, chickpeas, pear, sun dried tomatoes, arugula, parsley and feta into a large bowl. 6️⃣ Add remaining dressing ingredients into the bowl with the vinegar and red onion and whisk until combined. 7️⃣ Pour dressing over salad mixture and toss to coat. Taste and season with additional salt and pepper, if needed.

I’m super excited to share this recipe with you guys! It’s an untraditional spin on one of the most well-known Thai dishes… Pad Thai! Pad Thai is typically made with rice noodles, but since I’m an avid spaghetti squash lover I just had to try it with spaghetti squash noodles instead and let me tell ya, it definitely does not disappoint. 💯🥕🌶🌿 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The texture of the spaghetti squash noodles is super similar to traditional rice noodles, but the squash does have a firmer texture and they are thinner. Spoiler alert: you will know you’re eating vegetables, but I love the extra texture and touch of sweetness they add to this dish. Plus, it makes this dish #lowcarb so yay for that! 🙌 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This untraditional Pad Thai is jam-packed with veggies, protein from the chicken and don’t even get me started on the chili almond sauce… it’s definitely the star of this recipe! If you’ve been following EBF for awhile now you know that I’m a big fan of sneaking veggies into my recipes wherever I can. 🤫 I’ve added zucchini to overnight oats, butternut squash to pancakes and now sweet potato to brownies! 🍠🍫 Technically, I already have a sweet potato brownie recipe, but in the form of brownie bites. They’re so dang delicious so I figured why not recreate them in classic brownie form. 💃🏻⁣ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁣ Sweet potatoes add an amazing texture to these brownies - binding them together without a traditional egg to make them #vegan. They also add a nutritional punch! This GREEK QUINOA SALAD makes for a great #mealprep recipe and is perfect for #memorialday! It’s loaded with #plantbased protein (8 grams per serving) and tons of fresh veggies with a tangy lemon dressing. 🥒🍅🌿💯 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I love whipping up a batch on Sunday so I have lunches ready to go for the week. Friday night pizza party, anyone?! 🙋🏻‍♀️ If you’re looking to switch up your traditional pizza crust with a veggie-based crust (that’s not cauliflower), this SPAGHETTI SQUASH PIZZA CRUST is a game-changer!
